5 cups mixed salad greens
1 large tomato, chopped (1 cup)
1 medium avocado, pitted, peeled, sliced or cubed, and tossed with lemon juice
1 box (9 oz) frozen diced cooked chicken, thawed (1 1/2 cups)
1 cup crumbled blue cheese (4 oz)
1/4 cup sliced green onions (4 medium)
6 slices cooked bacon, chopped
2 hard-cooked eggs, peeled, coarsely chopped
1 cup cucumber ranch dressing
1 small cucumber, seeded and finely chopped (3/4 cup)
2 tablespoons chopped fresh dill

Steps:

  • On large serving platter or in 13x9-inch (3-quart) glass baking dish, arrange salad ingredients in rows or if desired, arrange individual salads on lettuce-lined plates.
  • In medium bowl, mix dressing ingredients. Serve dressing with salad or spoon dressing over individual salads.

8 strips thick-cut bacon
Two 8-ounce boneless, skinless chicken breasts
Kosher salt and freshly ground black pepper
Neutral cooking oil, for greasing
4 large eggs
6 ounces ranch dressing
1 1/2 ounces sherry vinegar
1 tablespoon minced fresh chives
1 head iceberg lettuce, cored and cut into bite-size pieces
1 English cucumber, seeded and small diced
2 large tomatoes, small diced
1 avocado, sliced
1/4 cup blue cheese crumbles

Steps:

  • Preheat the oven to 375 degrees F.
  • Arrange the bacon slices on a rimmed sheet tray in a single layer and bake until the bacon is crispy, about 20 minutes. Allow to cool to room temperature, then crumble. Reserve until ready to build the jars.
  • Sprinkle the chicken breasts with salt and pepper. Put on an oiled quarter-sheet tray and roast until cooked through and browned, about 30 minutes. Allow to cool to room temperature, then chop into bite-sized pieces. Reserve until ready to build the jars.
  • Put the eggs in a small saucepan and just cover with water. Put on the stovetop over medium-high heat and bring to a boil. Once at a boil, turn off the heat and let sit for 11 minutes. Remove the eggs from the water and let cool to the touch. Remove from the shells and cut in half lengthwise. Reserve until ready to build the jars.
  • Mix the ranch dressing, sherry vinegar and chives in a small bowl. Reserve, chilled, until ready to build the jars.
  • Carefully build layers in each of four 32-ounce mason jars, starting with the iceberg in the bottom of each jar. Evenly divide the eggs, yolk sides facing out, among each jar. Divide the bacon crumbles, cucumber, tomatoes, avocado slices, chicken, blue cheese and ranch dressing among the jars.
  • Cover with lids and keep cold until ready to eat. Simply shake the jars to "toss" the salads and either serve on chilled plates or eat directly out of the jars.

2 hearts romaine lettuce, chopped
1 red bell pepper, seeded and thinly sliced
1 English seedless cucumber, quartered and sliced
1 small red onion, diced
1 tomato, cored and cut into wedges
2 avocados, peeled and diced
2 cups small cubes sharp white Cheddar
6 hard-boiled eggs, chopped
Bacon Buttermilk Dressing, recipe follows
1/2 cup buttermilk
1/3 cup sour cream
1 tablespoon lemon juice
2 teaspoons Dijon mustard
1/2 teaspoon chili powder
1/2 teaspoon salt
1/2 teaspoon ground black pepper
4 slices bacon, cooked until crisp and roughly chopped or torn

Steps:

  • Arrange the lettuce on a platter, then top with rows of the peppers, cucumbers, onions, tomatoes, avocados, cheese and eggs. Drizzle the Bacon Buttermilk Dressing over the top and serve.
  • Place the buttermilk, sour cream, lemon juice, mustard, chili powder, salt, pepper and bacon in a food processor and process until combined. Chill until ready to serve.

6 slices bacon
3 eggs
1 head iceberg lettuce, shredded
3 cups chopped, cooked chicken meat
2 tomatoes, seeded and chopped
¾ cup blue cheese, crumbled
1 avocado - peeled, pitted and diced
3 green onions, chopped
1 (8 ounce) bottle Ranch-style salad dressing

Steps:

  • Place eggs in a saucepan and cover completely with cold water. Bring water to a boil. Cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
  • Divide shredded lettuce among individual plates.
  • Evenly divide and arrange chicken, eggs, tomatoes, blue cheese, bacon, avocado and green onions in a row on top of the lettuce.
  • Drizzle with your favorite dressing and enjoy.

1 cup greek yogurt
⅓ cup milk
1 tablespoon white vinegar
2 tablespoons fresh parsley, minced
2 teaspoons fresh dill, minced
¼ teaspoon onion powder
⅛ teaspoon garlic powder
½ teaspoon black pepper
salt, to taste

Steps:

  • Preheat oven to 400°F (200°C).
  • In a medium bowl, combined the Greek yogurt, milk, vinegar, parsley, dill, onion powder, garlic powder, black pepper, and salt and mix until smooth. Set aside.
  • Place the chicken on a greased roasting tray and season both sides with salt and pepper.
  • Bake for 20 minutes, or until the chicken is cooked through and the juices run clear.
  • Let the chicken rest for 5 minutes before dicing.
  • In a large serving bowl, combine the romaine lettuce, red onion, cherry tomatoes, diced chicken, avocado, eggs, and bacon. Pour desired amount of ranch dressing over the salad and toss.

3/4 cup canola oil
1/4 cup olive oil
SALAD:
6-1/2 cups torn romaine
2-1/2 cups torn curly endive
1 bunch watercress (4 ounces), trimmed, divided
2 cooked chicken breasts, chopped
2 medium tomatoes, seeded and chopped
1 medium ripe avocado, peeled and chopped
3 hard-boiled large eggs, chopped
1/2 cup crumbled blue or Roquefort cheese
6 bacon strips, cooked and crumbled

Steps:

  • In a blender, combine the first 8 ingredients. While processing, gradually add canola and olive oils in a steady stream., In a large bowl, combine the romaine, endive and half of the watercress; toss lightly. Transfer to a serving platter. Arrange the chicken, tomatoes, avocado, eggs, cheese and bacon over the greens; sprinkle with chives. Top with remaining watercress. Cover and chill until serving., To serve, drizzle 1 cup dressing over salad. Serve with remaining dressing if desired.
