- In a large salad bowl, combine the first 11 ingredients. Set aside. Combine dressing ingredients; pour over potato mixture and toss to coat. Cover and refrigerate for up to 24 hours.

Steps:
- Cook the potatoes in boiling salted water for 12-15 minutes until just tender. Drain well and cut in half. Put into a large bowl.
- In a small bowl, whisk together 1 tablespoon of lemon juice, the olive oil, oregano and plenty of seasoning. Pour over the warm potatoes and set aside.
- When the potato salad has cooled, add the onion, olives, tomatoes and capers and toss well. Roughly chop the boiled eggs and scatter over the salad. Toss the salad once more just before serving.

No more "I don't want to bring potato salad to the picnic". Now they beg me to make this. This recipe is easy and magnificent!!

- Add chopped celery, onion and chopped egg.
- Pour over potatoes and gently mix (fold in).

- Refrigerate at least one hour before eating.

HILL COUNTRY POTATO SALAD
This recipe comes from "Texas Recipes from Texas Places, Volume III." It's a "Texanized" German potato salad.

Steps:
- Cook potatoes, in boiling water and 1 teaspoon salt, until tender, about 35 minutes.
- Drain potatoes, then peel and dice or partially mash.
- Fry bacon in a skillet until crisp; add onions and saute until softened, but not browned.
- In a bowl, combine cornstarch or flour, sugar, 1 teaspoon salt and pepper; stir in the vinegar and water until smooth.
- Add mixture to bacon and simmer and stir until thickened.
- Pour the hot dressing over the potatoes and add 1/4 cup minced onion, parsley, celery seeds, and radishes; lightly toss.
- Garnish with celery leaves.

- Peel and dice potatoes into cubes. Place potatoes into a large pot of water. Boil for about 20 minutes (or until fork tender). Take care not to overcook your potatoes - you don't want them overly mushy.
- Mix mayonnaise, vinegar, mustard, chicken stock and salt and pepper in a large bowl.
- Add potatoes, celery, onion and stir gently.
- Stir in eggs.
- Cover and refrigerate at least 4 hours to blend flavors and chill.
- How do you make the perfect hard boiled egg?
- Put eggs in a medium pot.
- Cover with cool water.
- Place on burner over high heat.
- Bring to a boil then take pot off of heat and cover with lid.
- Set timer for 15 minutes.
- Dump water out of pot and rinse with cool water.
- You will have perfectly hard boiled eggs and no green rings!
