A very tasty chowder-type recipe. Delicious any time.

¼ cup butter
¼ cup all-purpose flour
2 cups whole milk
2 cups half-and-half
1 ¾ cups whole kernel corn
1 cup chopped green onions
1 pound fresh crab meat
½ teaspoon ground white pepper
½ teaspoon seasoning salt
1 tablespoon soy sauce
¼ cup chopped parsley

Steps:

  • In a heavy-bottomed pot, melt butter, add flour, and stir gently until blended; do not burn or let it darken. Add milk gradually, stirring all the while, then add half and half, stirring gently while blending. Add corn and green onions, and cook for a few minutes until tender.
  • Add crabmeat, pepper, salt, and soy sauce and simmer until very hot and small bubbles form around the edge; do not let boil. Adjust seasonings to taste. Garnish with sprinkles of chopped fresh parsley when serving and serve hot.
  • Variations: You may use 4 cobs of fresh corn instead of frozen or canned. Cut the kernels off the cob, scrape cob for juices, and then add to soup. Cook until corn is tender. Canned crabmeat or imitation crab may be used instead of fresh crabmeat. Use one 7 1/2-ounce can crabmeat (drained) and 8 ounces imitation crab (cut into small pieces). Combine the two and cook as noted above.

1/4 cup butter
1 cup white onions, diced
1 cup fresh or frozen corn kernels
1/2 pound fresh cleaned and shelled crawfish, or use frozen
3 cups heavy cream
2 cups seafood broth
1/2 pound jumbo lump crabmeat
1 cup diced, cooked potatoes
6 green onions, chopped
1/2 cup cream cheese
1/2 teaspoon cayenne pepper
Salt and freshly ground black pepper
2 egg yolks
1 lime, juiced
2 tablespoons freshly chopped parsley leaves
2 teaspoons grated pecorino cheese

Steps:

  • Melt the butter in a large saucepan, over medium heat. Add the onions, corn and crawfish and saute for about 3 to 4 minutes. Add the cream, broth and crabmeat and bring to a high simmer, but do not boil. Cook for about 10 minutes to meld flavors, then reduce the heat to low. Add the potatoes, green onions, cream cheese and cayenne pepper. Adjust the seasoning with salt and pepper, to taste.
  • To finish, stir in the 2 egg yolks, lime juice, chopped parsley and grated cheese. Ladle into serving bowls and serve. Great dish.

2 tablespoons unsalted butter
1 large white onion, chopped
1 clove garlic, chopped
1 1/4 teaspoons salt, plus more for seasoning
10 peppercorns
4 ears yellow corn, husks removed
2 ears white corn, husks removed
1/2 cup milk, plus more for thinning
1/2 pound jumbo lump crabmeat
1 lime, juiced
1/4 teaspoon freshly ground black pepper, plus more for seasoning
3 radishes
1 small bunch chives
1 nutmeg, for garnish (optional)
Pinch of cayenne pepper (optional)

Steps:

  • Melt butter in a large saucepan over medium-low heat. Stir in onion and garlic, and season with 1 teaspoon salt and peppercorns. Let cook until onions are soft and translucent, about 10 minutes.
  • Meanwhile, cut kernels off corncobs with a sharp knife. Set corn aside, reserving cobs.
  • Add 8 cups water to the onion mixture along with the reserved corncobs. Bring mixture to a boil. Reduce heat, and let simmer until liquid is reduced by almost half and is milky and very flavorful, about 1 hour. Remove corncobs, scraping as much liquid as possible off cobs back into the pan. Discard cobs. Cool corn stock to room temperature.
  • Meanwhile, bring a large pot of water to a boil. Add reserved corn kernels, and blanch 1 minute. Remove from heat, strain, and run under cold water to stop the cooking.
  • Set aside 1/3 cup corn kernels for garnish. Combine remaining kernels and cooled corn stock in the bowl of a food processor, working in batches if necessary. Process until smooth. Transfer mixture to a fine sieve set over a bowl. Press down hard on solids to extract liquid; discard solids. Stir in milk to thin soup to desired consistency; transfer liquid to refrigerator. Chill.
  • Meanwhile, pick over crabmeat, removing any shells or cartilage. Season with lime juice, 1/4 teaspoon salt, and 1/4 teaspoon pepper. Grate radishes using small holes of box grater, and set aside. Snip chives into 1/4-inch pieces with sharp kitchen scissors; set aside.
  • Adjust seasoning of chilled soup with salt and pepper to taste. Ladle into soup bowls. Place 1/4 cup crabmeat mixture in each. Divide remaining 1/3 cup corn among bowls, and garnish with grated radish and snipped chives. If desired, grate fresh nutmeg and/or sprinkle cayenne over each bowl, and serve.

6 radishes, trimmed, halved, and thinly sliced
1 jalapeno, finely chopped (ribs and seeds removed for less heat, if desired)
2 tablespoons fresh lime juice
1 tablespoon olive oil

Steps:

  • In a large pot of boiling salted water, cook corn until fragrant and tender, 8 to 12 minutes. Remove ears, and hold under cold water until completely cool.
  • Working in a large bowl, slice kernels from cob (to yield about 2 cups). Toss with radishes, jalapeno, lime juice, and olive oil. Season generously with coarse salt. Serve chilled or at room temperature.

Minced chives and crushed red pepper flakes, optional

Steps:

  • In a large saucepan, saute onion in butter until tender. Add the broth, corn and potatoes; bring to a boil. Reduce heat; cover and simmer for 15 minutes. Remove from the heat; cool slightly. , In a blender, puree half of the corn mixture. Return to pan. Stir in the crab, milk and pepper; cook over low heat until heated through (do not boil). 1/2 cup real butter
2 bunches green onions
2 (8 ounce) cans cream celery soup
1 pint half and half milk
1 pint milk
2 (8 ounce) cans undrained white corn
1 (8 ounce) can creamed corn
2 tablespoons Italian salad dressing
1 tablespoon crab boil, concentrate
3 (8 ounce) cans undrained crabmeat

Steps:

  • Sauté the chopped, white portion of green onions in the butter.
  • Add cream of celery soup, half-and-half and milk. Bring to boil.
  • Add white corn and cream corn. Bring to oil.
  • Add Italian salad dressing and Zatarain's liquid crab boil concentrate.
  • Add crabmeat.
  • Cook in covered pot on medium-low heat for about an hour, stirring about every 10 minutes.
  • Add the chopped green onion tops either just before serving, or just before cooking for the hour.
  • *feel free to doctor w scallops or shrimp, but put shrimp in later than crab or scallops or they'll taste gummy.

It didn't vary too much from place to place but this home version was a winner to my taste buds. This is a new taste for me and unfamiliar to my family who enjoyed this recipe immensely; I hope you will try it out too.

4 cups low-salt chicken broth
1 cup (or more) water
1 small bunch fresh cilantro, stems cut off and reserved, leaves chopped
1/2 teaspoon salt
2 tablespoons (1/4 stick) unsalted butter or olive oil
1 1/2 cups chopped onion
2 garlic cloves, minced
1 1/2 teaspoons minced seeded jalapeño chile
1/4 teaspoon ancho chile powder or regular chili powder
1 teaspoon finely grated lime peel
12 ounces lump crabmeat, picked over
1 teaspoon (or more) fresh lime juice
Crispy Tortilla Strips

Steps:

  • Break corn cobs in half and place in large pot. Add chicken broth, 1 cup water, cilantro stems, and 1/2 teaspoon salt to pot. Bring to boil. Reduce heat and simmer 25 minutes. Strain liquid into 4-cup measuring cup; discard solids in strainer. Add enough additional water to corn broth to measure 4 cups.
  • Melt butter in heavy large saucepan over medium-low heat. Add onion; saut until tender and translucent, about 8 minutes. Add garlic, jalapeño, ancho chile powder, and lime peel; stir 1 minute. Remove from heat.
  • Reserve 1/3 cup crabmeat for garnish. Combine 2 cups corn kernels and 1 cup corn broth in blender; puree until almost smooth. Add to saucepan with onion mixture. Add remaining 3 cups corn broth and 1 1/2 cups corn kernels; bring to simmer. Add remaining crabmeat, 1 teaspoon lime juice, and 1/3 cup chopped cilantro leaves. Season to taste with salt, pepper, and more lime juice, if desired.
  • Ladle soup into bowls. Top each serving with some of reserved crabmeat. Sprinkle each with remaining chopped cilantro leaves and Crispy Tortilla Strips and serve.

1 russet potato, peeled and cubed
5 slices bacon, diced
½ onion, chopped
1 (6 ounce) can crab meat, drained
½ teaspoon parsley flakes
2 tablespoons butter
⅓ cup all-purpose flour
¼ cup dry white wine
1 cube chicken bouillon
1 ½ cups milk
1 (15 ounce) can creamed corn
salt and pepper to taste

Steps:

  • Wrap potato cubes in plastic wrap, and microwave for 30 seconds. Set aside.
  • In a saute pan, cook bacon over medium heat until heated through, and add chopped onions. Cook and stir until onions are clear. Stir in crab meat and parsley flakes. Set aside.
  • Meanwhile, melt butter in a large stock pot over low heat. Whisk in flour until mixture becomes creamy and takes on a eggshell color. Continue to cook for a few more minutes, stirring occasionally. Stir in wine. Dissolve chicken bouillon in milk; when the flour mixture is crumbly, slowly whisk in the milk. Mix well in order to eliminate all lumps.
  • When the mixture is creamy and hot, stir in bacon mixture, cubed potatoes, and creamed corn. Season with salt and pepper to taste, and simmer for 10 minutes.
  • For a creamy curry variation add 2 tablespoons curry powder after adding the wine to the flour mixture, and substitute cooked, cubed chicken for the bacon.

2 cups cold whole milk

1 (6-oz) frozen king crab leg, thawed

Steps:

  • Cook corn in a large pot of boiling salted water until just tender, 4 to 5 minutes. Drain and transfer to a bowl of ice and cold water to chill ears quickly. When cold, cut off kernels and scrape cobs over a bowl to extract juice, then purée in batches in a blender with milk, salt, and pepper. Force purée through a very fine sieve into a bowl (discard solids) and stir in chives.
  • Cut crab shell with kitchen shears and extract meat, then cut into 1/4-inch pieces.
  • Serve soup drizzled with chile oil and sprinkled with crabmeat.
