FANCY ROASTED COCKTAIL NUTS
The holidays have so many food associations for me, and one of those is fancy roasted cocktail nuts.

- Preheat oven to 325ºF.In a large bowl, stir to combine cashews, walnuts, pecans, almonds, orange zest, rosemary, cayenne, and sea salt. Drizzle over the maple syrup and stir to distribute evenly.Spread out evenly on a sheet pan and roast for 30 minutes, stirring once halfway through. When the nuts come out of the oven, immediately remove them to a bowl, using a metal turner. Enjoy!
TOASTED PECAN OLD FASHIONED
A seasonal twist on the classic whiskey cocktail, the Toasted Pecan Old Fashioned is a perfect cocktail for a chilly winter night. Toasted pecans soak in whiskey for days before the infused alcohol is poured atop a sugar and bitter mixture to make an Old Fashioned.

Steps:
- Preheat the oven to 400°F.
- Place the pecans on a baking sheet. Transfer to the preheated oven.
- Toast the pecans for 10-15 minutes or until browned and fragrant. (Keep an eye on them, as you could potentially burn them if not paying attention!)
- Remove from the oven, and let cool to room temperature.
- Transfer the cooled pecans to a mason jar, and pour the whiskey on top of them.
- Let the whiskey infuse for 3-4 days. (Don't go any longer than 4 days, as the pecans could dry the whiskey out.)
- In an Old Fashioned or your favorite whiskey glass, measure the sugar cube/loose sugar and dash in the Angostura bitters.
- Using a muddler, break down the sugar cube and combine it with the bitters, coating the sides of the glass as the sugar and bitters mix.
- Place whiskey stones or a large ice cube, then pour the Toasted Pecan Whiskey over the cubes, swirling it to mix with the bitters and sugar mixture.
- Enjoy immediately!

SPICED PECANS
Steps:
- Line a half sheet pan with parchment paper and set aside.
- Mix the salt, cumin, cayenne, cinnamon and orange peel together in a small bowl and set aside.
- Place the nuts in a 10-inch cast iron skillet and set over medium heat. Cook, stirring frequently, for 4 to 5 minutes until they just start to brown and smell toasted. Add the butter and stir until it melts. Add the spice mixture and stir to combine. Once combined, add both sugars and water, stirring until the mixture thickens and coats the nuts, approximately 2 to 3 minutes.
- Transfer the nuts to the prepared sheetpan and separate them with a fork or spatula. Allow the nuts to cool completely before transferring to an airtight container for storage. Can be stored up to 3 weeks.

- Preheat oven to 300°.
- In a large saucepan, melt the butter over medium heat; add in liqueur and orange zest; stir until blended.
- Remove the pan from heat, add in the pecans, and toss to coat well.
- Spread the nuts evenly on a large baking sheet and toast in the oven, uncovered, until golden brown, about 30 minutes, tossing the nuts from time to time.
- Drain on paper towels, sprinkle salt on top; let cool completely, and serve in crystal bowls with cocktails.

- Preheat oven to 325 degrees.
- In a small bowl, stir together the sugar, nutmeg, cumin, black pepper, cayenne, and salt.
- In another, larger bowl, whisk the egg whites until barely frothy. Add the nuts to the egg whites and turn to coat. Pour the sugar and spice mixture over the pecans and stir to coat.
- Spread the pecans on a baking sheet and place in oven until browned, about 1 hour. Stir occasionally to prevent clumping.
- Place the baking sheet on a rack to cool. Transfer the room-temperature nuts to an airtight container.
