This is a crispy, flavorful way to serve a baguette that is so pretty it is perfect for entertaining!

1 French baguette, cut into diagonal 1/2 inch slices
¼ cup olive oil
¼ cup butter or margarine
2 cloves garlic, minced
salt and pepper to taste
¼ cup grated Parmesan cheese

Steps:

  • Set the oven to broil at 425 degrees F (220 degrees C).
  • In a small saucepan, combine the olive oil, butter and garlic. Set over medium heat, and cook until butter has melted and the mixture starts to bubble. Season with salt and pepper. Remove from the heat.
  • Dip each slice of bread into the garlic mixture, turning to coat each side. Place Parmesan cheese on a plate. Press one side of each piece of bread into the cheese, and place cheese side up on a baking sheet.
  • Broil on the middle rack of the preheated oven for about 8 minutes, or until golden brown.

3/4 cup extra-virgin olive oil
Kosher salt and freshly ground pepper

Steps:

  • Preheat oven to 350 degrees. Arrange baguette slices on two large rimmed baking sheets; brush both sides with oil, and season with salt and pepper.
  • Bake, rotating sheets halfway through, until golden, 15 to 20 minutes (if undersides are not browning, turn crostini over once during baking). Let cool on baking sheets. Top crostini with desired toppings, and serve.

I just love this recipe, I make it whenever we have guests and need nibbles. I use it for dips and with soup but they taste so great I eat them on their own as well. I found this recipe on Taste.com website but it came from Super Food Ideas Magazine December 2005 (my favourite cooking magazine). In fact whenever we have left over Turkish bread slices I freeze them and when I have enough I make crostini with them.

1 loaf Turkish bread, cut into 1cm-thick slices (just less than 1/4-inch)
1/2 cup olive oil, I use extra virgin
2 teaspoons ground coriander
2 teaspoons ground cumin
1 teaspoon ground cardamom

Steps:

  • Preheat oven to 200°C (400degF) then place bread, in a single layer, on 2 large baking trays.
  • Combine oil, coriander, cumin, cardamom and salt and pepper in a bowl and brush both cut sides of bread with oil mixture.
  • Bake bread for 10 minutes then turn and bake for another 10 minutes or until golden and crisp- set aside to cool then serve.

2 large baguettes
1 teaspoon coarse salt

  • 1. Preheat oven to 350 degrees.
  • 2. Drizzle 2 tablespoons of the olive oil onto a large baking sheet.

It was then that I decided I'd simply make my own...less expensive with better flavour. Crostini are multi-use flavoured and baked thin bread slices. I've used them to float cheese in onion soup, broken into giant croutons for salads, and my favourite...as a base for flavourful spreads and appetizers. Don't discount their use plain, as a crunchy snack either. Recipe #415921 is an easy and tasty spread that goes well with these. I recommend using day old baguettes to make slicing easier.

1/4 cup olive oil, I use a mix of regular and light olive oils
1 teaspoon garlic, minced
1 baguette, sliced 1/4-inch - 1/2-inch thick
kosher salt, sprinkling (optional)
fresh ground black pepper (optional)

Steps:

  • Mix olive oil and minced garlic in a heat-proof measuring cup. Microwave at half power for 30 seconds. Set aside.
  • Note: depending on the size of your baguette, you may have to double the garlic oil ingredients.
  • Preheat oven to 375*. Line a large baking sheet with parchment paper.
  • Slice the baguette, on the diagonal, into 1/4" to 1/2" thick slices.
  • Using a pastry brush lightly wipe both sides of the bread slices with garlic oil. Arrange on the baking sheet.
  • Sprinkle (one side only), lightly with kosher salt and black pepper (if using).
  • Bake for 10 minutes. Turn slices over and continue to bake for another 5 - 10 minutes or until golden in colour and crispy. The baking time will depend on the thickness of the slices and the amount of garlic oil used.
  • Remove from the baking sheet and let cool in a single layer on a cooling rack.
  • You can use these immediately, or allow to cool completely for storage in an airtight container.
