This is a recipe that has been in my family for years. It's a great combination of sweet and spicy! If you like your beans saucy, you can double the sauce mixture.

½ pound bacon, cut into small pieces
1 onion, cut into small pieces
2 (15 ounce) cans kidney beans, rinsed and drained
½ cup ketchup
½ teaspoon dry mustard
2 tablespoons brown sugar
1 tablespoon Worcestershire sauce
1 dash hot pepper sauce (such as Tabasco®)
1 pinch salt
1 pinch ground black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat a large pot over medium-high heat. Cook and stir bacon and onion in pot until the onion is tender, 7 to 10 minutes; add ketchup, dry mustard, brown sugar, Worcestershire sauce, hot pepper sauce, salt, and black pepper.
  • Reduce heat to low and cook bean mixture at a simmer until hot, about 10 minutes; pour into a large casserole dish.
  • Bake in preheated oven until bubbling on top, 10 to 15 minutes.

1 pound pinto beans
8 cups water for soaking plus 4 cups or more for cooking
1 1/2 pounds ham diced or sliced
3/4 cup chopped onions
1 16-ounce can tomatoes, with juice
3 tablespoons molasses
1 tablespoon dry mustard
1/2 teaspoon black pepper
1 teaspoon ground cayenne pepper

Steps:

  • Thoroughly rinse the beans. Add 8 cups of water. Soak overnight, or bring to a boil, simmer two minutes, remove from heat, cover and let stand one hour.
  • Drain beans and combine with 4 remaining cups of water. Add remaining ingredients. Cover and simmer one hour or more, until beans are tender. Add water if necessary.

One of my Mom's most requested recipes. Great for large family gatherings, pot-lucks and cookouts! This is very hearty; not mushy at all. I've actually made this for a main dish since it's so filing. Enjoy!

1 lb ground beef, browned
1 medium diced onion
1/2 lb bacon, cook crisp and save drippings
1 (16 ounce) can great northern beans
1 (16 ounce) can kidney beans
1 (16 ounce) can pork n' beans
1/2 cup brown sugar
1/2 cup white sugar
1/2 cup ketchup
1/2 tablespoon prepared yellow mustard
1 tablespoon molasses
1 dash Worcestershire sauce

Steps:

  • Cook bacon.
  • Brown ground beef with the diced onion.
  • Place first 3 items in a large oven roaster (I use an Enamelware roaster).
  • To this, add the 3 cans of beans; do not drain beans.
  • Mix all other ingredients together in a medium bowl.
  • Pour over meat and beans and stir well.
  • Bake at 350 for 1 hour covered.
  • Remove lid or foil and bake for 20 more minutes.

1 pound pinto beans
8 cups water
1 ham hock or 1/2 cup salt pork, diced
1 pound tomatoes, crushed, or 2 cups canned tomatoes
1/2 cup brown sugar or honey
salt and pepper to taste

Steps:

  • 1. Pick over beans, cover with water and soak overnight. The next day, drain the beans and place in a large heavy kettle with a lid.
  • 2. Add 8 cups fresh water, the salt pork and the tomatoes. Place the beans over a medium-high fire and bring to a steady simmer. Cook steadily 1 hour, then add brown sugar and additional hot water to maintain the water level about 2 inches above the beans. Cook another hour or two, adding hot water as neccessary. Add salt to taste.
  • 3. Serves 6-8.

Another of my husband's favorites. I got this recipe out of a cookbook called "Dining with Pioneers". It's apparently a collection of recipes by a group from Tennessee. This one was submitted by someone named Mae Hallum from Memphis.

1/2 lb bacon
3 lbs ground beef
3 cups chopped onions
1 cup chopped celery
2 beef bouillon cubes
2/3 cup water, boiling
1 1/2 tablespoons garlic, minced
1 1/2 cups catsup
3 tablespoons mustard
1/2 teaspoon salt
1/2 teaspoon pepper
2 (29 ounce) cans baked beans with molasses

Steps:

  • In a Dutch oven or other large, heavy, oven proof pot fry bacon until crisp and set aside.
  • Drain fat.
  • In the same pan, cook ground beef, onion and celery until meat in brown and the onion and celery are tender.
  • Meanwhile, dissolve bouillon cubes in boiling water.
  • Add bouillon to meat mixture with the remaining ingredients and mix well.
  • Cover and bake 1 hour and 15 minutes in a 375 degree oven until hot and bubbly.
  • Crumble bacon over beans and serve.
  • This makes a LOT of beans. I usually halve the recipe.

My husband doesn't care for beans but he really enjoyed these. Recipe is easy to make and reminded me of cooking a pot of beans over an open fire while camping. You can modify to your personal taste, for example, if you prefer ham flavor rather than ground beef; no salt; add a little more red pepper for more heat; etc. Hope you enjoy the recipe. Recipe is a modified version of a County Line BBQ recipe.

1 lb dry pinto beans
1 medium yellow onion, finely diced
1 teaspoon black pepper, ground
1 tablespoon brown sugar
1 tablespoon Worcestershire sauce
2 teaspoons liquid smoke
2 teaspoons molasses
2 teaspoons chili powder
1 teaspoon ground cayenne pepper (optional)
1 tablespoon garlic, minced
1/4 teaspoon celery seed
1/2 teaspoon salt (optional)
1/2 cup bacon, chopped (don't leave out adds a specific flavor to the beans. A little more bacon can be added, if desired.)
1/2 lb sharp cheddar cheese, grated (optional)

Steps:

  • Clean beans by rinsing. Place beans in 4 qrt. pan, cover beans with water, bring to a boil and turn off the stove. Soak for one hour. As beans soften and expand, add more water to cover, if needed.
  • While beans are soaking, cook ground beef on stove until browned. Drain grease, remove ground beef from pan and pat with paper towel to absorb any extra grease. Set aside.
  • Drain the bean's soak water (leave the bean residue on bottom of pan) and again, add enough water to fully cover.
  • Add all remaining ingrediants and stir together.
  • Cook on low to medium heat (low, slow boil), stirring every so often, for 2 to 3 hours or until beans are done to your preferred tenderness.
  • Just before serving, add a sprinkle of grated sharp cheddar cheese on top.

  • Put the beans in a 2-quart measuring cup and fill with water. Soak the beans overnight, or for at least 8 hours. Rinse before cooking.
  • In a large pot, brown the bacon on medium heat. If there's a lot of grease, drain it. If not, don't sweat it. Add the onions and cook till they become translucent, 5-8 minutes. Add the garlic and cook another minute. Add the chili powder and cumin and cook about a minute, stirring, until the spices become fragrant.
  • Add the beans and broth. Bring to a low boil, and turn the heat to simmer. Cook for 1½-2 hours until the beans are soft, checking occasionally to be sure there's enough liquid. Add more as needed. Season with salt and serve with cornbread.
