This Cranberry Pecan Sweet Potato Casserole is the perfect fall and holiday side dish. This simple recipe is as tasty as it is beautiful.

1 cup chopped pecans
3/4 cup fresh or frozen cranberries
1/2 cup packed light brown sugar
2 pounds sweet potatoes (about 2-3 large)
4 tablespoons unsalted butter
2 tablespoons maple syrup
3/4 teaspoon packed, finely grated orange zest (from about half of a large orange)
1/2 teaspoon kosher salt, plus more as needed
1/4 teaspoon ground cinnamon

Steps:

  • Preheat the oven to 425°F. Coat a 9-inch pie or baking dish with butter and set aside.
  • In a small mixing bowl, add pecans, cranberries, and brown sugar. Toss to combine and set aside.
  • Peel 2-3 sweet potatoes and slice evenly into 1/8-inch-thick rounds, place in the pie pan, set aside.
  • On the stovetop or in the microwave, melt and combine the butter, maple syrup, orange zest, salt, and cinnamon. Pour over the potato slices and gently toss. Spread potatoes evenly in the pan.
  • Top the sweet potatoes with the brown sugar mixture. Cover with foil and bake in a pre-heated oven for 25 minutes. Remove foil after it has baked for 25 minutes and bake for an additional 20 minutes uncovered.
  • Remove from oven, let it sit for 5 minutes, and serve.

2 tablespoons dried cranberries
2 tablespoons butter, melted

1/4 cup chopped pecans
1/4 cup packed brown sugar
2 tablespoons all-purpose flour
2 tablespoons cold butter

  • In a small bowl, combine the sweet potato, sugar, cranberries, butter, egg and vanilla. Transfer to a greased shallow 2-cup baking dish., Combine the pecans, brown sugar and flour. I do not like the tartness of most cranberry dishes, and sweet potatoes can be bland by themselves. This dish combines both to make a great all-in-one dish. When I take this dish to another person's home, I bake the first time and add the yams, cover, and then wait to heat until I am at their house.

1 small unpeeled orange, sliced
1 ⅓ cups white sugar
½ cup pecan pieces
¼ cup orange juice
¾ teaspoon ground cinnamon

⅛ teaspoon ground mace
1 (40 ounce) can cut yams, drained

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).

4 large sweet potatoes
2 cups fresh or frozen cranberries
1/2 cup packed brown sugar
2 tablespoons butter, melted
1/2 cup orange juice
TOPPING:
1/2 cup chopped walnuts
1/4 cup packed brown sugar
1/2 teaspoon ground cinnamon
3 tablespoons cold butter

Steps:

  • Place sweet potatoes in a Dutch oven; cover with water. Bring to a boil. Reduce heat; cover and simmer until tender, 20-30 minutes. Drain. When cool enough to handle, peel potatoes and cut into 1/4-in. slices. , Place half in a greased 2-1/2-qt. baking dish. Top with half of the cranberries, brown sugar and butter. Repeat layers. Pour orange juice over top. Cover and bake at 350° for 30 minutes. , In a small bowl, combine the walnuts, brown sugar and cinnamon; cut in butter. Sprinkle over sweet potato mixture. One of my favorite dishes to make is sweet potatoes. Everyone loves them, and they all love them even more now, because of this easy and delicious Cranberry Pecan Sweet Potato Bake.

4 medium sweet potatoes
¾ cup butter (melted)
⅓ cup brown sugar
2 Tablespoons honey
2 Tablespoons olive oil
1½ cups Craisins
1 cup chopped pecans

Steps:

  • Preheat oven to 400 degrees F. Spray a 9 x 13 inch pan, with nonstick cooking spray.
  • Peel all the potatoes, with a potato peeler, then slice them into thin rounds. These should be less than 1/4 inch wide.
  • In a small bowl, combine the melted butter, brown sugar, honey, and olive oil. Mix until fully incorporated.
  • Lay out your potato slices on the bottom of the pan. Make sure you only do one layer of the sweet potatoes.
  • For the second layer of the sweet potatoes, add your Craisins and your chopped pecans. I used about 1/2 cup of Craisins and 1/3 cup of pecans for the first layer.
  • Drizzle about 3 Tablespoons of the brown sugar liquid over the first layer, of the bake.
  • Repeat this process until there are no more sweet potatoes left. If you have extra Craisins and pecans left over, place them on top.
  • Pour the remaining brown sugar drizzle, on top.
  • Spray the top layer, with a little extra non-stick cooking spray.
  • Place in oven and allow it to cook for about 35 - 40 minutes.
  • Remove from oven and enjoy warm.

3 1/2 lbs sweet potatoes or 3 1/2 lbs yams, peeled and cut into 3/4-inch cubes
2 large onions, cut into 3/4-inch chunks
lite olive oil or vegetable oil
2 cups fresh cranberries (do not thaw if using frozen cranberries) or 2 cups frozen cranberries (do not thaw if using frozen cranberries)
2/3 cup golden brown sugar
2 tablespoons melted butter or 2 tablespoons margarine
1 large orange, juice and rind of
1/2 teaspoon salt
1/2 teaspoon nutmeg
1/2 teaspoon ground ginger
1/2 teaspoon cinnamon

Steps:

  • Preheat oven to 400°F.
  • Mix Sweet potatoes and onions and put mixed veggies in two sprayed shallow oven proof dishes (about 8x12 each).
  • Spray the veggies lightly with oil and bake until sweet potatoes are just tender (a bit under done) About 20-25 minutes.
  • Lower heat on oven to 350°F.
  • Combine the remaining ingredients, mix well and pour equally into the two casseroles.
  • Mix well to coat all the pieces of vegetable.
  • Bake uncovered about 30-40 min or until tender and getting sticky, Stir once during cooking.
  • You may freeze the casseroles, tightly covered, before the final baking.
  • Then on the day of your dinner defrost and follow through the final baking.
  • Or you may hold it in your refrigerator, tightly covered, for a day and then bake on the day of your dinner.

  • Prepare Topping:.
  • Mix oatmeal, flour, packed brown sugar, cinnamon and nutmeg together in a separate bowl.
  • Cut in the butter.
  • Consistancy should be lumpy.
  • Sprinkle over the top of the Yam mixture.
  • Bake at 350 degrees for 30 minutes.
  • The cranberries should have burst.
  • Sprinkle marshmallows on top and bake five more minutes or until marshmallows are browned.
