- In a large bowl, beat butter and sugar until crumbly, about 2 minutes. Add eggs; mix well. Beat in the buttermilk, applesauce, chocolate and vanilla. Combine the flour, baking powder, salt and baking soda; beat into butter mixture just until moistened. Stir in zucchini., Transfer to a 13x9-in. baking dish coated with cooking spray. Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack. Sprinkle with confectioners' sugar.

CHOCOLATE ZUCCHINI SNACK CAKE
Steps:
- Heat oven to 350ºF. Grease 8-inch square baking pan; set aside.
- Combine sugar and butter in bowl; beat at medium speed until light and fluffy. Add egg; continue beating until well mixed. Add sour cream and vanilla; continue beating until well mixed.
- Combine flour, cocoa, baking soda and salt in bowl. Gradually add to butter mixture, beating well after each addition. Stir in zucchini and 1/2 cup chocolate chips.
- Pour into prepared pan. Bake 25-30 minutes or until toothpick inserted in center comes out clean. Cool completely.
- Combine 1/2 cup chocolate chips and butterscotch chips in 1-quart saucepan. Cook over low heat, stirring occasionally, 4-5 minutes or until smooth. Spread over cake.

SNEAKY MOMMY'S CHOCOLATE ZUCCHINI CAKE
I've taken my old chocolate zucchini cake recipe, cut out almost all of the bad stuff and loaded it up with so many fruits and vegetables that it's more like a baked salad than a cake. The funny thing is that it turned out so moist and tasty that you'll find yourself fighting with the kids for the last piece. Try it once and you'll be a believer too!

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish. Whisk together the flour, cocoa powder, baking soda, cinnamon, baking powder, and cloves in a bowl; set aside.
- Beat together the eggs, sugar, applesauce, vegetable oil, apple juice concentrate, and vanilla extract in a mixing bowl until smooth. Stir in the dry mixture alternately with the milk, then add the zucchini, carrot, raisins, and dates; stir until just moistened. Pour into the prepared baking dish.

BEST EVER CHOCOLATE ZUCCHINI CAKE
I've been making this recipe for ions now. It was a collaboration between myself and a friend about 25 years ago. I haven't found one I like better. I hope you will agree. These loaves also freeze very well. Note: You could try using applesauce for some or all of the oil in order to reduce the fat content. However....I haven't tried it myself.

- In a large bowl mix together eggs, both sugars, oil and both extracts.
- Stir in grated zucchini. Set aside.
- In another bowl mix flour, baking powder, baking soda, salt and cocoa powder.

- Preheat the oven to 350F.
- In a large bowl, whisk together the flour, sugar, cocoa, baking powder, baking soda and salt. In a smaller bowl, whisk together the yogurt, oil, eggs and vanilla. Stir into the dry ingredients, along with the zucchini, stirring just until the two are incorporated and there are no more streaks of flour. Stir in the chocolate chips, if you're using them.
- Scrape the batter into a parchment-lined (or buttered) 9x13-inch baking pan and bake for 30 minutes, or until the cake is springy to the touch. You can cool and frost it if you like, but I like keeping it plain and snacky. The batter would also make great cupcakes/muffins - bake in paper-lined tins for 15-20 minutes, or until springy. - Preheat the oven to 350°F Grease a 9-inch square metal baking pan and line the bottom with parchment paper; grease the parchment.
- In a large bowl, combine the flour, cocoa, baking powder, espresso powder and salt. Using an electric mixer, beat the sugar, eggs and egg whites at medium-hight speed until pale in color, about 3 minutes; whisk in the olive oil. Stir in the zucchini.
