This saffron rice recipe cooks up pretty quickly, making it a great dish if you're in a hurry - as long as you keep a few cans of coconut milk in the pantry for just such an occasion (and you do, too, right? Don't we all?). I've been known to eat an entire pot of this stuff to my head, foregoing all of the other goodness on my plate. Plus it's one of those rare dishes that gluten free AND vegan by default, so almost anyone can eat it.

1/4 teaspoon saffron threads
1 tablespoon Sauvignon Blanc (room temperature)
2 teaspoons peanut oil
2 cups uncooked white basmati rice
1 3/4 cup coconut milk
2 cups water
1 teaspoon sea salt
1 teaspoon agave nectar ((or 1/2 teaspoon of sugar))
1/2 teaspoon turmeric
1/4 teaspoon cumin

Steps:

  • In a small bowl, soak saffron threads in warm wine for 5 minutes while you complete step 2.
  • In a large saucepan, heat peanut oil over a medium heat until it begins to shimmer, about 2 minutes. Stir in rice, mixing with a wooden spoon until all of the grains are coated with peanut oil. Fry for 1 minute, stirring constantly.
  • Place the remaining ingredients in the pot with the rice and oil, taking care not to get caught in the napalm-like splattering that will inevitably happen. Gently stir ingredients, making sure that nothing sticks to the bottom while everything comes to a boil.
  • Once liquid achieves a boil, reduce heat to low. Place lid on pot, slightly askew to allow some steam to escape. Stir occasionally to make sure rice doesn't stick to bottom of pan and the sugar in the coconut milk doesn't burn.
  • Allow to simmer *very* gently for 15-20 minutes, or until rice is tender. You do not want the coconut milk, which is high in sugar, to burn.
  • Remove from heat and cover pot. Allow to sit for 5 minutes - it can actually sit like this for up to an hour. Fluff with a fork when you're ready to serve.
  • Variation: while hot, mix rice with finely chopped carrots, mint, and mango, then chill in the refrigerator for a great whole grain summer salad.

1.5 cups long grain white rice
I can coconut milk
1/3 cup chicken stock
15-20 threads saffron
Olive oil
Salt and pepper

Steps:

  • Add 1.5 tablespoons olive oil to heavy bottom pan with a good lid. Add rice and toast for about a minute on medium heat. Add saffron threads and toast another minute til the rice and saffron become fragrant but not browning. Add the coconut milk, rice will boil up, stir together and turn heat up to high. Add the chicken stock to the can off coconut milk and stir around to get out every last drop of coconut, add to the rice. Stir, add salt and bring to a boil. Stir one more time, cover and reduce heat to low. Allow to cook undisturbed for 12-14 minutes. Fluff with fork being sure to get the rice from the bottom. if the rice at the bottom is already burning just leave it, it will be a sacrificial layer to keep the rest of the rice moist, dont mix this rice in. add salt and pepper to taste, turn off the heat and cover til ready to serve.

A delicious combination of coconut and saffron blended with jasmine rice. I have tried many recipes and finally came up with this myself and I love it! Be sure to use unsweetened coconut. If you can use a fresh coconut and grate it. If not, you can rinse the sugar off of sweetened and then toast.

1 cup jasmine rice
1 tablespoon grapeseed oil
1 teaspoon salt
6 -8 saffron threads
1 cup chicken broth
1 cup coconut milk
1/2 tablespoon finely chopped garlic
1 tablespoon chopped onion
1/4 cup toasted unsweetened coconut

Steps:

  • Over medium high heat combine oil, rice, salt, saffron, garlic and onion. Stirring constantly heat for 2-3 minutes then add toasted coconut. Stir another minute or until edges of rice begin to brown.
  • Add chicken broth and coconut milk, being careful as it will sizzle like crazy! Stir bottom and sides of pot and reduce heat to low. Put a tightly fitting lid on and cook for approximately 15-20 minutes or until rice has absorbed all the liquid and is tender.

If you like coconut rice, try this delicious Thai coconut saffron rice recipe. This uses both saffron rice and coconut rice combined in one recipe.

2 cups white Thai jasmine rice
2 cups good-quality coconut milk
1+3/4 cups good-tasting chicken or vegetable stock
2 +1/2 tablespoons dry shredded coconut, unsweetened (baking type)
1 teaspoon turmeric
Optional: 1/4 to 1/2 teaspoon saffron threads
1 clove garlic, minced
1 tablespoons fish sauce , OR soy sauce if vegetarian
1 tablespoons lemon juice
1 teaspoon ground cumin
1/4 to 1/2 teaspoon dried crushed chili (available in the spice aisle)
2 green onions OR a few chives, sliced (for garnish)

Steps:

  • Place stock in a pot and set over high heat.
  • Add the turmeric, saffron threads (if using), garlic, fish sauce, lemon juice , cumin, and chili. Stir well and bring to a boil.
  • Add the rice, shredded coconut, plus coconut milk. Stir continuously (to keep rice from sticking to the bottom) while you bring liquid back to a gentle boil.
  • When liquid is gently bubbling, reduce heat to low (just above minimum) and stop stirring. Cover pot tightly with a lid and cook about 15 minutes, or until liquid has been absorbed (use a fork to pull rice back so you can see to the bottom of the pot).
  • Turn off heat, but leave the pot on the burner (covered) to steam for another 5-10 minutes, or until you're ready to eat. Rice will stay hot in this way for an hour or more (great if you're having company!).
  • Before serving, fluff rice with a fork and taste-test for salt.
  • If not salty enough (this will depend on the saltiness of your stock), add a little more fish sauce OR a sprinkling of salt if vegetarian. If too salty, add another squeeze of lemon juice.

I love coconut rice, especially as a side for spicy grilled meats, but when I order it out, it's usually too sweet for my tastes, and more closely resembles dessert than a side dish. So, I decided to create a more savory version at home, which I eventually did, after a few short decades of testing.

1 ½ cups jasmine or long-grain white rice
1 teaspoon finely grated fresh ginger
½ teaspoon red chili flakes
¼ teaspoon ground turmeric
1 teaspoon kosher salt
1 cup water
1 (14 ounce) can coconut milk (not coconut cream)
1 bay leaf
¼ cup toasted coconut for garnish

Steps:

  • Place rice in a heavy-bottomed saucepan. Add grated ginger, kosher salt, red chili flakes, and turmeric. Pour in water and coconut milk. Whisk until mixture is well combined (do not stir again).
  • Place pan over medium-high heat and bring to a simmer. When mixture starts to bubble and reaches a low simmer, place bay leaf on the surface, cover tightly, and reduce heat to low. Cook for 18 minutes without taking off the lid. Remove pan from heat and let sit 5 minutes, covered. Fluff rice with a fork.

1 1/2 cups long-grain rice
2 tablespoons vegetable oil
a 3-inch cinnamon stick
7 whole cloves
5 cardamom pods if desired
1 teaspoon salt
1/4 teaspoon crumbled saffron threads
2 tablespoons milk

Steps:

  • In a large bowl wash rice in several changes of cold water until the water runs clear and drain it in a fine sieve. In a large heavy saucepan heat the oil over moderately high heat until it is hot but not smoking, add the cinnamon stick, the cloves, and the cardamom pods, if using, and fry the spices, stirring, for 30 seconds, or until the cloves are puffed slightly. Add rice and cook the mixture, stirring, for 1 minute, or until the rice is opaque. Add 2 1/4 cups water and the salt, bring the mixture to a boil, and cook the rice, covered, over low heat for 15 minutes.
  • While the rice is cooking, in a heatproof bowl set over a small pan of simmering water heat the saffron for 3-4 minutes, or until it is brittle. Add milk, heat the mixture, stirring occasionally, until it is hot, and remove the pan from the heat. Drizzle the saffron mixture over the rice and continue to cook the rice, covered, for 5 minutes. Remove the pan from the heat and let the rice stand, covered, for 5 minutes.

1 cup basmati rice
1 tablespoon olive oil
1/8 teaspoon salt
1 pinch saffron (about 5-6 threads)
1 cup chicken broth
3/4 cup coconut milk

Steps:

  • In a pot that has a tight-fitting lid, over high heat, add the rice, olive oil, salt, and saffron. Stirring with a wooden spoon, heat for 2-3 minutes until a few rice grains begin to brown on the edges. OPTIONAL: You may want to add a few ounces of shredded coconut at this stage.
  • Being careful to avoid flare-ups and spill-overs, add the chicken broth and coconut milk to the hot pan. It will sizzle and bubble vigorously!
  • Stir to loosen any rice on the bottom or sides of the pot and reduce the heat to low. Put on the lid and cook for 13 minutes.
  • When 13 minutes are up, turn off the heat and let the covered rice sit for 5 minutes.
  • Remove the lid and fluff with a fork before serving with any Asian, Polynesian, or Indian dish.

One-Pot Turmeric Coconut Rice With Greens image

No matter how you modify this one-pot rice, it can't help but simultaneously comfort and enliven: The rice is cooked with turmeric, black pepper and rich coconut milk, which is all brightened by a mix of coconut, sesame seeds and lime. The greens, which conveniently cook on top of the rice, can be swapped out for anything that steams in 10 minutes, such as frozen peas or edamame, green beans, broccoli, grated carrots or sliced fennel. While a meal all on its own, this rice would also be great accompanied by tofu, white fish, chicken thighs or stewed black beans. Prepared as written, this dish has a relatively pure, mild flavor, so if you want more oomph, add more turmeric and saffron and season with plenty of salt and pepper as you cook.

1/2 cup unsweetened coconut flakes
1 tablespoon white or black sesame seeds
2 tablespoons coconut oil
1 scallion, thinly sliced, white and green parts separated
1 teaspoon ground turmeric
1/2 teaspoon black pepper, plus more as needed
1 (14-ounce) can full-fat coconut milk
Pinch of saffron (optional)

1 medium bunch kale, spinach or Swiss chard

Steps:

  • Rinse rice until water runs clear. Drain and set aside.
  • In a medium pot or Dutch oven, toast the coconut and sesame seeds over medium-low heat, stirring occasionally, until fragrant, 3 to 5 minutes. (Adjust heat as needed to prevent burning.) Transfer to a small bowl. Wipe out the pot.
  • In the same pot, melt the coconut oil over medium-low. Add the scallion whites, turmeric and 1/2 teaspoon black pepper and cook, stirring, until aromatic and lightly toasted, 3 to 5 minutes.
  • Add the rice, coconut milk, saffron (if using), and 1 1/2 teaspoons salt. Fill the empty can of coconut milk with water and add it to the pot. Give the mixture a good stir to separate any lumps and bring to a boil over medium-high.
  • Once boiling, cover, turn the heat to low, and simmer for 10 minutes.
  • As rice cooks, remove and discard the tough stems of the leafy greens, if needed, and cut or tear the leaves into bite-size pieces. When the rice has cooked for 10 minutes, arrange the greens on top of the rice in an even layer and season well with salt and pepper. Cover, and cook until the rice is tender, 5 more minutes. Remove from heat and let sit, covered, 5 minutes.
  • As rice rests, zest the lime and cut it into 4 wedges. Add 1/2 teaspoon zest to the coconut-sesame mixture, along with the scallion greens. Season with salt and pepper and stir to combine.
  • Gently stir the greens into the rice using a spatula or fork, season to taste with salt and pepper. Divide among bowls. Sprinkle the coconut mixture on top and serve with a lime wedge for squeezing over.
