CINNAMON SUGARED PECANS
My grandma makes these every year for the holidays. It's always handy to make extra for later snacking! They are relatively quick and easy to make and taste wonderful. I love the smell of these when they're in the oven.

Steps:
- Preheat oven to 325 degrees F (165 degrees C).
- Beat egg white in a large bowl with an electric mixer until frothy. Add pecans to egg white and stir until evenly coated.
- Mix sugar, cinnamon, and salt together in a separate bowl; add to pecans and stir until coated. Spread coated pecans onto a baking sheet.
- Bake in the preheated oven until fragrant and crisp, about 25 minutes.

Steps:
- Bring water and sugar to a boil in a saucepan over medium-high heat. Heat to between 234 and 240 degrees F (112 to 116 degrees C), or until a small amount of syrup dropped into cold water forms a soft ball that flattens when removed from the water and placed on a flat surface, about 15 minutes. Lightly oil a baking sheet.
- Remove the syrup from the stove, then stir in the vanilla extract, baking powder, cinnamon, and curry powder. Add the pecan halves, return the saucepan to the stove, and stir until the pecans are well coated with the sugar mixture. Continue cooking and stirring until the sugar sticks to and hardens on the pecans, about 5 minutes. Spread out onto prepared cookie sheet and allow to cool to room temperature before breaking into individual pieces.

CINNAMON PECAN ROLLS
I adopted this from the recipezaar account. I HAVE made this recipe, though! They are absolutely delicious! Give this one a try!

Steps:
- In a small saucepan, scald the milk.
- Pour hot milk over the granulated sugar, salt and 1/2 cup of butter.
- Cool to lukewarm.
- In the bowl of an electric mixer, dissolve yeast in warm water.
- Let sit for 5 minutes until yeast is bubbly.
- Add milk mixture to yeast and stir to mix.
- With a whisk, beat in eggs.
- Fit your mixer with a dough hook, add flour 1 cup at a time, mixing until smooth.
- Add enough flour to make a soft dough.
- Knead, adding small amounts of flour as necessary until the dough is smooth and elastic but not sticky.
- Place dough in a greased bowl, cover and let rise until doubled, about 45 minutes.
- Punch down.
- Preheat your oven to 350 degrees and line 2 baking sheets with parchment.
- Roll dough into a rectangle about 15x22 inches.
- In a small bowl mix together the melted butter and brown sugar, Using a spatula, spread this over the dough up to 1/2 inch from the edges.
- Sprinkle cinnamon evenly over the sugar and butter.
- Top with a layer of nuts.
- Roll dough up lenghthwise to make a log and pinch edge to seal.
- Slice dough evenly into 12 pieces.
- Place each piece cut side down on baking sheets 1 inch apart and let rise, covered with parchment or plastic for 15 minutes.
- Bake rolls until lightly browned on top- about 30 minutes.
- Remove from oven To prepare icing, beat 4 tablespoons of butter with the powdered sugar and lemon juice until fluffy.
- Using a spatula, smear the icing on top of the warm rolls.
CANDIED CURRIED PECANS
These pecans are a standard nibble at our house during the holiday season. Pecans can be made 1 week ahead. Store in an airtight container at room temperature.

- Preheat oven to 325 degrees F (160 C).
- Combine sugar, cinnamon and salt in small bowl.
- Whisk egg white in large bowl until frothy. Add pecans to egg white and toss well to coat.
- Add sugar mixture and toss carefully and thoroughly doing your best not to break the pecans.
- Spread pecans in a single layer on a large cookie sheet.

CURRIED PECANS
An excellent snack for most any occasion--holidays, camping, sporting event get togethers, lunchboxes, etc. We can't stop eating them! These make a great gift, just cut a piece of cellophane and wrap into a cone shape tied with a colorful ribbon, or place in a pretty tin. They will be appreciated.

- Preheat oven to 250°F.
- In a medium bowl, mix egg white with water until a bit frothy.
- Stir in the pecans and mix until pecans are well coated with egg white mixture.
- Combine sugar, orange rind, seasoned salt and curry powder in a Ziploc bag.
- Remove pecans from egg white bowl,and add to the bag. Discard any remaining egg white mixture.
- Seal up the bag and shake vigorously to coat pecans with spices.
- Spread nuts onto two baking sheets and place in oven. I line mine with parchment paper.
- Bake pecans for 20 minutes, then remove from oven and stir and spread out on pan again.
- Turn off oven, place pecans back in the oven, and crack oven door. Let them remain there for 45 minutes to 1 hour, or until they are crisp.
- Enjoy!
