FABULOUS COLCANNON (MASHED POTATOES AND CABBAGE)

This is not the traditional colcannon, a mashed potato and cabbage dish from Ireland. I have spiced it up and put my own spin on it, but it is WONDERFUL comfort food. Cheap and easy. I top it with cheese and serve as a main dish.

3 pounds potatoes, peeled and cut into chunks
¼ cup milk
2 tablespoons mayonnaise
¼ cup unsalted butter
4 slices bacon, chopped
1 onion, diced
1 clove garlic, minced
¼ teaspoon cayenne pepper
½ head cabbage, sliced into thin strips
½ cup water
salt and ground black pepper to taste
2 cups fully cooked ham, cut into bite-size pieces

Steps:

  • Place potatoes into a large pot and cover with salted water. Bring to a boil, set heat to medium-low, and simmer until tender, about 20 minutes. Drain potatoes and transfer to a large mixing bowl.
  • Stir milk, mayonnaise, and butter into potatoes. Mash with a potato masher until smooth.
  • Cook and stir bacon in a large skillet over medium heat until fat is rendered, 3 to 5 minutes.
  • Stir onion, garlic, and cayenne pepper into bacon and drippings and cook, stirring often, until onions are translucent, about 5 minutes.
  • Stir cabbage and water into onion mixture until cabbage is wilted, about 5 more minutes. Season with salt and black pepper.
  • Fold cabbage mixture into mashed potatoes.
  • Cook and stir ham pieces in the same skillet used for cabbage mixture until lightly browned, 3 to 5 minutes.
  • Stir cooked ham into mashed potato and cabbage mixture until combined.

While colcannon seems to be associated with St. Patrick's Day, I love the combination of potatoes, cabbage, onion, and bacon all through the cooler months of fall and winter! I attend an annual St. Paddy's Day party and this is the dish I'm always asked to bring...and I'm happy to say that the bowl comes home empty every time!

2 ½ pounds potatoes, peeled and cubed
4 slices bacon
½ small head cabbage, chopped
1 large onion, chopped
½ cup milk
salt and pepper to taste
¼ cup butter, melted

Steps:

  • Place potatoes in a saucepan with enough water to cover. Bring to a boil, and cook for 15 to 20 minutes, until tender.
  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, reserving drippings, crumble and set aside. In the reserved drippings, saute the cabbage and onion until soft and translucent. Putting a lid on the pan helps the vegetables cook faster.
  • Drain the cooked potatoes, mash with milk and season with salt and pepper. Fold in the bacon, cabbage, and onions, then transfer the mixture to a large serving bowl. Make a well in the center, and pour in the melted butter. Serve immediately.

6 Yukon gold potatoes (about 2 pounds), peeled and diced into 1-inch pieces
Kosher salt and freshly ground black pepper
2 cups half-and-half
1 stick (8 tablespoons) unsalted butter
3 cloves garlic, smashed
1/2 head green cabbage, finely shredded (about 2 cups)
2 green onions, thinly sliced

Steps:

  • Place the potatoes and 2 tablespoons salt in a large pot. Add enough water to cover the potatoes by at least 1 inch and bring to a boil over high heat, then reduce to a simmer until the potatoes are cooked through and fork tender, 20 to 30 minutes.
  • Meanwhile, heat the half-and-half, butter, garlic, 1 teaspoon salt and 1/2 teaspoon black pepper in a small saucepan over medium heat. Bring to a simmer, then turn off then heat and set aside.
  • Drain the potatoes and pass through a ricer into a large bowl. Remove the garlic from the half-and-half mixture. Stir the half-and-half mixture, cabbage, three-quarters of the green onions and salt and pepper to taste into the potatoes until combined. Top with the remaining green onions and extra pepper.

6 medium potatoes (about 2 lbs.)
1/2 head cabbage, shredded (about 3 cups)
6 scallions, chopped
1/4 cup water
1/4 teaspoon salt
1/3 cup milk
1/4 cup butter
1 teaspoon salt
pepper

Steps:

  • Peel the potatoes, cut into 1" chunks.Boil or steam the potatoes in salted water until fork tender, about 30 minutes. , drain.
  • Steam the cabbage, scallions, 1/4 cup water and 1/8 tsp.salt to boiling, reduce heat and cook until crisp-tender, about 10 minutes. Drain.
  • To the potatoes, add the milk, 1 teaspoons salt, pepper. and butter. Mash until smooth.
  • Stir in cabbage and scallions.
  • Dot with butter and serve. (Don't forget to tuck a coin in for luck!).

1 onion (finely chopped)
1/4 cup water
6 potatoes (cooked and mashed, or 4 cups prepared instant mashed potatoes )
1/4 cup milk
1/4 cup butter (or margarine)

Steps:

  • Gather the ingredients.
  • Place cabbage, onion, and water in a saucepan or Dutch oven and quickly bring to a boil. Reduce heat, cover, and simmer about 8 minutes until tender. Do not overcook.

Steps:

  • Peel the potatoes and cut them into 1-inch pieces. In a saucepan cover the potatoes with salted water and simmer them, covered, for 15 minutes, or until they are tender. While the potatoes are simmering, in a steamer set over boiling water steam the cabbage for 5 minutes, or until it is tender. Drain the potatoes in a colander, force them through a ricer or the medium disk of a food mill into a bowl, and stir in the milk, the butter, the cabbage, and salt and pepper to taste.

4 pounds medium potatoes (about 8), peeled and quartered
2 cups whole milk
1 cup chopped green onions
1-1/2 teaspoons salt
1/2 teaspoon pepper
1/4 cup butter, melted
Minced fresh parsley
Crumbled cooked bacon

Steps:

  • Place cabbage and 2 cups water in a large saucepan; bring to a boil. Reduce heat; simmer, covered, until cabbage is tender, about 10 minutes. Drain, reserving cooking liquid; keep cabbage warm in separate dish., In same pan, combine potatoes and reserved cooking liquid. Add additional water to cover potatoes; bring to a boil. Reduce heat; cook, uncovered, until potatoes are tender, 15-20 minutes. Meanwhile, place milk, green onions, salt and pepper in a small saucepan; bring just to a boil and remove from heat., Drain potatoes; place in a large bowl and mash. Add milk mixture; beat just until blended. Stir in cabbage. To serve, drizzle with butter; top with parsley and bacon.

  • While the potatoes are cooking, prepare the cabbage. Remove any damaged outer leaves, then cut it in half. Cut the cabbage into quarters, then remove the core. Cut each of the two quarters used in half once again, then cut crosswise into thin strips. Wash the cabbage well to remove any dirt or debris. Also mince the garlic and slice the green onions.
  • After removing the potatoes from the pot, add 4 Tbsp butter, the minced garlic, and the sliced green onions (I reserved a few to sprinkle over top at the end). Sauté the garlic and onions over medium heat for 1-2 minutes, or just until the garlic begins to soften.
  • Add the shredded cabbage and chicken broth to the pot. Place a lid on top and let the broth come up to a boil. Let the cabbage cook in the simmering broth, stirring every few minutes, until it has wilted and become tender. The volume of the cabbage will shrink quite a bit as it cooks. Cook until the thicker white pieces begin to become transparent (about 10-12 minutes).
