1 cup MIRACLE WHIP Light Dressing
3 eggs, separated
2 Tbsp. flour
2 Tbsp. sugar
1/4 tsp. pepper
2 pkg. (10 oz. each) frozen whole kernel corn, thawed, drained (about 3 cups)
1 cup KRAFT 2% Milk Shredded Cheddar Cheese
1/4 cup chopped green onions

Steps:

  • Mix dressing, egg yolks, flour, sugar and pepper until well blended. Stir in corn, cheese and onions.
  • Beat egg whites until stiff peaks form; gently stir into corn mixture. Pour into greased 1-1/2-quart casserole dish.
  • Bake at 350°F for 40 to 50 minutes or until knife inserted in center comes out clean.

1 garlic clove, crushed
1 tbsp chopped parsley
4 corn on the cob

Steps:

  • Heat oven to 200C/180C fan/gas 6. Mash butter, garlic and parsley with seasoning.
  • Cut 4 pieces of foil large enough to hold a cob, place a cob on each piece, top each one with butter, then seal edges to form parcels. Bake, or cook on the barbecue, for 30-35 mins or until tender.

From the Pantry: Mexican Bean, Rice and Corn Bake image

We took a cue from one of our favorite Mexican brunch dishes, chilaquiles (fried tortilla chips tossed with a red or green sauce), to create this easy no-shop recipe. The chili powder in the sauce has two jobs: one as flavor-booster and the other as thickener.

1/2 cup converted white rice
One 14.5-ounce can diced tomatoes
1 tablespoon chili powder
1 tablespoon white vinegar
1 small chipotle en adobo, finely chopped into a paste
Kosher salt
8 cups corn tortilla chips
One 15-ounce can black beans, strained and rinsed
One 11-ounce can corn niblets, strained and rinsed
One 8.5-ounce can creamed corn
1 cup jarred salsa
1/2 cup sliced pickled jalapenos

Steps:

  • Preheat the oven to 400 degrees F. Cook the rice according to package directions; let cool.
  • Meanwhile, stir the tomatoes, 2 cups water, chili powder, vinegar, chipotles en adobo and 1/2 teaspoon salt together in a large skillet. Bring to a high simmer over medium-high heat, then cook, stirring frequently, until the sauce thickens (much like jarred tomato sauce) and the chili powder flavor has mellowed, 12 to 15 minutes.
  • Pour the sauce into a 9-by-13-inch baking dish. Add 6 cups of the tortilla chips, and toss to coat. Finely crush the remaining chips; set aside.
  • Scatter the cooked rice over the chips, then the black beans and niblets. Finally, dollop the creamed corn evenly over the top. Cover the baking dish with foil, and bake until hot, 25 to 30 minutes. Dollop the top with salsa, garnish with the jalapenos, scatter with the crushed tortillas and serve.

While thinking of a shortcut for what we Pennsylvania Dutch call "Corn Pie", I thought of using biscuit mix instead of pied dough. I tried my version on some friends who were visiting, and they scraped the dish clean!

2 cups diced peeled potatoes
1/2 cup chopped onion
1-1/2 teaspoons salt
1/2 teaspoon pepper
2 cups water
4 cups fresh corn
2-3/4 cups milk, divided
1/4 cup sliced green onions
2 tablespoons minced fresh parsley
6 hard-boiled large eggs, sliced
3 cups biscuit/baking mix

Steps:

  • In a large saucepan, place the potatoes, onion, salt, pepper and water. Bring to a boil. Cook, uncovered, for 5 minutes. Add the corn; return to a boil and cook for 2 minutes. Drain. Add 1-3/4 cups milk, green onions and parsley. , Pour into a greased 13-in. x 9-in. baking dish. Top with eggs. Combine the baking mix and remaining milk just until smooth; drop by teaspoonfuls onto corn mixture. Bake at 450° for 13-15 minutes or until a toothpick comes out clean.

I have been told that this is the recipe from a (now defunct) restaurant chain the the San Francisco Bay Area. This creamed corn is in a thick and sweet sauce. This isn't a low-fat side-dish for calorie counters, but once in a while -- live it up! Very tasty with a holiday prime rib or turkey dinner. The recipe does call for M.S.G. (Accent) which I have never used. Frankly, it's delicious and very easy to make, even without the M.S.G.

2 (20 ounce) packages frozen corn kernels, thawed
1 cup whipping cream
1 cup milk
1 teaspoon salt
¼ teaspoon monosodium glutamate (MSG, or Accent flavor enhancer)
2 tablespoons sugar
white or cayenne pepper
2 tablespoons flour
2 tablespoons butter, melted

Steps:

  • Place corn kernels, whipping cream, milk, salt, flavor enhancer, sugar, and white or cayenne pepper in a large stockpot. Bring to a slow, low boil beginning on medium heat, stirring frequently. Simmer for 5 minutes on low heat.
  • Melt butter in the microwave, or in a small saucepan on low heat. Whisk in flour until smooth. Stir into the corn until well blended. Enjoy!
