CORONATION-STYLE TURKEY & CHARRED AUBERGINE

500 g leftover free-range cooked turkey
2 tablespoons korma or tikka paste
150 g natural yoghurt, plus extra to serve
2 large aubergines
½ a bunch of fresh mint
1 clove of garlic
½ a a fresh red chilli
extra virgin olive oil
1 red onion
2 little gem lettuces
1 pomegranate
1 handful of shelled pistachios
6-8 wholemeal khobez flatbreads

Steps:

  • Place a griddle pan over a high heat and leave to get really hot. Meanwhile, pop the turkey, curry paste and yoghurt in a large mixing bowl, and toss to completely coat the meat.
  • Next make your charred aubergine. Turn your gas hob on to high, then prick both the aubergines with a fork all over. Sit them directly on the flame.
  • Cook for 5 to 10 minutes, turning every now and then. You want to get that nice charred flavour. (If you don't have a gas hob, pop them under a hot grill for 5 to 10 minutes, turning every now and then.)
  • Once charred all over, leave to cool for 5 minutes in a bowl covered with clingfilm.
  • Once the aubergine has cooled, peel off the skin and mash up the flesh, chopping through it with a knife to turn it into a chunky dip.
  • Pick the mint leaves, then finely chop. Peel and finely grate the garlic, then deseed and finely chop the chilli. Put it all into a small bowl, reserving half the chilli and chopped mint, along with 4 tablespoons of extra virgin olive oil.
  • Mix well, then stir half of this dressing into the mashed aubergine along with sea salt and black pepper, to taste. Set aside. Peel and cut the onion into wedges.
  • Once the griddle is hot, spoon in the marinated turkey, and add the onion wedges, and cook for 10 minutes, or until charred and crispy, turning regularly.
  • Meanwhile, chop the lettuce into wedges, and bash the seeds out of a pomegranate. Roughly chop a handful of pistachios, then set to one side.
  • Heat the flatbreads in a frying pan set over a high heat until warmed through, then serve with a good dollop of aubergine and the charred turkey and onion.
  • Top with a little extra yoghurt, the little gem wedges, pomegranate seeds, chopped pistachios and the remaining mint leaves and red chilli. Drizzle with the rest of the chilli dressing to finish.

1 (2 ounce) package turkey gravy mix
1 cup milk
1 tablespoon butter
1/2 cup frozen peas, thawed
1 cup cubed cooked turkey or 1 cup cooked chicken
1/4 teaspoon thyme

Steps:

  • Preheat oven to 375*. Press one biscuit onto bottom and up the sides of each cup of two 6 cup muffin pans (will fill 10 cups). Chill until ready to fill.
  • Blend gravy mix and milk; set aside. Melt butter in large skillet over medium heat. Stir in peas, turkey and thyme; heat through. Add gravy mixture. Cook, stirring constantly, until gravy comes to a boil. Reduce heat and simmer, stirring constantly, 1 minute, or until thickened.
  • Spoon turkey mixture into prepared biscuit cups. Bake 15 minutes.

150ml natural yogurt
2 tbsp mayonnaise
1 tbsp mango chutney
2 tsp mild curry powder
zest and juice 1/2 lemon
1 small diced mango
handful chopped coriander
3 Baby Gem lettuces
toasted flaked almonds

Steps:

  • Shred the turkey into small pieces. In a large bowl, combine the natural yogurt, mayonnaise, mango chutney, mild curry powder and the zest and juice of the lemon. Season well.
  • Add the turkey to the bowl along with the diced mango and chopped coriander, and mix well. Break the Baby Gem lettuces into leaves and serve the turkey on top, scattered with toasted flaked almonds.

2 tablespoons all-purpose flour
1 (12 fluid ounce) can evaporated milk
1 cup water
¼ teaspoon salt
¼ teaspoon freshly ground black pepper
¼ teaspoon onion powder
2 tablespoons butter
1 cup finely crushed herb-seasoned dry bread stuffing mix
1 cup cooked, diced turkey meat
1 cup shredded Cheddar cheese
2 cups leftover mashed potatoes

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
  • Melt 3 tablespoons butter in a saucepan over low heat. Blend in the flour. Slowly stir in evaporated milk and water, then season with salt, pepper, and onion powder. Stir sauce over low heat for 5 minutes.
  • In a separate saucepan over low heat, melt 2 tablespoons butter. Blend in the dry stuffing mix. Place the turkey in the prepared baking dish. Pour the sauce over turkey, then sprinkle with Cheddar cheese. Spread mashed potatoes over cheese. Top mashed potatoes with the stuffing mixture.
  • Bake 45 minutes in the preheated oven.

Great for your Super Bowl Party! Plus you can even make the wasabi mayo the night before (you can even purchase wasabi mayo in the condiment section these days) and make the wonton bowls in the morning. It's almost too easy! Use as many wonton wrappers as needed to use up the turkey filling.

1 (16 ounce) package wonton wrappers
1 lb ground turkey
2 stalks green onions, minced (more to garnish) (optional)
2 fresh garlic cloves, minced
fresh ginger (2-inch section, minced)
6 teaspoons low sodium soy sauce
pepper, to taste
mayonnaise
wasabi powder

Steps:

  • Make your wasabi mayo first. You can also make this the night before.
  • Be mindful, as it sits it gets stronger.
  • Preheat your oven to 350 degrees.
  • Spray a mini muffin tin with cooking spray.
  • Place one wonton wrapper into each hole. Making sure it is pressed down to the bottom.
  • Bake at 350 degrees for 10-12 mins or until golden.
  • In a large bowl, combine turkey, onion, garlic & ginger.
  • Season with pepper, to taste.
  • Add the soy sauce.
  • Mix together well (careful not to over mix or meat will be tough).
  • You want the mixture to be a nice light brown color.
  • Place a medium saute pan over medium heat.
  • When your pan is hot, add the turkey mixture & cook until done (it should take just a few mins).
  • To assemble:
  • Place a small spoonful of the turkey mixture into each cooked wonton wrapper.
  • Garnish with a small dollop of the wasabi mayo & a sprig of thinly sliced green onion (optional).

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Separate 6 biscuits into 2 rounds each. Gently stretch each round into a 5-inch circle. Press into cups of a non-stick muffin tin.
  • Lightly oil a skillet and place over medium-high heat. Cook turkey in skillet, separating into small pieces as it browns. When turkey is no longer pink, turn heat down to medium-low.
