Presented in a sand pail, this festive salad features a zesty dressing that's simple to stir together. An assortment of pasta shapes resembles seashells while red and yellow peppers add color and crunch. For an extra-special touch, you could cut the peppers with a small star-shaped cookie cutter.

3 cups uncooked medium shell, spiral and/or wagon wheel pasta
1/3 cup vinegar
1/4 cup olive oil
1 teaspoon garlic salt
1 teaspoon sugar
1 teaspoon Italian seasoning
1/4 teaspoon pepper
1 medium sweet red pepper
1 medium sweet yellow pepper
2 tablespoons chopped green onions

Steps:

  • Cook the pasta according to package directions until tender; drain and rinse in cold water. Place in a large bowl; set aside. In a jar with tight-fitting lid, combine vinegar, oil and seasonings; shake well. Add peppers, onions and dressing to pasta; toss to coat. Cover and refrigerate until serving.

½ cup finely chopped cauliflower
½ cup finely chopped broccoli
½ cup diced red bell pepper
1 cup cottage cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and rinse with cold water.
  • In a medium bowl combine cooled pasta, cauliflower, broccoli, red bell pepper, cottage cheese, salt and pepper.

2 cups uncooked medium pasta shells
2 medium tomatoes, seeded and chopped
1/2 medium green pepper, diced
1/4 cup chopped cucumber
1 green onion, sliced
1/4 cup sugar
1/4 cup vegetable oil
2 tablespoons plus 1-1/2 teaspoons ketchup
2 tablespoons cider vinegar
1/4 teaspoon salt
1/4 teaspoon paprika
1/8 teaspoon pepper

Steps:

  • Cook pasta according to package directions; drain and rinse in cold water. In a large serving bowl, combine the pasta, tomatoes, green pepper, cucumber and onion. , In a small bowl, whisk the sugar, oil, ketchup, vinegar, salt, paprika and pepper until smooth. Pour over salad and toss to coat. Cover and refrigerate until chilled.

1/2 small red bell pepper, seeded and chopped into fine dice
1/3 cup tiny frozen green peas, a generous handful
1/4 to 1/3 cup mayonnaise
3 or 4 sprigs fresh tarragon, chopped to about 2 tablespoons
Coarse salt and pepper
Chopped fresh parsley, for garnish
Romaine or leaf lettuce, for lining plate under salad

Steps:

  • Pile salad ingredients in a mixing bowl as you prepare them. Combine salad ingredients, taste, and adjust seasonings. Serve salad on bed of lettuce leaves.

¼ teaspoon cayenne pepper
¼ cup apple cider vinegar
¼ cup lemon juice
⅓ cup extra virgin olive oil
kosher salt, to taste
black pepper, to taste
2 cups lacinato kale, thinly sliced
2 large carrots, peeled and grated
2 cups broccoli floret
2 cups red cabbage, thinly sliced
1 red bell pepper, seeded and thinly sliced
1 avocado, peeled and cubed
1 cup walnut, chopped
½ cup fresh parlsey, chopped

Steps:

  • In a liquid measuring cup, combine the mustard, maple syrup, ginger, garlic, sesame seeds, cayenne, apple cider vinegar, lemon juice, and olive oil. Whisk until fully incorporated. Season to taste with salt and pepper.
  • Add the kale, carrots, red cabbage, broccoli, red cabbage, bell pepper, avocado, walnuts, and parsley to a large serving bowl.
  • Pour desired amount of dressing over the salad and toss until everything is well coated.
  • Garnish with more toasted sesame seeds

1 cup small uncooked shell pasta
3/4 cup frozen sweet peas (or fresh)
1/2 cup red bell pepper, finely chopped
1/3 cup red onion, diced fine (or other sweet onion)
1/3 cup shredded cheddar cheese (or cubed)
1/4 cup parmesan cheese, grated
1/4 cup chopped cucumber
1/4 cup finely diced celery
1/4 cup black olive tapenade
1 -2 hard-cooked egg, peeled and chopped
1 tablespoon diced pimento (opional)
fresh flat leaf parsley, garnish (optional)
3/4 cup mayonnaise
2 tablespoons prepared ranch salad dressing
1 green onion, sliced thin (scallion)
1/4 teaspoon celery salt
1/4 teaspoon garlic powder
1/8 cup fresh flat leaf parsley, chopped (or1/4 teaspoon dried parsley flakes)
1/4 teaspoon pepper
1/4 teaspoon prepared mustard
1 pinch ground cayenne pepper
1 -2 tablespoon pickle relish (sweet or dill-your preference-I used a little of both)
1/2 teaspoon sugar (optional, only if you like your salad a little sweet!)
1 tablespoon chopped fresh dill leaves (optional-may use to garnish)

Steps:

  • Cook pasta according to package directions; drain and rinse in cold water.
  • In a large bowl, combine the pasta, peas, bell pepper, onion, cheeses, cucumber, celery, olive tapanade, chopped egg and pimientos.
  • In a small bowl, combine the dressing ingredients. Pour over salad and toss to coat. Adjust seasoning to taste.
  • Garnish with chopped parsley and chopped dill, if desired.
  • Serve immediately or chill, covered in the refrigerator until serving. Enjoy!
