CRANBERRY KISSING BALL

Steps:
- Wrap wire tightly around diameter of foam ball once. Twist wire at top of ball to secure. Tuck ends into ball.
- Break toothpicks in half. Push cranberry onto broken end of toothpick; push other end of toothpick into foam ball. Continue until ball is well filled with cranberries.
- Fill in open spaces on ball with 1 1/2- to 2-inch cuts of eucalyptus, securing with pins.
- Slip ribbon through wire twist at top; tie ribbon to make loop for hanging ball. The cranberries will stay plump and pretty for about three to four days. To extend its life, hang the ball in a cool spot, such as in an entryway or on a porch.

CHOCOLATE CRANBERRY NUT BALLS
I'm gravitating towards the Paleo Diet so I created this high-protein and energy snack recipe out of a desire to eliminate those expensive and so-called nutritious protein bars. I don't want all of the processed carbs that are hidden in them because, quite honestly, they aren't that healthy. These are really tasty and my whole family loves them. I recommend making them fairly small and bite-sized, as they can crumble a little as you're biting into them. Freezing or refrigerating them keeps the messiness down, but they won't spoil if left at room temperature. I eat 4 or 5 with a big glass of water and feel full!

- Place teff in a large skillet over medium heat and toast until fragrant, 3 to 5 minutes. Transfer to a large bowl. Stir in coconut, chia seeds, and milled flax seed.
- Chop walnuts, almonds, chocolate chips, dates, cranberries, and pumpkin seeds in a food processor, in batches if necessary, until finely chopped and the consistency of coarse breadcrumbs. Add nut mixture to teff mixture and mix thoroughly. Pour peanut butter and honey over nut and teff mixture; mix until evenly distributed.
- Line 2 baking sheets with parchment paper. Roll the teff mixture into bite-size balls and arrange on baking sheets. Wrap sheets well with plastic wrap. Freeze until balls are firm, 8 hours to overnight.

HOLIDAY CRANBERRY KISSING BALL
I was looking for cute holiday ideas and came across this. Easy way to make mistletoe look snazzy :) Also a good way to use up extra cranberries.

Steps:
- Paint foam ball with red craft paint. Set aside to dry.
- Cut an 18" piece of wire and fold it in half. Push folded wire all the way through the center of foam ball, leaving a 1" wire loop extending at bottom of ball and 3" of wire extending at top.
- Using hot glue gun or toothpicks, attach cranberries to ball, covering it completely. Twist wires at top of ball into a simple hook for hanging. Use ribbon to tie mistletoe and other desired holiday trim to wire above and below ball, and hang with hook.
- Kissing ball will last several days. Discard once berries begin to soften. To extend the life of your decoration, you can spray with an even coating of shellac.

SPICY CRANBERRY SAUSAGE BALLS
Add some sweet/spicy flair to your appetizer spread! These zippy sausage balls use bulk Italian pork or turkey sausage and dried cranberries to use on a party buffet spread, or for watching the game. I just love finger foods that are just a bite or two, and these fill the bill. Add some extra heat with optional red pepper flakes, or dial down the heat and use sweet Italian sausage instead of the hot, if you prefer. Either way, you will enjoy the tangy sweetness the cranberries bring!

- Preheat the oven to 400 degrees F (200 degrees C). Line a sheet pan with parchment paper.
- Combine cream cheese and Cheddar cheese in the bowl of an electric mixer. Mix on medium speed until blended, about 1 minute. Add sausage in golf ball-size pieces while mixer is running and continue to mix until combined with the cheeses, about 1 minute. Add cranberries, 2 tablespoons parsley, onion powder, garlic powder, and red pepper flakes; continue to mix until well blended, about 2 minutes.
- Stop the mixer and stir in baking mix with a wooden spoon until it is distributed throughout.
- Form 27 golf ball-size sausage balls with your hands or a meatball scoop. Place on the prepared baking sheet, spacing evenly.
- Bake in the preheated oven until nicely browned and no longer pink in the centers, about 30 minutes. Drain on paper towels if necessary. Serve warm garnished with remaining parsley.

- Ham Balls: Mix all ingredients for ham balls together and form into 1-inch balls.
- Bake at 375°F for 15-20 minutes.
- Sauce: Mix first four ingredients.
- Stir in cranberry sauce and orange; heat until cranberry sauce melts.
- Pour over ham balls.
- Keep warm in chaffing dish or crock pot.
