It's a proven tradition that Thanksgiving dinner just isn't complete without a pecan pie; and at a Southern holiday meal, there's really nothing better than showcasing the classics. This pecan pie recipe is a true classic: simple, reliable, and darn good. We can appreciate pecan pies infused with bourbon, filled with chocolate, or drizzled with caramel, and we find pecan pie bars and bites incredibly tasty forms of the dessert too; but if you're a committed traditionalist (which we can definitely relate), a classic pecan pie recipe like this is the way to go. This recipe uses refrigerated pie crust for a process made easier and quicker without sacrificing a lick of that ooey, gooey flavor we love, and it only takes about 10 minutes to get this indulgent holiday pie ready to pop right in the oven, which makes it that much more appealing. You can decide how finely you want your pecans chopped to change up the presentation and amount of crunch in every bite. We usually go with very roughly chopped nuts for a great texture that complements the gooey filling perfectly, but finely chopped pecans make for a cohesive texture you might enjoy too! No matter how you slice it (or, in this case, chop it), nothing satisfies a Southerner's sweet tooth around the holidays quite like pecan pie. You can serve this pie with a dollop of homemade sweetened whipped cream for a finishing touch that works superbly with the nuttiness of the pie.

- Unfold 1 piecrust, and roll to press out fold lines. Fit into a 9-inch pie plate according to package directions; fold edges under, and crimp.
- Whisk together eggs and next 6 ingredients in a saucepan over low heat until well blended. Pour into piecrust; sprinkle with pecans.
- Bake at 350° on lower rack 30 minutes or until pie is set.
CLASSIC SOUTHERN PECAN PIE

- Preheat oven to 350 degrees.
- Prepare pie crust. Roll it out and line a pie dish with it.
- In a large bowl, whisk together the eggs, sugar, corn syrup, vanilla, salt, cinnamon and butter.
- Pour chopped pecans into the unbaked pie crust. Pour the egg mixture over the chopped pecans, which will rise to the surface. Gently lay the whole pecans around the top of the pie in a decorative pattern (or chop them all up and do the whole pie with chopped pecans if you don't want to bother with making it look fancy.
- Bake the pie for 60-70 minutes until set. It's okay if it is slightly wobbly in the center still. Cool completely for at least 3 hours before slicing so the pie has time to set up.

- Preheat oven to 400 degrees F (205 degrees C).
- Beat eggs slightly in medium bowl. Beat in sugar, and then blend in syrup, butter or margarine, vanilla, salt, and pecans. Pour filling into unbaked pie shell.
- Bake in preheated oven for 15 minutes. Reduce heat to 350 degrees F (175 degrees C), and continue baking 35 to 40 minutes; the pie will be brown and slightly puffed.

- Preheat oven to 350°F
- In a mixing bowl combine granulated sugar, brown sugar, salt, corn syrup, vanilla extract, melted butter, eggs and flour together with a whisk or spatula.
- Add the pecans to the bottom of a store bought pie shell.
- Line a sheet pan with foil and place the pie plate on the sheet pan. This will help with spills and it's easier to handle transferring the pie in and out of the oven.
- Pour the filling mixture over the pecans.
- Place the pie into the oven and then cover with a piece of aluminum foil.
- Bake for 30 minutes covered. Remove the foil and bake an additional 20 minutes or until set.
- Remove from the oven and cool completely before serving. A pecan pie can be made ahead of time and refrigerated. Allow to come to room temperature before serving.

- Preheat the oven to 375 degrees F. Unroll the piecrust and place in a 9-inch pie plate. Fold the overhang under and crimp the edge with a fork or your fingers. Bake the crust until light golden brown, about 10 minutes. Cool completely on a rack. (Leave the oven on.)
- Whisk the corn syrup, brown sugar, salt, butter and vanilla in a medium bowl. Lightly beat the eggs in a small bowl, then whisk into the corn syrup mixture.
- Finely chop 1/2 cup pecans and spread evenly over the piecrust. Roughly chop another
- 1/2 cup pecans and mix into the corn syrup mixture, then pour the filling into the crust. Arrange the remaining 1 cup pecans on top in a decorative pattern.
- Bake the pie until a knife inserted into the center comes out clean, 40 to 50 minutes. Cool completely on a rack. Serve with whipped cream, if desired.
CLASSIC PECAN PIE

- Make the crust: Pulse the flour, granulated sugar and salt in a food processor until combined. Add the butter and pulse about 10 times until it looks like cornmeal with pea-size bits of butter. Add the egg and pulse 1 or 2 more times. If the dough is very dry, add the water. Pulse 8 to 10 times until the dough starts to clump together and there is no visible flour. Turn out the dough onto a piece of plastic wrap and form into a disk; wrap tightly. Refrigerate until firm, at least 1 hour or overnight.
- Roll out the dough on a lightly floured surface into a 12-inch round. Ease into a 9-inch pie plate. Trim the edges, leaving a 1-inch overhang, then tuck the overhanging dough under itself; crimp the edges with a fork. Freeze until firm, about 30 minutes.
- Meanwhile, position racks in the middle and lower thirds of the oven; preheat to 375˚. Spread the pecans on a baking sheet and bake on the middle rack until toasted, 10 to 12 minutes. Let the nuts cool slightly, then roughly chop.
- Line the chilled pie crust with parchment paper or foil and fill with dried beans or pie weights. Place the pie crust on a baking sheet and bake on the middle rack until the dough is dry and set around the edges, 20 to 25 minutes. Remove the parchment and beans and continue baking until the crust is light golden brown all over, 10 to 15 more minutes.
- Meanwhile, make the filling: Combine the butter, brown sugar, corn syrup, bourbon and salt in a medium saucepan. Bring to a boil over medium heat, stirring; boil 1 minute. Remove from the heat and stir in the chopped pecans and vanilla bean paste. Let cool slightly, about 5 minutes. Whisk the eggs into the filling until smooth, then pour the filling into the hot crust. (If the crust has cooled, return it to the oven for 5 minutes to warm through before filling.)
- Reduce the oven temperature to 350˚. Bake the pie (on the baking sheet) on the lower oven rack until the edges are set but the center is still slightly loose, 40 to 45 minutes. (If the crust is getting too dark, cover loosely with foil.) Transfer the pie to a rack to cool completely.
