Steps:
- Heat the oven to 200C/180C fan/gas 6. Put the vegetables and garlic on a baking tray. Season well, drizzle with 1 tbsp olive oil and mix until everything is coated.
- Sprinkle the spices and some seasoning over the chicken thighs, then rub into the skin and flesh. Drizzle a little oil over the skin and nestle the thighs among the veg. Roast in the oven for 25-30 mins until the vegetables are starting to crisp and the chicken is cooked through.
- About 10 mins before the chicken and vegetables are done, put the couscous in a bowl and just cover with boiling water, cover with cling film and set aside for 5 mins.
- Fork through the couscous to separate the grains. Toss the vegetables and parsley or mint through the couscous, season, then transfer to a serving plate. Top with the chicken and drizzle over the sweet chilli sauce, if you like.

- In a saucepan cook onion in oil over moderately low heat, stirring, until softened. Add vinegar and cook 1 minute. Remove pan from heat and stir in couscous, boiling water, and salt and pepper to taste. Let couscous mixture stand, covered, 5 minutes. Fluff couscous with a fork and stir in chives.
COUSCOUS WITH RAISINS AND RED PEPPERS

- In a saucepan with a tight lid, heat the olive oil. Add the onions and red peppers, and cook and stir until wilted. Do not brown. Add the water, raisins, cinnamon, cumin, orange rind, salt and pepper. Bring to a boil.
- Remove from the heat, add the couscous and stir well. Cover and let stand for 5 minutes. Uncover, add the butter and fluff well with a fork. Serve with the tuna.

- Heat 1 tablespoon of the oil in a saucepan. Add the red pepper, onion, garlic, cumin, salt and pepper. Cook over medium heat until wilted, but do not brown.
- Add the lemon juice and water and bring to a boil. Add the couscous and blend well. Cover tightly and remove from the heat. Let stand 5 minutes.
- Add the remaining oil and parsley. Stir with a fork to blend and separate the grains. Serve immediately.

- Put the couscous in a large bowl and pour the boiling water over it. Cover with a lid or a plate and set aside for 5 minutes. Then remove the lid and fluff with a fork. Toss the finely chopped herbs with the couscous, as well as the sliced cucumber, onion, and lemon zest. Whisk together the lemon juice, olive oil, honey, chili powder, and cumin, then toss this dressing with the couscous. Stir in the pine nuts. Crumble the feta and stir that in as well. Taste and season generously with salt and pepper. Serve immediately, or refrigerate until ready to serve. Store leftovers in a covered container for up to 5 days. Per serving, based on 4 servings. North African in Origin. This dish can be served at room temperature or warm. I got this recipe from my gourmet club, it was part of the Mediterranean menu. It was a hit that we love.

- Vegetables-. Preheat oven to 425 degrees. Combine the first 4 ingredients in a large, shallow roasting pan. Whisk together the oil, vinegar, herbs, garlic, salt and pepper in a small bowl until blended. Drizzle the mixture over the vegetables and stir to coat. Roast uncovered, until the vegetables are tender, (about 20 minutes), stirring once halfway through the roasting time.
- Couscous-. In a saucepan, heat butter, add couscous and stir to coat. Cook until it is starting to brown. Add seasoning package. Add boiling broth, stir, cover, and remove form the heat. Let stand for 5 minutes. Place in a serving bowl, fluff with a fork and arrange vegetables on top.

- In a small saucepan, heat oil at medium heat. Add onion, bell pepper, thyme, salt and pepper and cook, stirring often, for 5 minutes or until veggies have softened.
- Pour the vegetable broth in the saucepan and bring to boil. Add couscous and stir. Cover and remove from the heat. Let rest 5 minutes. Fluff with a fork.

- Heat the butter in a large saucepan over medium heat, and cook and stir the carrots and onion until the carrots begin to soften and the onion is translucent, about 5 minutes. Pour in the chicken broth and water, and bring the mixture to a boil. Stir in the couscous, mixing well to avoid lumps, cover, and remove from the heat. Let the couscous stand covered until the water is absorbed, about 5 minutes.
- Stir in the raisins, and serve hot.

ROAST LAMB, COUSCOUS, RED ONION
Onions are used in most stuffings, both lightening the rice, couscous, or breadcrumbs and introducing sweetness. As they melt down, they keep the filling moist. Ask the butcher to prepare your shoulder of lamb for stuffing. When the bone is removed, it provides a neat pocket that will hold just the right amount.

- Peel and thinly slice the onion, then let it soften in a little olive oil over medium heat, stirring from time to time. It is ready when soft and golden. Put the couscous in a bowl, pour over the water, and leave for ten minutes. Preheat the oven to 425°F (220°C).
- Fluff the couscous with a fork to separate the grains. Stir in the softened onion, the raisins, and the spices. Season generously, then stuff the mixture into the pocket inside the lamb. Pull the meat over the stuffing and seal with a skewer or tie with string.
- Place the meat in a roasting pan, scattering any spare stuffing around the outside, and rub a little olive oil over the fat. Pour a glass of water into the roasting pan and place in the oven. Roast the lamb for twenty minutes, then decrease the heat to 400°F (200°C) and continue roasting for forty minutes, until the fat is crisp and golden and the juices run clear when the meat is pierced with a skewer. Remove from the oven and let rest for ten minutes before carving.
