CASHEW BARS RECIPE
The delicious coffee cake bars with raisins and cashew nuts make a nice breakfast treat or can also be enjoyed as dessert or with coffee in the afternoon.

Steps:
- Preheat oven to 350° F. Combine the flour, sugars, baking powder and salt in a large mixing bowl. Add the eggs and beat just until combined. Fold in the raisins.
- Spread batter into a greased 8 inch square baking dish. Bake for 20-25 minutes or until the top springs back when lightly touched.
- In a small bowl, combine the topping ingredients. Spread the topping over the cake.
- Put the pan back into the oven on the broil setting for 1-2 minutes or until bubbly and lightly browned. Cut into bars while still warm. Cool on a wire rack.

- Combine flour, baking powder, cardamom, and salt; set these dry ingredients aside.
- Combine milk and instant coffee in saucepan, and heat at a medium low setting. Stir until coffee dissolves, and remove from the heat.
- In a large bowl, cream the butter or margarine with the white sugar and 1 cup confectioners' sugar. Beat in the egg, and then beat in the coffee mixture. Gradually blend in the mixture of dry ingredients, and fold in the almonds.
- Spread dough evenly in a 9 x 13 inch baking pan. Bake for 18-20 minutes at 350 degrees F (175 degrees C), or until toothpick inserted in center comes out clean. Cool in pan on wire rack.
- To Make Frosting: Put 1 cup of the confectioners' sugar in a mixing bowl. Beat in the evaporated milk and vanilla extract. Gradually beat in remaining 2 cups of confectioners' sugar. Continue beating until of desired consistency. If consistency is too thick, add a little more milk; if it is too thin, add more powdered sugar.
- Frost the bars with the icing.

- Cream sugar and butter.
- Add eggs one at time.
- Add vanilla.
- Mix flour and baking powder.
- Add to wet mixture.
- Spread 3/4 of the dough on a greased 9 x 13 inch pan.
- Spread pie filling in strips.(i just slathered on cherrypie filling and dropped clumps on top ).
- Cover strips with remaining dough.
- Bake 35 minutes at 350 degrees Fahrenheit.
- While baking mix powdered sugar, vanilla, and butter glaze ingredients together, adding just enough milk to make runny.
- Drizzle glaze over bars.

- Heat oven to 350°F. Spray bottom and sides of 8-inch square pan with cooking spray. In large bowl, place cookie mix and pecans. Cut in butter, using pastry blender or fork, until mixture looks like coarse crumbs. With fork, stir in egg. Press half of cookie mixture in bottom of pan. Bake 15 to 18 minutes or until golden brown. Reserve remaining cookie mixture.
- Meanwhile, in small bowl, stir milk, 2 tablespoons liqueur and the coffee granules until well blended. Pour evenly over warm crust. Sprinkle reserved cookie mixture over top. Bake 25 to 30 minutes longer or until golden brown. Cool 30 minutes at room temperature. Refrigerate 1 hour to cool completely. Let stand 10 minutes before cutting into bars (5 rows by 5 rows). Store bars covered at room temperature.
- Just before serving, in small bowl, beat whipping cream, brown sugar, 1 tablespoon liqueur and the vanilla with electric mixer on high speed until soft peaks form. Top each bar with dollop of whipped cream; sprinkle with ground cinnamon. Insert cinnamon stick into each dollop of whipped cream.

I take this to our Sunday school class occasionally and everyone loves it! I fix this for Christmas breakfast and it doesn't last long!! Servings approximate. - Heat the oven to 180C/160C fan. Line and butter two 18cm sandwich tins. Add the sugar and butter to a bowl and whisk until very fluffy and pale.
- Whisk the eggs in a mug with a fork, then add them gradually to the mixture with 1 tbsp of flour each time. (Make sure you don't use all the flour.) When the eggs have been fully combined into the mix, add the rest of the flour and fold it in gently.
- Add the dissolved coffee to the mixture, still folding. Divide into the sandwich tins and cook for 25-30 min until risen and firm and a skewer inserted into the middle comes out clean. Leave to cool in the tin for 5 mins then turn out onto a wire rack to cool completely. Can be frozen at this stage.
- Meanwhile, make the icing by beating the icing sugar with the butter until light and fluffy, then add the dissolved coffee. Whisk, then cover and set aside until ready to ice the cake.
- Spread half the icing on the bottom of one sponge and spread the strawberry jam on the bottom of the other, if using. Sandwich together, then spread the remaining icing on top. Decorate with walnuts or cherries, if you like.
