DADDY'S FRIED CORN AND ONIONS
Combining my two favorites, fried onions and fresh corn, my husband came up with this very simple, delicious side dish.

Steps:
- Cut corn kernels from cob. Melt butter in a medium skillet over medium heat. Saute corn kernels just until tender, then mix in onion. Continue to saute until onion is just beginning to turn crispy. Season with salt and pepper. Enjoy warm or cold.

CORNMEAL-FRIED ONION RINGS
Steps:
- Peel the onions, slice them 1/2 to 3/4-inch thick, and separate them into rings. Combine the buttermilk, 1 1/2 teaspoons salt, 1 teaspoon pepper in a medium bowl. Add the onion rings, toss well, and allow to marinate for at least 15 minutes. (The onion rings can sit in the buttermilk for a few hours.) In a separate bowl, combine the flour, cornmeal, 1 teaspoon salt, and 1/2 teaspoon pepper. Set aside.
- When you're ready to fry the onion rings, preheat the oven to 200 degrees F. Line a baking sheet with paper towels.
- Heat the oil to 350 degrees F in a large pot or Dutch oven. (A candy thermometer attached to the side of the pot will help you maintain the proper temperature.) Working in batches, lift some onions out of the buttermilk and dredge them in the flour mixture. Drop into the hot oil and fry for 2 minutes, until golden brown, turning them once with tongs. Don't crowd them! Place the finished onion rings on the baking sheet, sprinkle liberally with salt, and keep them warm in the oven while you fry the next batch. Continue frying the onion rings and placing them in the warm oven until all the onions are fried. They will remain crisp in the oven for up to 30 minutes. Serve hot.
CREAMED CORN GRATIN WITH FRIED ONION RINGS AND BACON

- Preheat oven to 350°F. Spread breadcrumbs on rimmed baking sheet. Bake until lightly toasted, about 10 minutes.
- Sauté bacon in large skillet over medium heat until crisp. Using slotted spoon, transfer bacon to paper towels. Transfer 2 tablespoons bacon drippings to heavy large pot; reserve for creamed corn. Discard remaining drippings.
- Place flour in medium bowl. Sprinkle with salt and pepper. Separate red onion slices into rings and toss in flour to coat lightly. Heat 1/2 cup oil in same large skillet over medium-high heat. Working in batches, add onion rings to skillet and cook until golden brown, adding more oil as needed, about 2 minutes per side. Transfer onion rings to paper towels. Mix breadcrumbs, bacon, onion rings, and half of green onions in clean medium bowl. Sprinkle topping with salt and pepper.
- Butter 13x9x2-inch glass baking dish. Add butter to pot with reserved bacon drippings; melt over medium-high heat. Add chopped onion; sauté until light golden and beginning to soften, about 6 minutes. Add frozen corn; sauté 5 minutes. Add milk and cream; bring to boil. Gradually stir in grits and cayenne pepper. Reduce heat and simmer until mixture thickens slightly, about 3 minutes. Remove from heat. Stir in cheese and remaining green onions. Season with salt and pepper. Transfer creamed corn to prepared dish. (Topping and corn can be made 1 day ahead. Cover separately and chill.)
- Preheat oven to 350°F. Bake gratin uncovered 25 minutes. Sprinkle topping over; bake until topping is slightly crisp and creamed corn thickens and is heated through, about 20 minutes longer.
CORN & ONION SOUFFLE

- Separate eggs; let stand at room temperature 30 minutes. Grease a 2-1/2-qt. souffle dish; dust lightly with 2 tablespoons cornmeal., Preheat oven to 350°. Place corn, milk and sugar in a blender; cover and process until smooth. Add cream and melted butter; cover and process 15-30 seconds longer., In a large saucepan, heat oil over medium heat. Add onion; cook and stir 4-6 minutes or until tender. Stir in corn mixture, cream cheese, 1 teaspoon salt, pepper and remaining cornmeal until heated through. Remove to a large bowl., Whisk a small amount of hot mixture into egg yolks; return all to bowl, whisking constantly., In a large bowl, beat egg whites with baking soda and remaining salt on high speed until stiff but not dry. With a rubber spatula, gently stir a fourth of the egg whites into corn mixture. Fold in remaining egg whites. Transfer to prepared dish., Bake 45-50 minutes or until the top is deep golden brown and puffed and center appears set. Serve immediately.

These are my favorite rolls in the whole world. They have the corny taste of a cornmeal muffin, but are a yeast roll that you can serve with a fancy dinner.

- Place ingredients in bread machine pan in the order suggested by the manufacturer. Select dough cycle. Start. Add water if needed while the dough is mixing.
- Once cycle is complete, shape dough into 8 to 10 balls. Arrange in a greased 9 inch pie pan. Allow to rise in a warm spot until doubled in size.
- Bake in a preheated 400 degree F (205 degree C) oven for about 45 minutes, or until the rolls begin to brown.

- Mix 1 can reduced cream, 1 pkt onion soup mix, and spread about 1 Tbsp over each slice of bread.
- Roll up and secure with a toothpick. Place on an oven tray,toothpick side down. Brush each roll lightly with melted butter.
- Bake in pre-heated oven 200 C for 15-20 minutes or until golden brown.
- Remove toothpicks and cut each roll in half before serving.

SWEET ONION AND CORN SOUP

- 1. In a large pot, bring 12 cups water to a boil. Add 9 ears shucked corn, cover and cook over moderately high heat for five minutes. Transfer the corn to a bowl to cool. Cut off the kernels. Return the cobs to the pot, cover and simmer for 30 minute. Strain and reserve the corn broth.
- 2. In another large pot, melt 2 TBS butter. Add 2 thinly sliced sweet onions, cover and cook over moderate heat, stirring until softened, about 8 minutes. Add 2 TSP sugar and cook over moderate heat until the onions are caramelized, about 4 minutes.
- 3. Set aside 1 cup of the corn kernels. Add the remaining corn, 1/2 C white wine, and 1 peeled yukon gold potato to the pot. Simmer until the wine is almost evaporated, then add the corn broth, 1 thyme sprig, and 1/2 C heavy cream. Cover and simmer until the potato is tender, about 10 minutes. Discard the thyme.
- 4. Puree the soup in a blender in batches and season with salt and pepper; keep warm. Melt 1 TBS butter in a medium skillet. Add the reserved corn and cook over moderately high heat until browned. Season with salt. Serve the soup garnished with the sauteed corn and chives.

CREAMY CORN-AND-ONION DIP
In this light, summery twist on classic French onion dip, sweet corn is sautéed until tender and mixed with tangy Greek yogurt, which brings the richness of a creamy dip without all the fat.

- Heat oil in a large skillet over medium. Cook onions with a pinch of salt, stirring, until caramelized, about 20 minutes. Add corn and 2 tablespoons water. Cover and cook, stirring occasionally, until corn is tender, about 5 minutes. Add garlic and cook, stirring, 1 minute.
- Remove from heat and let cool. Reserve 2 tablespoons corn mixture for garnish; transfer the rest to a bowl. Add Worcestershire sauce and Greek yogurt to bowl with corn mixture and mix to combine; season with salt and pepper to taste. Garnish with reserved corn mixture and serve. Leftovers can be refrigerated in an airtight container up to 3 days.
CORN WITH ONION AND PEPPERS
Steps:
- Using a sharp knife, cut and scrape the kernels from the corncobs. There should be about two cups.
- Heat the oil and butter in a skillet and add the onion, garlic and chopped pepper. Add corn, salt and pepper. Cook, stirring, briefly and sprinkle with cumin.
- Cover and cook over low heat about three minutes. Remove from the heat and serve.
