CHEF JOHN'S BUTTERMILK BISCUITS

Chef John's Buttermilk Biscuits image

This deceptively simple recipe can come out a million different ways with some very minor variations on the ingredients and amounts. This one's my favorite - flaky, but not dry; chewy, but not tough; crisp in just the right spots.

Provided by Chef John

Categories     Bread     Quick Bread Recipes     Biscuits

Time 35m

Yield 12

Number Of Ingredients 7

2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
¼ teaspoon baking soda
7 tablespoons unsalted butter, chilled in freezer and cut into thin slices
¾ cup cold buttermilk
2 tablespoons buttermilk for brushing

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Line a baking sheet with a silicone baking mat or parchment paper.
  • Whisk flour, baking powder, salt, and baking soda together in a large bowl.
  • Cut butter into flour mixture with a pastry blender until the mixture resembles coarse crumbs, about 5 minutes.
  • Make a well in the center of butter and flour mixture. Pour in 3/4 cup buttermilk; stir until just combined.
  • Turn dough onto a floured work surface, pat together into a rectangle.
  • Fold the rectangle in thirds. Turn dough a half turn, gather any crumbs, and flatten back into a rectangle. Repeat twice more, folding and pressing dough a total of three times.
  • Roll dough on a floured surface to about 1/2 inch thick.
  • Cut out 12 biscuits using a 2 1/2-inch round biscuit cutter.
  • Transfer biscuits to the prepared baking sheet. Press an indent into the top of each biscuit with your thumb.
  • Brush the tops of biscuits with 2 tablespoons buttermilk.
  • Bake in the preheated oven until browned, about 15 minutes.

TRIED & TRUE* SOUTHERN, FROM-SCRATCH BUTTERMILK BISCUITS THAT BAKE UP TENDER AND FLUFFY! SO EASY TO MAKE!

Provided by Divas Can Cook

Categories     bread     Side Dish

Time 14m

Number Of Ingredients 9

2 cups White Lily Flour + more for work surface
1 tablespoon baking powder
1/2 teaspoon salt
1/2 teaspoon baking soda
1 tablespoon granulated sugar
1/4 cup butter-flavored shortening (cold)
3 tablespoons unsalted butter + more for brushing (cold)
1 cup buttermilk (cold)
1 Tablespoon mayonnaise, milk or heavy whipping cream (cold (for brushing))

Steps:

  • Preheat oven to 425 F.
  • In a large bowl, sift together flour, baking powder, salt, baking soda and sugar.
  • Cut in butter-flavored shortening with a pastry cutter.
  • Grate in butter, tossing occasionally.
  • Stir in buttermilk until dough is wet and sticky.
  • Generously flour a work surface.
  • Turn dough out onto floured surface.
  • Sprinkle a little flour on the dough and your hands and begin to gently knead and fold the dough.

  • Pat the dough out into a 1-inch thick rectangle.
  • Dip the biscuit cutter into flour and cut out the biscuits. (do not twist the cutter)
  • Place biscuits on pan, with the sides touching.
  • Brush tops of biscuits with a very light coating of mayonnaise.
  • Bake for 14 minutes or until tops are golden. (For a dark golden color, flip the oven to a low broil for the last 2 minutes. Be sure to keep your eyes on it at all times)
  • Remove from oven and brush with butter.
  • Serve warm.

For a taste of homemade comfort, bake Alton Brown's buttery, flaky Southern Biscuits recipe from Good Eats on Food Network.

Provided by Alton Brown

Categories     side-dish

Time 40m

Yield 1 dozen

Number Of Ingredients 7

2 cups flour
4 teaspoons baking powder
1/4 teaspoon baking soda
3/4 teaspoon salt
2 tablespoons butter
2 tablespoons shortening
1 cup buttermilk, chilled

Steps:

  • Preheat oven to 450 degrees.
  • In a large mixing bowl, combine flour, baking powder, baking soda and salt. Using your fingertips, rub butter and shortening into dry ingredients until mixture looks like crumbs. (The faster the better, you don't want the fats to melt.) Make a well in the center and pour in the chilled buttermilk. Stir just until the dough comes together. The dough will be very sticky.
  • Turn dough onto floured surface, dust top with flour and gently fold dough over on itself 5 or 6 times. Press into a 1-inch thick round. Cut out biscuits with a 2-inch cutter, being sure to push straight down through the dough. Place biscuits on baking sheet so that they just touch. Reform scrap dough, working it as little as possible and continue cutting. (Biscuits from the second pass will not be quite as light as those from the first, but hey, that's life.)
  • Bake until biscuits are tall and light gold on top, 15 to 20 minutes.

SOUTHERN BUTTERMILK BISCUITS

Southern Buttermilk Biscuits image

These buttermilk biscuits are authentic. This recipe came from my great-great-grandmother, and was handed down to all the women in my family, and we are all Southern. I am the first one to commit the sin of using a food processor (lol) but I find it works very well. I would put these biscuits up against anyone's - they are perfect in every single way. I hope you all enjoy them.

Provided by P48422

Categories     Breads

Time 22m

Yield 10 biscuits

Number Of Ingredients 6

2 cups unbleached all-purpose flour, plus more for dusting the board (if you can get White Lily flour, your biscuits will be even better)
1/4 teaspoon baking soda
1 tablespoon baking powder (use one without aluminum)
1 teaspoon kosher salt or 1 teaspoon salt
6 tablespoons unsalted butter, very cold
1 cup buttermilk (approx)

Steps:

  • Preheat your oven to 450°F.
  • Combine the dry ingredients in a bowl, or in the bowl of a food processor.
  • Cut the butter into chunks and cut into the flour until it resembles course meal.
  • If using a food processor, just pulse a few times until this consistency is achieved.
  • Add the buttermilk and mix JUST until combined.
  • If it appears on the dry side, add a bit more buttermilk. It should be very wet.
  • Turn the dough out onto a floured board.
  • Gently, gently PAT (do NOT roll with a rolling pin) the dough out until it's about 1/2" thick. Fold the dough about 5 times, gently press the dough down to a 1 inch thick.
  • Use a round cutter to cut into rounds.
  • You can gently knead the scraps together and make a few more, but they will not be anywhere near as good as the first ones.
  • Place the biscuits on a cookie sheet- if you like soft sides, put them touching each other.
  • If you like"crusty" sides, put them about 1 inch apart- these will not rise as high as the biscuits put close together.
  • Bake for about 10-12 minutes- the biscuits will be a beautiful light golden brown on top and bottom.
  • Do not overbake.
  • Note: The key to real biscuits is not in the ingredients, but in the handling of the dough.
  • The dough must be handled as little as possible or you will have tough biscuits.
  • I have found that a food processor produces superior biscuits, because the ingredients stay colder and there's less chance of overmixing.
  • You also must pat the dough out with your hands, lightly.
  • Rolling with a rolling pin is a guaranteed way to overstimulate the gluten, resulting in a tougher biscuit.
  • Note 2: You can make these biscuits, cut them, put them on cookie sheets and freeze them for up to a month.
  • When you want fresh biscuits, simply place them frozen on the cookie sheet and bake at 450°F for about 20 minutes.

CLASSIC BUTTERMILK BISCUITS

Classic Buttermilk Biscuits image

Provided by Paula Deen

Categories     baking     classics     Country Cooking     Family Supper     southern

Time 20m

Yield 12

Number Of Ingredients 7

4 cups self-rising flour
2 teaspoons sugar
1 teaspoon kosher salt
1 cup cold unsalted butter, cubed
1 ½ cups cold whole buttermilk
2 tablespoons unsalted butter, melted
butter, for serving

Steps:

  • Preheat oven to 425°. Line a large baking sheet with parchment paper.
  • In a large bowl, whisk together flour, sugar, and salt. Using a fork or pastry blender, cut in cold butter until mixture is crumbly and about the size of peas. Gradually add buttermilk, stirring just until dry ingredients are moistened.
  • Turn out dough onto a lightly floured surface, and gently knead 3 to 4 times. Pat dough to 1-inch thickness using a light touch; the more you work the dough, the tougher your biscuits will be. Using a 2½-inch round cutter dipped in flour, cut dough without twisting cutter, flouring cutter between each cut. Make cuts close together to minimize scraps. Gently re-pat scraps and cut to use all dough. Place biscuits on prepared pan, sides touching so they rise high. Gently press down top of biscuits with your knuckles; brush with melted butter.
  • Bake until golden brown, 20 to 25 minutes. Let cool on pan for 5 minutes; serve immediately with butter.
  • Baking Tips: After you cube the butter, put it in the freezer for a few minutes to get it really cold. Resist the temptation to cut the butter into pieces that are smaller than peas; bigger butter pieces mean taller, flakier biscuits. Use full-fat buttermilk, and give the container a good shake before measuring. If the sides of your biscuits are touching, they will rise higher. Biscuits can be prepared through step 3 and frozen in a heavy-duty resealable plastic bag for up to 2 months. Bake frozen biscuits as directed for 30 to 35 minutes.

  • Preheat oven to 450 degrees. While the oven is preheating combine self rising flour, baking powder in a large bowl and stir to combine.
  • Cut cold butter into the flour mixture. You can use a pastry cutter, cut the butter into cubes, or use a cheese grater. I like using a cheese grater personally. Use your hands to combine the mixture so there are no large clumps.
  • On a flat surface sprinkle some flour and evenly flatten dough to about 1/4 an inch thick. Fold the dough over on itself three times flatten as you go. Try no to over-work the dough!

  • In a large bowl, whisk together the flour, baking powder, salt and baking soda. Add the butter and, using the tips of your fingers, rub and crush the butter cubes into the flour repeatedly until they resemble small crumbles with a few larger pieces of butter remaining. It should take you about 3 minutes of steadily rubbing the butter into the flour to get there.
  • Form a well in the center of the mixture with your fingers, then pour in the buttermilk. Using the fork, slowly push in the flour from the side of the bowl, working in a circular motion, until a shaggy wet dough begins to form. Once you see no more loose pools of buttermilk in the bowl, dump the dough out onto a well-floured work surface and use your hands to quickly but gently pat the dough into a 1-inch-thick sheet.
  • Lift up one side of the sheet and roll it up loosely like a jelly roll, letting it come to rest seam side down. Gently flatten the dough again into a 1-inch-thick round and, using the floured cutter, cut out rounds from the dough, spaced as close together as possible and re-flouring the cutter as needed to keep the dough from sticking to it. Transfer them to the prepared baking sheet, spaced at least ½ inch apart. Re-roll the scraps at least twice to get 18 biscuits, keeping in mind that the biscuits cut from the rerolled dough will be slightly less tender than the ones from the first round.

  • Heat oven to 500°F. In large bowl whisk together flour, homemade baking powder, and kosher salt. Add lard, coating in flour. Working quickly, rub lard between fingertips until roughly half the lard is coarsely blended and half remains in large pieces, about 3/4 inch.
  • Make a well in center of flour mixture. Add buttermilk all at once. With a large spoon stir mixture quickly, just until it is blended and begins to mass and form a sticky dough. (If dough appears dry, add 1 to 2 tablespoons additional buttermilk.)
  • Immediately turn dough onto generously floured surface. Using floured hands, knead briskly 8 to 10 times until cohesive ball of dough forms. Gently flatten dough with hands to even thickness. Using floured rolling pin, lightly roll dough to a 3/4-inch thickness.
  • Using a dinner fork dipped in flour, pierce dough completely through at 1/2-inch intervals. Flour a 2 1/2- or 3-inch biscuit cutter. Stamp out rounds and arrange on heavy baking sheet. Add dough pieces, as-is, to baking sheet.

  • In a large bowl, sift together flour, baking powder, baking soda, salt and sugar. Use a pastry cutter or two forks to cut the butter and shortening into the flour mixture until incorporated and the mixture resembles coarse meal. You will still see flakes of butter and shortening throughout, which is good!
  • Gradually add the buttermilk, stirring with a wooden spoon until a fairly wet, sticky dough forms. Turn out onto a lightly floured surface and knead for about 1 minute (folding the dough back over on itself), adding flour to the counter and your hands, as necessary, to prevent sticking. Pat to ¾-inch thickness. Use a biscuit cutter to cut out rounds (I use either a 2 or 2 ½ -inch cutter). Firmly press the cutter down into the dough, but do not twist. Twisting the biscuit cutter seals off the edges of the biscuits and they therefore will not rise as high.
  • Arrange biscuits (with sides touching) on the parchment-lined baking sheet or in a parchment-lined round cake pan. Place the tray of biscuits in the refrigerator for about 5 minutes (if you have time) to chill before popping them in the oven. Brush the tops of the biscuits with a little bit of the melted butter.
