Crab salad stuffed avocados prepared by filling ripe avocados with a salad of crab, red onion, bell pepper, cucumber, radishes, lime juice, olive oil, and cilantro.

1 pound of cooked crab meat
½ red onion (finely chopped)
½ red bell pepper (finely diced)
½ green bell pepper (finely diced)
½ cucumber (finely diced)
4 radishes (finely diced)
Juice of 2 limes
2 tablespoons of olive oil
2 tablespoons of finely chopped cilantro
Salt and pepper to taste
4-5 ripe but firm avocados
½ lime
Lettuce or salad greens (cilantro leaves, chopped green onions or chives, radishes)

Steps:

  • Mix the cooked crab meat with diced onions, diced bell peppers, diced cucumbers, diced radish, lime juice, olive oil, chopped cilantro, and salt/pepper. The salad can be prepared in advance and kept refrigerated until just ready to assemble the avocados.
  • Cut the avocados in half, remove the seeds and peel the avocados. Sprinkle each avocado half with a little lime (or lemon) juice to prevent the avocados from browning too quickly.
  • Fill the center of the avocados halves with the crab salad. Serve the crab stuffed avocados over lettuce leaves and garnished with chopped chives (or green onions) and radishes.

Oh what a good combination - lime juice, cumin, and cilantro are so good together. This salad would be wonderful on a hot summer day or, in our opinion, any day! A great recipe if you're hosting a girls lunch or looking for a light dinner.

1/2 lb cooked, peeled shrimp cut into bite size chunks
1/2 lb imitation crab meat chopped into bite size chunks (you can use fresh if you wanna go to the trouble, but not canned)
2 Tbsp chopped fresh cilantro
2 Tbsp chopped fresh Italian parsley
2 Tbsp fresh lime juice
1 tsp cumin
1/2 tsp ground or super finely chopped lime peel
3 fresh avocados
extra lime juice to squeeze onto avocados
3 Tbsp mayonaise

Steps:

  • 1. Stir mayo, juices, peel and all spices together in a bowl to mix well.
  • 2. Add crab and shrimp and stir till well coated.
  • 3. Cut avocados in half, remove pit, run a spoon around the peel to make it easier to eat, sprinkle well with lime juice, salt and pepper (I also LOVE the GREEN Tabasco sauce for this step but it is optional).
  • 4. Load avocados with the salad mixture and enjoy! These are SOOOOOOO easy and taste GREAT!

2 tablespoons chopped fresh coriander (cilantro)
3 teaspoons fresh lime juice
1/2 teaspoon ground cumin
1/2 teaspoon lime zest
1 cup crabmeat
salt
fresh ground black pepper
1 large ripe avocado, halved pitted, and peeled
lime wedge, toserve

Steps:

  • Stir red onion, mayonnaise, coriander, 2 teaspoons lime juice, cumin and lime peel in medium bowl to blend. Mix in crabmeat. Season salad with salt and pepper.
  • Brush avocado halves with remaining 1 teaspoon lime juice to prevent discoloration. Arrange avocado halves, cut-side up, on plates. Mound crab salad on each avocado half.
  • Serve salad with lime wedges.

A great summer recipe to whip up in 5 minutes! To make this crab salad, just toss together these ingredients and scoop it over the avocado halves. Et voila!

1 medium Hass avocado
4 oz lump crab meat
2 tbsp red onion
1½ tbsp lime juice
1 tbsp cilantro
2 grape tomatoes
½ tsp olive oil
¼ tsp salt and fresh black pepper
2 leaves butter lettuce

Steps:

  • In a medium bowl, combine onion, lime juice, cilantro, tomato, olive oil, 1/8 tsp salt and fresh pepper, to taste.
  • Add crab meat and gently toss.
  • Cut the avocado open, remove pit and peel the skin or spoon the avocado out.
  • Season with remaining 1/2 teaspoon salt and fill the avocado halves equally with crab salad.
  • This makes 2 servings, place on two plates with lettuce if you wish and serve.
