APPLE AND ONION CONFIT CROSTINI



Apple and Onion Confit Crostini image

2 tablespoons unsalted butter, at room temperature
2 tablespoons extra-virgin olive oil
1 large onion, thinly sliced
1 green apple, such as Granny Smith, unpeeled, cored, and thinly sliced
1 red apple, such as Washington, unpeeled, cored, and thinly sliced
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/4 cup apple cider vinegar
2 tablespoons maple syrup
1 tablespoon chopped fresh thyme leaves
1 French baguette, thinly sliced into 26 (1/4 to 1/2-inch thick) slices
Extra-virgin olive oil, for drizzling
3 ounces creamy gorgonzola cheese sliced into 26 (1/4-inch thick) 1-inch squares

Steps:

  • For the confit: In a high-sided skillet, heat the butter and oil over medium heat. Add the onions, apple slices, salt, and pepper. Cook until the onions begin to soften, about 5 minutes. Add the vinegar, maple syrup, and thyme. Reduce the heat to low and cook, stirring occasionally, until onions and apples are very soft, about 50 minutes.
  • Place an oven rack in the center of the oven. Preheat the oven to 350 degrees F. Arrange the bread slices on a baking sheet in a single layer. Drizzle with oil and bake until lightly golden, 12 to 14 minutes. Remove the baking sheet from the oven and place the gorgonzola squares on top of the warm toasts. Spoon the confit on top of the cheese. Sprinkle with chopped thyme and serve.
  • Cook's Note: Freeze the gorgonzola for 20 minutes for easier slicing.

Onion confit is both one of the easiest and most sophisticated condiments you will ever make.

2 medium yellow onions, thinly sliced (about 3 cups)
1 tbsp butter
1 tbsp olive oil
½ tsp sea salt
1 tbsp granulated sugar
3 tbsp apple cider vinegar
½ tsp caraway seeds (optional)

Steps:

  • Add butter and olive oil to a large skillet and heat over a low flame. Add onions and salt and cook, stirring occasionally, until softened and translucent, 15-20 minutes. If onions begin to dry out, add a tablespoon of water.
  • Add sugar, stir to dissolve, and add vinegar and caraway seeds (if using). Continue cooking over low heat, stirring occasionally, until onions are pasty and caramelized, about 15 min.
  • Onion confit can be stored in the fridge in an airtight container for up to one week.

1/2 cup extra-virgin olive oil
2 1/4 pounds mixed fresh shallots and cipollini onions (preferably a combination of red and white), peeled and halved if large
3/4 pound cherry tomatoes
4 large sprigs oregano
2 small sprigs rosemary
Coarse salt
Red-pepper flakes
2 tablespoons red-wine vinegar

Steps:

  • Preheat oven to 275 degrees. Heat oil in a small Dutch oven or other heavy 3-quart pot over medium-high heat. Add shallots and onions, tossing to coat, then bring to a simmer. Add tomatoes, oregano, rosemary, 1 tablespoon salt, and a pinch of red-pepper flakes. Cover, and transfer to oven.
  • Bake until onions are very tender, about 2 1/4 hours. Uncover, and bake until onions are slightly golden around edges, about 15 minutes more. Stir in vinegar, and let shallots and onions cool slightly in oil. Before serving, discard herb sprigs. Serve warm or at room temperature.

The French word "confit" usually refers to food that is slowly cooked in some kind of fat. Originally, confit was a method used for preserving meat, typically duck, goose or pork. When stored and cooled in earthenware crocks, a layer of fat on top kept the food from spoiling by sealing out air. Onion confit, on the other hand, is a savory preparation of sliced onions, cooked to a soft, almost melting consistency, often seasoned with salt, herbs, sugar and vinegar for a somewhat sweet-and-sour effect. Sometimes called onion marmalade, a spoonful or two makes a perfect accompaniment to roasted meats. It may also be used to make onion tarts or pizzas, or as a "bed" for baked fish. The mixture will last for a week or so, refrigerated. To use, reheat gently over low heat.

6 tablespoons butter, duck fat or lard
2 teaspoons sugar
Salt and pepper
2 bay leaves
A few fresh thyme sprigs
Pinch of cayenne
2 tablespoons white wine vinegar or red wine vinegar
1/2 cup dry white or red wine

Steps:

  • Cut onions in half from top to bottom (not crosswise). With a paring knife, peel each onion half. Lay each onion half flat side down. Holding the knife at a slight angle, cut away and discard the hard root end. Using a sharp knife, cut into 1/4-inch half-moons.
  • Put a large heavy-bottomed pot, preferably enameled cast iron, over medium-high heat. Melt butter, then add all the sliced onions and stir to coat. Sprinkle with sugar and season generously with salt and pepper. Continue stirring until onions begin to wilt and soften, without browning, about 5 to 8 minutes.
  • Add bay leaves, thyme, cayenne, vinegar and wine. Reduce heat to medium and continue to cook, stirring occasionally, until onion mixture is quite soft and most of the liquid has evaporated, about 30 minutes. Taste and adjust seasoning. Remove and discard bay leaves and thyme. Serve warm.

100g butter
100g white sugar
20ml dry white wine
10ml red wine vinegar
2 teaspoons thyme
Salt and pepper

Steps:

  • Finely slice the onions, and in a medium saucepan, sweat them on a low heat in butter for approximately 20 minutes, stirring occasionally.
  • Season with salt and pepper, and then add the sugar and continue cooking for 10 minutes until caramelized.
  • Add the white wine and vinegar, sprinkle with thyme and stir.
  • Simmer for 1 hour over low heat, stirring every 10 minutes.

  • Preheat oven to 350 degrees.
  • Melt the butter in a large skillet over medium heat. Add the onions and demerara sugar and sauté, stirring frequently, until the onions become tender and start to turn golden.

3 large onions, sliced in rings
2 teaspoons pomegranate concentrate (optional)
1/2 cup labneh (strained yogurt)
1/4 teaspoon ground coriander
Salt and freshly ground pepper to taste
1 bunch fresh cilantro

Steps:

  • Heat oil in nonstick frying pan, and add onions. Reduce heat to low, and cook very slowly, adding a little water if necessary, until onions become golden brown. This may take as long as 30 minutes. The longer you cook, the more flavor in your confit.
  • Remove onions to a bowl, and add pomegranate concentrate if desired, mixing well.
  • Place labneh in another bowl. Add coriander and salt and pepper to taste. Place dollop of labneh on each latke, and top it with the confit of onions topped with a fresh sprig of cilantro.

  • Combine the olive oil and butter in a large heavy-bottomed saucepan over medium heat.
  • When the butter foams, add half of the sliced onions and 2 of the bay leaves.
  • Sprinkle with half of the sugar and half of the salt.
  • Add remaining onions, bay leaves, sugar and salt.
  • Cover, reduce heat to low, and cook for 20 minutes.
  • Uncover, stir, and increase heat to medium.

1/4 cup olive oil
1 clove garlic, halved

3 pounds yellow onions, thinly sliced
1 tablespoon sugar
1 teaspoon salt

1/2 cup red wine
1 tablespoon chopped thyme

Steps:

  • Preheat oven to 325° F. On a large baking sheet arrange bread slices in one layer and lightly brush both sides of each slice with about 2 tablespoons olive oil. Toast slices in middle of oven 15 minutes and turn over. Toast an additional 15 minutes, or until golden. Transfer toasts to a rack and rub one side of each toast with cut side of halved garlic. Let cool. Toasts may be made 2 days ahead and kept in a sealable plastic bag at room temperature.
  • Heat the butter and remaining 2 tablespoons olive oil in a large skillet over medium heat. Add onions and sugar. Season with salt and pepper. Cook, stirring occasionally, until onions are soft, 15 to 20 minutes.
  • Increase heat to medium-high. Add red wine and cook, stirring occasionally, until wine is reduced and onions are deep golden brown, 15 to 20 minutes more. Add thyme; taste and adjust for seasoning. Transfer onions to a bowl and serve immediately with toasts.

4 Tbs balsamic vinegar
200 ml Porto or red wine (oak barrel)

Continue cooking over Medium-low heat, stirring occasionally until there is no more liquid (35A about 45 min). Remove the cloves and either put in the fridge to enjoy it quickly, or can them. Canned confit can be preserved for several months.

1kg onion
1 large orange
2 tbsp olive oil
50g butter
1 tbsp coriander seed , coarsely crushed
1 tsp black peppercorn , coarsely crushed
2 tsp sea salt
140g light muscovado sugar
150ml red wine vinegar
2 tbsp balsamic vinegar

Steps:

  • Thinly slice the onions (use the slicing blade of the food processor if you have one). Thinly slice the oranges, then cut each slice into quarters.
  • Heat the oil and butter in a pan. Add the coriander seeds and peppercorns and fry until they start to smell fragrant. Add the onions and gently fry, stirring, until they start to colour, about 10 mins. Add the oranges and salt, cover then gently cook for 30 mins.
  • Add the sugar and vinegars and gently cook, uncovered, for a further 30 mins, stirring from time to time, until the confit is thick. Meanwhile, sterilise your jars then wash them in hot soapy water and rinse well. Boil the lids, which must be vinegar-proof, for 5 mins and leave to dry. Place the jars upright in a roasting tin and put in the oven at 160C/140C fan/gas 3 for 15 mins.
  • Remove the jars and set on a board. Fill with the onion confit and screw on the lids. Label and store in a cool, dry place for 2 weeks to allow the flavours to develop. Will keep for up to six months.
