CRAB TATER TOTS

2 tablespoons unsalted butter
1/4 cup all-purpose flour
1 large egg
1 cup mashed potatoes
Canola oil, for deep-frying
1/2 pound lump crab meat
Panko bread crumbs, for breading
Kosher salt

Steps:

  • In a small saucepan, combine the butter with 1/4 cup water over high heat. When the water comes to a simmer and the butter is melted, add the flour. Reduce the heat to medium and stir until the resulting paste pulls away from the sides of the pan, 1 to 2 minutes. Remove from the heat. Allow to cool for 5 minutes. Add the egg to the pan and stir vigorously until the egg is incorporated into the flour mixture. Stir in the mashed potatoes and let cool.
  • Pour enough oil into a medium pot so that the oil comes 3 inches up the sides. Heat the oil to 350 degrees F.
  • While the oil heats, gently fold the crab into the potato mixture; the lumpier the batter, the better. Using two soup spoons, shape the mixture into quenelles, or 2-inch footballs. (You should end up with about 35.) Roll in the panko. Deep-fry, working in batches and turning once, until crisp, brown, and heated through, 2 to 3 minutes. Drain on paper towels and season with salt.

1 ½ pounds fresh button mushrooms, stems removed
½ cup shredded Monterey Jack cheese
¼ cup dry white wine

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Melt 2 tablespoons butter in a skillet; cook and stir green onion until softened, about 2 minutes. Transfer green onion to a bowl. Stir in crabmeat, bread crumbs, 1/4 cup Monterey Jack cheese, egg, lemon juice, and dill weed until well mixed.
  • Pour 1/2 cup melted butter in a 9x13-inch baking dish; turn mushroom caps in butter to coat. Fill mushroom caps with the crab mixture and sprinkle with remaining 1/2 cup Monterey Jack cheese. Pour white wine into baking dish.
  • Bake in preheated oven until cheese is melted and lightly brown, 15 to 20 minutes.

1/2 cup (125 ml) Milk
3 Green onions, finely chopped

2 cups (500 ml) Grated Swiss cheese
60 Frozen mini-tart shells, thawed

  • Beat eggs in medium bowl until frothy. Add flour, salad dressing and milk. Stir well. Add green onion, crab and cheese. Stir to combine well. Place tart shells on un-greased baking sheet. This tasty appetizer seasoned with thyme, oregano, and savory. Choose good sized mushrooms, about 2 inches across. When cleaning mushrooms, don't run them under water. They are like little sponges, and will absorb it; just wipe them clean with a damp towel. The filling can be made with fresh, canned, or imitation crabmeat. If using canned, be sure to rinse it first.

  • Preheat the oven to 350 degrees F (175 degrees C).

1/4 ketchup
1 tablespoon horseradish
1/2 tablespoon Worcestershire sauce
1/4 teaspoon hot sauce
1/4 cup chopped green onion
1 (6 ounce) can crabmeat
1 (4 ounce) can baby shrimp
24 medium shrimp, for garnish
chives, for garnish
4 sheets phyllo pastry
1/4 cup melted butter

Steps:

  • Brush one sheet of phyllo with melted butter, place next sheet on top, brush with butter, repeating until all four sheets are used, do not brush top sheet with butter.
  • Cut into 24 equal squares.
  • Place each square into ungreased mini muffin cups.
  • Bake at 350 5-7 minute until brown.
  • Beat cream cheese with electric beaters, until creamy.
  • Add ketchup, horseradish, hot sauce, and worcestershire sauce, mix through.
  • Add onion,crab, and shrimp.

Phyllo Tartlets with Smoke Salmon Rillettes image

100 phyllo tartlett shells
1 side smoked salmon, minced
1 small red onion, chopped fine
1 bunch chives, chopped very fine
1 cup capers, rough chopped
2 cups aioli
1 jar domestic osetra caviar
2 cups plain yogurt, drained
2 Tbs. fresh dill, chopped fine
fresh juice from 2 lemons
salt and pepper to taste
dill to garnish

Steps:

  • Preheat oven to 400 F. Place tartlett shells on a sheet tray and bake until golden brown. Let cool.
  • Mince salmon in a food processor. In a medium bowl, mix salmon, onion, chives, capers, aioli and a touch of lemon. Season with salt and pepper to taste. Refrigerate until use.
  • In a small bowl, mix yogurt, dill, lemon, salt and pepper. To serve, fill each shell with a spoon of salmon mixture. Top with a refined amount of caviar and tiny dollop of yogurt. Garnish with dainty dill sprig.

STRAWBERRY TARTLETS



Strawberry Tartlets image

This is a very simple recipe and the beauty lies in the details. Whenever I make anything with red fruits, I always take care to wash them when they are still whole so that no water penetrates the fruit, diluting the flavor. I also love drawing out some of the wonderful juices and using that as part of this dessert. The tart shells and strawberry mix can be made in advance but do not fill the shells with the sour cream and strawberries until JUST before serving. The juice from the strawberries makes them soggy quickly but they are delicious and fresh!

1 pound strawberries, washed, dried and hulled
1 lemon
1 lime
1/2 cup granulated sugar, plus additional for sprinkling
1/2 cup powdered sugar
1/4 cup all-purpose flour
1 tablespoon unsalted butter, melted
2 tablespoons orange juice, from concentrate (recommended Tropicana) not fresh squeezed
Nonstick spray
1/2 to 3/4 cup sour cream

Steps:

  • Put the strawberries on a flat surface and cut them, widthwise, into 1/4-inch thick slices. The slices should be thin enough to bend slightly when you cut them.
  • Using a vegetable peeler and, with a light touch, remove the zest from half of the lemon. Try to remove the zest in small pieces and leave the pith (the white part) behind. Juice the lemon and the lime and add them to a bowl along with the zest, sugar and strawberries. Cover the bowl and refrigerate.
  • Preheat the oven to 375 degrees F. Meanwhile, sift the powdered sugar and flour into a medium bowl. Use your hands to push the sugar and flour through the strainer to make it easier. Stir in the melted butter and the orange juice. Stir to blend.
  • Invert a baking sheet and put it on a flat surface. Coat it with a thin layer of nonstick spray as an added precaution against sticking. Spoon a generous teaspoon of the batter near the corner of the sheet and use a small offset spatula to spread it thinly into a small, imperfect oval. Take care to leave space between each oval because they will spread when they are baked. You should be able to fit about 12 on the tray.
  • Bake them in the oven until light brown, about 5 to 8 minutes. Remove the tray from the oven. Put the tray by the inverted muffin tin. Use the offset spatula to lift the shells, 1 by 1, off the tray. Using your fingers, put a shell over the muffin tin bottom, pressing down to create a tart shell. The sides will overlap or be higher than the muffin hole. Your goal is to make a tart shell to fill with the strawberries. Repeat with the remaining shells. Allow them to cool.
  • Strain the liquid from the strawberries and pour it into a small pan. Reduce over medium heat until it becomes syrupy and thick. Pour it back over the strawberries and toss to blend. Return to the refrigerator to chill again. When ready to serve, put a small dollop of sour cream in the bottom of each shell and top with some of the strawberries. Sprinkle with a touch of granulated sugar. Serve immediately.

WILD MUSHROOM TARTLETS

1 pound wild mushrooms (cremini, portobello, shiitake, morel, oyster), coarsely chopped
8 ounces goat cheese
1/4 cup truffle or olive oil
1/4 cup fresh flat-leaf parsley, chopped
Salt and pepper, to taste
60 phyllo-pastry tartlet shells, packaged
Garnish: sliced mushroom, chopped chives
2 tablespoons butter
1 shallot, chopped
2 garlic cloves, chopped

Steps:

  • In a large saute pan over medium heat, melt butter. Add the shallot and garlic, stirring constantly for 1 minute. Add the chopped mushrooms. Cook until the mushrooms begin to soften, about 5 minutes. Transfer the mushroom mixture to a food processor and add the goat cheese. Add the oil and parsley. Pulse until the mixture comes together. Season with salt and pepper and pulse again.
  • Spoon mushroom filling into tartlet shells and place on a baking sheet. Bake in a preheated 350 degree oven for 10 minutes. Garnish with sliced mushroom and chopped chive before serving.

3 tablespoons unsalted butter, melted
1 cup heavy cream
1/2 teaspoon saffron threads
3 large egg yolks
10 ounces Brie, rind discarded and cheese cut into 1/3-inch cubes

Steps:

  • Preheat oven to 350°F.
  • On a work surface arrange 1 phyllo sheet with a long side facing you and brush lightly with some butter. Top with a second phyllo sheet and brush lightly with butter. Top with a third phyllo sheet and cut stacked phyllo lengthwise into 4 strips and crosswise into 6 strips to make twenty-four 3-inch squares. With scissors cut off corners of squares to form octagons and cover with plastic wrap.
  • Line each mini-muffin cup with 1 phyllo octagon, letting edges curl naturally, and bake in middle of oven until golden brown, about 10 minutes. Carefully transfer shells in cups to racks to cool completely. Make 24 more octagons with remaining 3 phyllo sheets and butter in same manner, Shells may be made 1 week ahead and kept in cups, wrapped in plastic wrap, at room temperature, or 1 month ahead and frozen.
  • In a small saucepan simmer cream with saffron until reduced to about 3/4 cup and cool slightly. Whisk in yolks and season with salt and pepper. Divide Brie among shells and spoon 2 teaspoons saffron cream into each shell. Bake tartlets in 2 batches in middle of oven about 8 minutes, or until filling is puffed. Cool tartlets in cups on racks 5 minutes and carefully lift out onto racks to cool completely. Serve tartlets warm or at room temperature.

It's bursting with shrimp, curry, sun-dried tomatoes, green onions, ginger, cumin, coriander, turmeric, and topped with an egg...all hidden under the last sheets of phyllo dough. Well worth your time!

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Spray 4 tartlet pans with cooking spray.

The serving size is 2 per person, but I've found from experience most people eat 3-4 so you may want to adjust accordingly.

2 (2 1/8 ounce) packages frozen miniature phyllo tart shells
1/2 cup seafood sauce
30 medium cooked shrimp, peeled and deveined

Steps:

  • Combine cream cheese, Worcestershire sauce, onion, garlic salt and lemon juice in a bowl.
  • Divide mixture evenly among 30 tart shells.
  • Top each shell with seafood sauce and one shrimp.
  • Refrigerate until ready to serve.

Shrimp and Tomato Tartlets image

This is not difficult to make if you are organized. I first prepared these while staying at the magnificent Chateau de Pray near the Loire Valley city of Amboise. This region is famous for crisp tart wines like Sancerre and the sweeter Vouvray, as well as cheese and freshwater fish and shellfish. The pastry dough can be made in a few minutes with a food processor; it can be done in advance and chilled. The tomato-based filling can also be made in advance. At the last minute, the tart shells are filled and baked. The shrimp are quickly sauteed and flavored with curry and then distributed over the finished tartlets. These tartlets look terrific and can be garnished in any number of ways -- maybe with red radicchio and green bibb lettuce.

1 cup all-purpose flour, plus flour for working the dough
6 tablespoons butter, chilled and cubed
1/2 cup Gruyere cheese, grated
1/4 teaspoon salt
Tomato compote (see recipe)
1 tablespoon olive oil
16 jumbo shrimp (shelled), or scallops, crab meat, lobster or other shellfish
1/4 teaspoon curry powder
Salt and freshly ground pepper to taste
2 cups lamb's lettuce or bibb lettuce
Vinaigrette (see recipe)

Steps:

  • Place the flour, butter, cheese and salt in the container of a food processor, and blend until a ball forms.
  • Remove the dough, and chill for half an hour.
  • When the dough is ready, heat the oven to 400 degrees.
  • Transfer the dough ball to a floured surface, and flatten it slightly with the palm of your hand before beginning to roll. Sprinkle the dough with flour, and roll it evenly, making quarter turns after every few rolls. The dough should be about 1/8 inch thick. Using a 3- to 3 1/2-inch cookie cutter, cut out 4 circles to fit individual tartlet molds of roughly the same measurement. Lift the dough circles carefully with a spatula, and place them in the individual molds, pressing the dough into the molds firmly.
  • Fill each tart shell with about 3 tablespoons of tomato compote. Bake about 12 to 15 minutes.
  • Meanwhile, put the olive oil and the shrimp into a nonstick pan over high heat. Sprinkle the shrimp with curry powder. Season with salt and pepper. Cook, stirring, 2 to 3 minutes; do not overcook. Remove to a plate.
  • In a mixing bowl, toss the lettuce and vinaigrette.
  • Unmold the tartlets, and place in the middle of serving plates. Top each tartlet with 4 shrimp. Arrange some lettuce decoratively around tartlets.
