BAKED FISH IN FOIL WITH VEGETABLES

Steps:
- Pre heat oven to 475 F
- Line a baking sheet with aluminium foil. Make sure you cover the surface evenly so the juice from the vegetables and fish won't spill out while cooking.
- Place fish in the middle of the sheet.
- Top with all vegetables.
- Drizzle oil.
- Add salt, pepper, lemon juice, lemon zest and garlic and mix well with your hands.
- Wrap foil well and bake for 15 minutes.
- Remove baking sheet from the oven, open the foil to expose the fish and return to oven. Bake for additional 5 minutes or until the fish gets a light golden crust.
- Test with a fork as specified in the article above.
- Enjoy your fish in foil!

- Rinse the fish and pat dry with paper towels. Season with salt and pepper on both sides. Rinse the broccoli and divide into florets. Peel the carrot and cut into sticks. Rinse, trim and cut the scallions in half lengthwise. Rinse the mushrooms and cut into quarters.
- Rinse the parsley, shake dry and chop the leaves. Rinse the lemon in hot water, wipe dry and peel with a vegetable peeler. Cut the lemon peel into thin strips and then juice half of the lemon.
- Preheat the oven to 200°C (approximately 400°F) on the convection setting. Spread 4 large pieces of aluminum foil on the work surface and arrange the vegetables on them. Season with salt and pepper. Place the fish on the vegetables, sprinkle with the lemon peel, drizzle with white wine and lemon juice and sprinkle with parsley.
- Close the aluminum foil around the fish and the vegetables, place on a baking sheet and bake for about 35 minutes. Serve immediately.

- In a large skillet, saute the onion in oil until tender. Add the red pepper, mushrooms, garlic, allspice, salt and pepper; cook and stir over medium heat for 5 minutes. Remove from the heat. Stir in the olives, 1 tablespoon lemon juice and 2 teaspoons parsley. Spoon onto the center of a large piece of heavy-duty foil (about 18 in. x 12 in.). , Place cod over vegetables; sprinkle with remaining lemon juice and parsley. Fold foil over and fold in the edges twice, forming a pouch. Place on a baking sheet. Bake at 350° for 15-20 minutes or until fish flakes easily with a fork. - Preheat the oven to 400 degrees F (200 degrees C).
- Combine tomatoes, bell pepper, onion, olive oil, basil, and garlic in a bowl and mix well.
- Lay 4 sheets of aluminum foil on a work surface and place 1 cod fillet in the center of each. Spoon tomato mixture evenly on top of the 4 fillets. Drizzle with lemon juice and season with salt and pepper. Place a second sheet of foil on top and seal the edges to make a parcel. Repeat with the remaining fillets and tomato mixture.
- Bake in the preheated oven until cod flakes easily with a fork, about 20 minutes. Remove from the oven and carefully unwrap the parcels. Spoon onto warmed plates and serve immediately.

Steps:
- Heat oven to 400 degrees
- Pat dry each cod filet.
- Place filets in a large square of foil.
- Brush each filet with olive oil.
- Season each with salt, pepper and rosemary.
- Mix together breadrumbs, the zest of one lemon, 1 tbsp olive oil and capers.
- Place breadcrumb mixture on filets and pat mixture to adhere to fish.
- Place 1 lemon slice on each filet.
- Arrange tomatoes, onions and olives on fish.
- Fold and pinch together two sides of the packet, and fold up the other two sides.
- Pour two tablespoons of white wine and 1 tbsp lemon juice in each packet.
- Fold and pinch together entire packet, making sure not to rip foil.
- Arrange fish packets on a baking sheet.
- Bake at 400 degrees for 15 minutes.
- Remove from pan and serve immediately.
- Be careful not to burn yourself while removing from packet-juice & all.

- Preheat the oven to 200 C.
- Place the garlic and vegetables in a large shallow roasting pan, drizzle with the olive oil and season with salt and pepper.
- Place the cod fillet on top of the vegetables and bake for 20-25 minutes, or until the cod is golden and the vegetables are crisp.
- Serve the cod with the roasted vegetables, sprinkled with torn parsley.
- You may also enjoy a bit of mayonnaise on the side.
COD BAKED IN FOIL
Steps:
- Put a baking pan in the oven and preheat it to 400°F. Take 8 sheets of aluminum foil, each about 18 inches long, and place one piece on top of the other (you will make 4 packages). Rub the fish with some of the olive oil; it should be nice and moist. Season it with salt and pepper and put it on a piece of the foil. Sprinkle with garlic and parsley and fold the foil onto itself, crimping the edges as tightly as possible. Repeat the process. (You can refrigerate the packages until you're ready to cook, no more than 6 hours later.)
- Put the packages in the baking dish and bake for about 15 minutes (or about 8 minutes from the time it starts sizzling). Let sit for a couple of minutes before carefully slitting open the packages. Then spoon out the fish and serve with the lemon.

- Place cod on a piece of aluminum foil and season with salt, black pepper, and garlic powder. Top cod with spinach, tomato, and onion; season again with salt and black pepper. Drizzle olive oil and balsamic vinegar over cod and top with mozzarella cheese. Fold foil over cod creating a packet, crimping the edges together making a seal.
- Cook on the preheated grill until fish flakes easily with a fork, 7 to 9 minutes.

- Preheat the oven to 350 degrees F (175 degrees C).
- Cut cod fillets into serving pieces. Arrange in an ungreased baking dish and sprinkle with lemon juice, butter pieces, 1 1/2 teaspoons salt, and pepper.
- Mix carrots, onion, celery, bread cubes, melted butter, sage, thyme, and remaining 1/2 teaspoon salt together in a bowl. Mix bread crumbs, parsley, and paprika together in a separate bowl.
- Spread vegetable mixture evenly over cod. Cover with aluminum foil.
- Bake in the preheated oven for 30 minutes. Uncover and sprinkle bread crumb mixture over top. Bake until fish flakes easily with a fork, about 5 more minutes.

- 1. Adjust oven rack to lower-middle position and heat oven to 450 F. Mash butter, thyme, half of garlic, 1/4 teaspoon lemon zest, 1/4 teaspoon salt and 1/8 teaspoon pepper in bowl. Using thin metal spatula, gently slide cod and vegetables, and any accumulated juices, onto individual plates. Sprinkle with parsley mixture and serve with lemon wedges.
