COUSCOUS SALAD WITH TOMATOES AND MINT



Couscous Salad with Tomatoes and Mint image

3 cups (about 1 1/2 pints) cherry or grape tomatoes, halved
2 kirby cucumbers, seeded, and diced
1 lemon, juiced
3 teaspoons kosher salt
1 1/2 cups instant couscous (a 10-ounce box)
2 cups water
2 wide strips lemon zest
1/4 cup extra-virgin olive oil
Pinch cayenne
1/2 cup torn mint leaves, stems saved
1/2 cup roughly chopped flat leaf parsley, stems saved
3 scallions (white and green), chopped
1/2 cup toasted pine nuts, optional

Steps:

  • Toss the tomatoes, cucumbers, and lemon juice in a bowl with 2 teaspoons of the salt. Set aside.
  • Put the couscous into a large bowl. Bring the water, lemon zest, 3 tablespoons of the oil, the remaining salt, cayenne, and herb stems to a boil over high heat. Pour the liquid over the couscous, stir to separate any clumps. Cover with a lid, plate, or plastic wrap, set aside for 5 minutes. Remove the zest and herb stems and fluff with a fork.
  • Add the tomato mixture, scallions, mint, parsley, and pine nuts. Drizzle the remaining oil over the salad, toss and serve.

Inspired by my family's deep Coptic Orthodox Christian tradition, this is a great meal alternative during strict fasting times. It contains no animal products or fats, but has enough flavor and visual impact to make you feel like you're not sacrificing a thing! I hope you will enjoy this recipe. Add chicken or prawns to make this vegan dish a carnivorous delight!

1 ¼ cups vegetable broth
1 ¼ cups water
2 cups pearl (Israeli) couscous
1 pinch salt
1 pinch ground black pepper
5 tablespoons olive oil, divided
½ cup pine nuts
4 cloves garlic, minced
1 shallot, minced
½ cup sliced black olives
⅓ cup sun-dried tomatoes packed in oil, drained and chopped
1 cup vegetable broth
¼ cup chopped fresh flat-leaf parsley

Steps:

  • Bring 1 1/4 cup vegetable broth and water to a boil in a saucepan, stir in couscous, and mix in salt and black pepper. Reduce heat to low and simmer until liquid is absorbed, about 8 minutes.
  • Heat 3 tablespoons olive oil in a skillet over medium-high heat; stir in pine nuts and cook, stirring frequently, until pine nuts smell toasted and are golden brown, about 1 minute. Remove from heat.
  • Heat remaining 2 tablespoons olive oil in a saucepan; cook and stir garlic and shallot in the hot oil until softened, about 2 minutes. Stir black olives and sun-dried tomatoes into garlic mixture and cook until heated through, 2 to 3 minutes, stirring often. Slowly pour in 1 cup vegetable broth and bring mixture to a boil. Reduce heat to low and simmer until sauce has reduced, 8 to 10 minutes.
  • Transfer couscous to a large serving bowl, mix with sauce, and serve topped with parsley and pine nuts.

From Southern Living. Toasted spices, dried tomato and roasted red pepper make this recipe stand out. Also very attractive with the cilantro and purple onion. Roasting the red pepper makes for the best taste and texture but I have used the ones from a jar and the world did not end.

1 red bell pepper
1/2 medium purple onion, diced
1 medium cucumber, peeled,seeded and diced
1/4 cup olive oil
3 tablespoons red wine vinegar
1/4 teaspoon salt
1/8 teaspoon ground red pepper
1 tablespoon mustard seeds
1 tablespoon cumin seed
1/3 cup minced sun-dried tomato
1/4 cup minced fresh cilantro
1 1/2 cups water
1/2 teaspoon salt
1/2 teaspoon pepper
1 clove garlic, pressed
1 cup uncooked couscous

Steps:

  • Place bell pepper on foil-lined baking sheet.
  • Broil 5 inches from heat (with electric oven door partially open) about 5 minutes on each side or until blistered.
  • Place pepper in heavy-duty ziploc bag; seal and let stand 10 minutes to loosen skin.
  • Peel pepper; remove and discard seeds.
  • Dice pepper.
  • Whisk oil, red wine vinegar, salt and red pepper in bowl.
  • Cook mustard and cumin seeds in small skillet over medium heat, stirring constantly, 5 minutes oruntil toasted; immediately stir into oil mixture.
  • Add tomato and cilantro and stir well.
  • Bring water, salt, pepper and garlic to a boil in saucepan; stir in couscous.
  • Remove from heat; cover and let stand 5 minutes or until liquid is absorbed.
  • Transfer to a serving bowl; stir in diced vegetables.
  • Drizzle with dressing and toss gently.

4 cups water
Sea salt, preferably gray salt
1 1/2 cups couscous
1 1/2 tablespoons olive oil
1 pound summer squash, cut in 1/2-inch cubes
Freshly ground black pepper
1 tablespoon finely chopped fresh lemon thyme leaves
1/4 cup honey
1/4 cup cider vinegar
1/2 cup extra-virgin olive oil
1/2 cup white raisins
1 pound English cucumber, peeled, seeded, and cut into 1/2-inch cubes
1 cup fresh arugula, chiffonade
3 tablespoons sliced almonds, toasted in 350 degree F oven for 10 minutes

Steps:

  • Bring 4 cups water and 1 teaspoon salt to a boil. Gradually add the couscous. Return to a boil and let cook for 2 minutes. Remove from the heat, cover, and let stand for 3 minutes.
  • Meanwhile, in a saute pan, heat the olive oil. Add cubed squash. Season with salt and pepper. Saute, stirring often, for about 4 minutes, or until caramelized and crispy. Add the fresh lemon thyme and set aside.
  • In a small saucepan, heat the honey and vinegar until just warm. Whisk in olive oil and season with salt and twist of pepper. Remove from the heat, and add the raisins. Fluff the couscous with a fork.
  • Place the arugula in a serving bowl. Toss with the warm squash, couscous, cucumber and 2 tablespoons of the toasted almonds. Add enough dressing to coat the salad. Season with salt and pepper, and top with the remaining 1 tablespoon of almonds.

Grilled Tomatoes
1/2 head radicchio
1/4 thinly sliced small red onion

Chopped toasted almonds
Fresh parsley and oregano leaves

Steps:

  • Cook 1 cup Israeli couscous (or other small pasta or grain) according to package directions; toss with 2 tablespoons olive oil. Meanwhile, prepare Grilled Tomatoes (see recipe). Brush 1/2 head radicchio with oil; grill over high heat, turning occasionally, until lightly charred, 5-8 minutes. Let cool; coarsely chop. Toss with tomatoes, 1/4 thinly sliced small red onion, and couscous; season with salt and pepper. Serve topped with shaved ricotta salata, chopped toasted almonds, and fresh parsley and oregano leaves.

1 cup boiling water
1/2 cup sun-dried tomato (not packed in oil )
1 (14 1/2 ounce) can vegetable broth
1 1/4 cups couscous (uncooked )
1/2 cup feta cheese (crumbled )
1/4 cup fresh parsley (minced)
1 1/2 teaspoons fresh oregano (minced or 1/2 tsp dried oregano )
3 teaspoons lemon juice
1 teaspoon water
1 teaspoon olive oil

Steps:

  • In a small bowl, pour boiling water over tomatoes. Let stand 5 minutes.
  • in a small saucepan, bring broth to a boil and stir in couscous.
  • Remove saucepan with broth and couscous from the heat and let it stand 5 minutes or until broth is absorbed.
  • Drain and chop tomatoes and add couscous.
  • Gently stir in remaining ingredients (feta cheese, parsley, oregano, lemon juice, tsp of water and olive oil)
  • Serve warmed or chilled and -- Manga ! .

If you want to serve this salad cold, I suggest refrigerating the dressing and the salad ingredients separately until ready to serve. Toss the dressing with the salad ingredient and adjust salt and pepper to taste right before serving.
