BOLINOS DE BACALHAU (PORTUGUESE COD CAKES)



Bolinos de Bacalhau (Portuguese Cod Cakes) image

10 ounces thick salt cod
8 ounces floury potatoes (russets)
Butter
Milk
3 heaped tablespoons finely chopped parsley
1 heaped tablespoon finely chopped mint
Freshly ground black pepper
3 eggs, separated
1 tablespoon Port
Oil for deep frying

Steps:

  • A day or two before making the fish cakes, put the cod to soak in cold water. Change the water four or five times during this period.
  • Drain the cod and rinse it well under cold running water. Cover with fresh water in a saucepan, bring to a boil and simmer for 20 minutes or until cod is soft.
  • While the cod is simmering, cook the potatoes in their skins, then peel and mash with butter and milk.
  • When the cod is ready, drain it thoroughly and remove the skin and bones. Shred the cod with a couple of forks. Add the creamed potatoes, parsley, mint, pepper, egg yolks, and the port. Mix thoroughly. Whisk the egg whites until stiff, then fold into the cod mixture.
  • Heat the oil in a deep fryer or heavy deep pot to 375 degrees F.
  • Take a lump of the mixture, about the size of a small egg, and mold it in your hand to make a torpedo shape. Deep fry, in small batches, until crisp and brown all over. Drain on paper towels and serve hot.

2 liters milk
240 grs butter
240 grs flour
1 dl olive oil
350 g of desalted cod
flour
breadcrumbs
oil (for frying)

Steps:

  • Heat the milk.
  • In a saucepan melt butter with a little olive oil, sprinkle flour and fry in butter without burning it.
  • Once you've made the roux, pour the milk slowly and stir continuously with a wisker to avoid lumps.
  • Once bechamel is done add desalted cod crumbled and let cook to incorporate the flavour. Pour on a plate impregnated with a little butter and let rest for 2 hours.
  • Then for the croquettes and pass through flour, egg and breadcrumbs and fry a few at a time.

10 1/2 ounces potatoes cooked and mashed
1 small finely chopped onion
2 tablespoons chopped cilantro
4 eggs
salt and pepper
flour
egg white
bread crumbs
oil to fry

Steps:

  • Lightly boil the codfish, crumble and set aside. Add the mashed potatoes, and the chopped onion, chopped cilantro, the salt and pepper and eggs to hold the mixture together. Add the eggs one at a time until the mixture holds a ball, but it should take about 4. Season with salt and pepper. Let the mixture cool until it can be handled. When cool, form the small croquettes into a ball. Roll in flour, beaten egg white and bread crumbs and fry in oil that is not too hot. Serve immediately.

2 pounds Norwegian or other salt-cod fillets
2 pounds baking potatoes, peeled and cut into large chunks
Salt
Half an onion, peeled and finely chopped
2 large egg yolks
4 cloves garlic, peeled and minced
2 tablespoons finely chopped parsley
1 tablespoon olive oil
Freshly ground black pepper
Vegetable oil for deep frying

Steps:

  • The day before cooking, prepare the salt cod by rinsing under cold water. Place the fillets in a bowl and fill with cold water. Refrigerate, changing water occasionally, about 24 hours. The fish should be soft when ready.
  • Place the potatoes in a pot and fill with lightly salted water. Bring to a boil and cook until potatoes are soft. Drain, mash and set aside.
  • Drain the fillets and shred into a bowl. Add the potatoes, onion, egg yolks, garlic, parsley and olive oil. Work the mixture until it is blended. Season with salt and pepper.
  • Pour oil into a saucepan about 3 inches deep. Place over medium-high heat. Meanwhile, shape the fish mixture into balls about 1 1/2 inches in diameter. Test the oil by dropping in a little batter; if it sizzles immediately, the oil is ready. Carefully drop a few balls in; do not crowd. Fry until golden, about 2 minutes, then remove and drain. Repeat with remaining batter. Serve hot.

These croquettes are made from bacalhau, the dried-fishstaple of Latin America and Western Europe.

1 pound salt cod
1 pound Yukon gold potatoes, peeled and cut into 1-inch chunks
Coarse salt
5 tablespoons olive oil
1 cup finely chopped onion
2 garlic cloves, minced
1/4 cup finely chopped fresh flat-leaf parsley
Freshly ground pepper
2 large eggs, lightly beaten
1 cup plain dried breadcrumbs
1 1/2 quarts canola oil

Steps:

  • Cover cod with cold water in a large bowl; cover with plastic wrap. Refrigerate 12 hours, changing water twice.
  • Drain and rinse cod. Transfer to a large saucepan; cover with cold water. Bring to a boil. Reduce heat; simmer 5 minutes. Drain and rinse cod. Wrap in a clean kitchen towel, and roll back and forth until cod is dry and finely shredded. Shake into a small bowl; set aside.
  • Cover potatoes with cold water in a clean large saucepan; season with salt. Bring to a boil; reduce heat, and simmer until tender, about 15 minutes. Drain potatoes, then mash in saucepan; set aside.
  • Heat olive oil in a large skillet over medium heat until hot but not smoking. Add onion and garlic; cook, stirring occasionally, until onion is translucent, about 3 minutes. Reduce heat to medium-low; stir in cod. Cook until it looks dry, about 3 minutes. Stir in parsley. Season with salt and pepper. Transfer to a bowl; let cool.
  • Stir eggs and reserved potatoes into cod mixture, mashing ingredients to combine. Mold about 1 tablespoon mixture into a log (slightly taper ends) about 2 inches long. Repeat with remaining cod mixture. Roll logs in breadcrumbs.
  • Heat canola oil in a large saucepan over medium-high heat until it registers 360 degrees on a deep-fry thermometer. Line a baking sheet with paper towels. Working in batches to avoid crowding, fry logs, turning occasionally, until just golden brown, about 1 minute. With a slotted spoon, transfer to lined sheet to drain. (Adjust heat between batches as necessary to keep oil at a steady temperature.) If not serving immediately, keep warm in a 275 degree oven up to 30 minutes.
