2 medium onions, quartered and sliced
3/4 cup julienned green pepper
3/4 cup julienned sweet red pepper
1 loaf (1 pound) French bread, cut into 1/2-inch cubes
1-1/2 cups cubed fully cooked ham (3/4 pound)
1 cup shredded Monterey Jack cheese
6 large eggs
2 cups 2% milk
1/2 teaspoon pepper
1/4 teaspoon salt

Steps:

  • In a large skillet, heat oil over medium-high heat; saute onions and peppers until tender. In a greased 13x9-in. baking dish, layer half of each of the following: bread cubes, onion mixture, ham and cheese. Repeat layers., Whisk together eggs, milk, pepper and salt; pour over layers. Refrigerate, covered, overnight., Preheat oven to 350°. Remove strata from refrigerator while oven heats. Bake, uncovered, until a knife inserted in the center comes out clean, 30-35 minutes.

Make this ham-and-cremini strata even more flavorful with a little Parmesan and a lot of Swiss cheese.

Number Of Ingredients 10

Unsalted butter, for the baking dish
2 tablespoons olive oil
12 ounces cremini mushrooms, thinly sliced
Kosher salt and freshly ground black pepper
3 cups half-and-half
1/4 cup grated Parmesan
10 large eggs
One 12-ounce loaf rustic Italian bread, crusts removed, cut into 1-inch cubes, preferably stale (about 6 cups)
2 cups shredded Swiss cheese
6 ounces diced ham

Steps:

  • Butter a 9-by-13-inch baking dish.
  • Heat the oil in a large nonstick skillet over medium-high heat until hot. Add the mushrooms and cook, stirring occasionally, until golden brown, 6 to 8 minutes. Season with salt and pepper. Set aside.
  • Whisk the half-and-half, Parmesan and eggs, 1 1/2 teaspoons salt and a few grinds of pepper together in a large bowl.
  • Layer half of the bread cubes in the prepared baking dish. Sprinkle with 1 1/2 cups of the Swiss cheese, followed by the cooked mushrooms and the ham. Cover with the remaining bread cubes and pour the half-and-half mixture evenly over top. Cover with plastic wrap and refrigerate overnight. (This can also be assembled the day of; just let soak at room temperature 30 minutes to 1 hour before baking.)
  • On the day of baking, preheat the oven to 325 degrees F.
  • Let the strata sit at room temperature while the oven preheats. Remove the plastic and sprinkle with the remaining 1/2 cup Swiss cheese. Bake until slightly puffed and just no longer jiggly in the center, 40 to 50 minutes. Let stand 5 minutes before serving.

  • Place half the bread cubes in a greased 9x13 baking dish. Sprinkle with half of the following: sauteed onions and peppers, ham, and cheese. Repeat layers.
  • In a bowl, whisk together eggs, milk, salt, and pepper. Pour over the bread mixture. Cover and refrigerat overnight.
  • Remove the dish from the refrigerator 30 minutes before baking. Preheat oven to 350°. Bake, uncovered, until a knife inserted in the center comes out clean, 30-35 minutes. Let sit for 10 minutes before cutting into squares and serving.

Cooking spray for greasing pan
8 medium green onions with tops
12 slices bread
2 cups cut-up cooked smoked ham (about 10 oz)
2 cups shredded Cheddar cheese (8 oz)
6 large eggs
2 cups milk
1 teaspoon ground mustard
1/4 teaspoon red pepper sauce
Paprika, if desired

Steps:

  • Spray a 13x9-inch (3-quart) glass baking dish with the cooking spray. Peel and thinly slice the green onions; you will need about 1/2 cup. Trim crusts from the bread.
  • Arrange 6 bread slices in baking dish. Layer the ham, cheese and onions on bread in dish. Cut remaining bread slices diagonally in half; arrange on onions.
  • In a medium bowl, beat the eggs, milk, mustard and pepper sauce with a fork or wire whisk; pour evenly over bread. Cover with plastic wrap or foil and refrigerate up to 24 hours.
  • Heat the oven to 300°F. Uncover strata and sprinkle with paprika. Bake uncovered 1 hour to 1 hour 10 minutes or until center is set and bread is golden brown. Let stand 10 minutes before cutting into serving pieces.

1 small zucchini, cut into 1/4-inch slices
2 cups broccoli florets
½ cup shredded carrot
12 slices white bread, crusts trimmed
1 cup cubed fully cooked ham
1 (8 ounce) can mushroom stems and pieces, drained
1 cup shredded sharp Cheddar cheese
1 cup shredded Swiss cheese
12 large eggs eggs
2 ½ cups milk
¼ cup chopped onion
½ teaspoon ground mustard
¼ teaspoon salt
⅛ teaspoon pepper
1 ½ cups crushed cornflakes
¼ cup butter or margarine, melted

Steps:

  • In a small saucepan, cook the zucchini, broccoli and carrot in a small amount of water until tender; drain. Cut bread in half diagonally; place half of the pieces in a greased 13-in. x 9-in. x 2-in. baking dish. Top with half of the vegetables, ham, mushrooms and cheese. Repeat layers.
  • In a bowl, beat the eggs, milk, onion, mustard, salt and pepper; pour over the top. cover and refrigerate for 8 hours or overnight.
  • Remove from the refrigerator 30 minutes before baking. Toss cornflakes and butter; sprinkle over the casserole. Bake, uncovered, at 350 degrees F for 50 minutes or until a knife inserted near the center comes out clean. Let stand for 10 minutes before cutting.

Steps:

  • Butter 13 x 9 x 2-inch glass baking dish. Beat milk, eggs, mustard and salt in large bowl to blend. Mix in bread, ham, green pepper and onion. Transfer mixture to prepared dish. Cover and chill overnight.
  • Preheat oven to 375°F. Bake strata uncovered until just set in center, about 50 minutes. Sprinkle cheese over. Bake until cheese melts, about 5 minutes longer. Let stand 10 minutes and serve.

18 slices of thin sandwich bread
12 slices American cheese
6 green onions, thinly sliced
1/2 lb finely chopped cooked ham (2 C. loosely packed)
6 eggs, slightly beaten
2 1/2 cups milk
1 teaspoon salt
1 teaspoon dry mustard
1 teaspoon paprika
1/2 teaspoon Worcestershire sauce
1/4 teaspoon pepper
6 slices tomatoes
2 tablespoons minced parsley

Steps:

  • Place 6 slices of the bread in a 13"x9" inch baking pan or dish.
  • Top with 6 cheese slices, half of the onions, and half of the ham.
  • Top with 6 slices of bread, 6 slices of cheese and remaining onions and ham.
  • Top with 6 slices of bread.
  • Combine eggs, milk and seasonings.
  • Pour over the strata, cover with plastic wrap and refrigerate for 6 hours or overnight.
  • Bake at 300° for 1 1/2 hours.
  • Top each cheese stack with a tomato slice during the last 20 minutes in the oven.
