- Preheat the oven to 350 degrees F. Brush both sides of the tortillas with the oil. Stack the tortillas and cut the pile into sixths to make chips. Spread the chips out in a single layer on two large baking sheets and season with salt. Bake until golden brown and crisp, rotating the baking sheets once, about 12 to 15 minutes. Serve.
HOMEMADE TORTILLA CHIPS

- Frying method:
- Heat a * inch oil in a large skillet. Stack tortillas and cut into 6 pieces with 3 cuts of a knife. Carefully place tortilla pieces into oil and fry until they puff. Remove from oil and let drain on paper towels.
- Baking method:
- Preheat oven to 400 degrees. Brush whole tortillas with oil and cut into chips. Place on baking sheet and bake in oven for 5 minutes. Flip tortillas and bake for 5 more minutes. Cool and store in airtight container.
AZTEC CHOCOLATE TORTILLA CHIPS
Perhaps chips and chocolate are not a typical pairing, but we love the combination of salty and sweet in a snack. The cinnamon and cayenne add an extra hit of flavour that reminds us of a Mexican hot chocolate.

- Line 1 - 2 baking sheets (depending on the size) with parchment paper. Set aside. In a small bowl, combine the cinnamon and cayenne. In a small saucepan, bring 1 - 2 inches of water to a simmer. Find a small bowl that sits on top of your saucepan without touching the water or bottom of the pan. Once the water has come to a simmer, turn down the heat to low and place the chopped chocolate into the small bowl and place on top of the saucepan. Stir the chocolate until it is melted. Remove the saucepan from the heat. Dip the chips about 3/4 of the way into the chocolate, let excess chocolate drip off and place the dipped chips onto the parchment lined baking sheet. Continue with the rest of the chips. Sprinkle the chocolate part of the chips with a little flaky salt if you like, then place the baking sheet(s) of chips into the fridge to firm up. About 10 minutes. Once the chocolate has hardened, sprinkle with the cinnamon and cayenne mixture. Eat immediately or store in a container in the fridge for 2 - 3 days.
HOMEMADE TORTILLA CHIPS

- In a small bowl, mix salt and chili powder. Cut each tortilla into 4 wedges. In an electric skillet, heat 1 in. of oil to 350°. Fry chips, several at a time, 2-3 minutes on each side or until golden brown. Drain on paper towels., Transfer chips to a large bowl; sprinkle with salt mixture and gently toss to coat.

CHOCOLATE TORTILLA TORTE
Since this is my first recipe to post I wanted to share one of our favorite treats. No one believes it's made with tortillas! Prep time does not include minimum 6 hours or overnight refrigeration! I cut it into 8 pieces. A coworker gave me the recipe years ago, and we've enjoyed it often. Hope you do too.

Steps:
- Melt chocolate chips in microwave until melted (stir every 30 seconds).
- Cool chocolate slightly (about 5-10 minutes); it should be smooth.
- Mix in sour cream.
- Mixture should be the consistency of thick pudding.
- Spread first tortilla with layer of chocolate mix.
- Be sure to go to edges.
- Repeat until all tortillas are used.
- There should be enough chocolate mix to liberally cover the top.
- (If I've made the chocolate layers thinner, I frost the whole thing).
- Decorate with strawberries or raspberries.
- Important: Refrigerate at least 6 hours or overnight.
BAKED TORTILLA CHIPS

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Cut each tortilla into 8 chip sized wedges and arrange the wedges in a single layer on a cookie sheet.
- In a mister, combine the oil and lime juice. Mix well and spray each tortilla wedge until slightly moist.
- Combine the cumin, chili powder and salt in a small bowl and sprinkle on the chips.
- Bake for about 7 minutes. Rotate the pan and bake for another 8 minutes or until the chips are crisp, but not too brown. Serve with salsas, garnishes or guacamole.

- With a pastry brush, paint a very light coating of oil on one side of each tortilla.
- Stack the tortillas greased side up in an even pile.
- With a sharp, heavy knife (or serrated knife) cut the stack in half, then into quarters, then into eighths.

- Preheat oven to 350˚F (180°C). Line 2 baking sheets with parchment paper.
- Lightly brush the tortillas all over with olive oil. Sprinkle ¼ teaspoon of tangy spice blend evenly over each tortilla and season lightly with salt. Flip and repeat on the other sides.
- Stack 4 tortillas on top of one another and cut into 6 equal triangles. Repeat with the remaining tortillas.
- Spread the tortilla triangles in a single layer on the prepared baking sheets.
- Bake the tortillas for 20-25 minutes, rotating halfway through, until golden brown and crispy. Remove from the oven and let cool. The chips will continue to crisp as they cool.
