CRANBERRY PECAN TASSIES
A traditional pecan tassie is a small tart with nuts. This holiday version adds cranberries. How festive! -Peggy West, Georgetown, Delaware

Steps:
- In a small bowl, beat butter and cream cheese until smooth; gradually beat in flour. Refrigerate, covered, 30 minutes or until firm enough to shape., Preheat oven to 325°. Shape dough into 1-in. balls; place in greased mini-muffin cups. Press evenly onto bottoms and up sides of cups., In a small bowl, beat egg, brown sugar, melted butter and orange zest until blended. Stir in pecans. Spoon 1-1/2 teaspoons filling into each cup; top with cranberries., Bake 20-25 minutes or until crust is golden and filling is set. Cool in pans 2 minutes. Remove to wire racks to cool.Freeze option: Freeze cookies, layered between waxed paper, in freezer containers. To use, thaw before serving.

CRANBERRY-PECAN SHRIMP SALAD
I had this recipe in my "to make file" since 2005. I finally made it today. I'm still trying to figure out why I waited so long to make this. Simply delicious. Hope you don't wait as long as I did to try this recipe. I used dried parsley, regular mayo and regular yogurt because that's all I had on hand; it was still delicious.

- Combine shrimp, celery, cranberries, pecans, parsley, mayo, yogurt, lemon juice, salt and pepper in a large mixing bowl.
- Cover and chill at least 2 hours, stirring occasionally.

- cream butter and cream cheese.add flour gradually.mix until you have a soft dough.
- line miniature muffin cups with balls of dough and shape to fit tins.
- combine filling ingredients and spoon carefully into each tin.
- bake at 325* for 30-35 minutes or till filling is set.
- cool in pans.
- remove carefully from pans and cool on wire rack compeltely --
- store in refrigerator in airtight containers.

PECAN TASSIES
This recipe has been a holiday favorite for many years. I love getting together with my mom and baking these for Christmas. These come out like mini pecan pies but not overly sweet as most pecan pies seem to be.

Steps:
- EQUIPMENT: Mini-muffin pan (24 cup). Mini-tart shaper (optional but highly recommended to make perfect tarts fast - I got mine from Pampered Chef).
- Preheat oven to 325°F.
- Blend softened cream cheese, 1/2 cup butter, and flour to form the dough. Chill dough for one hour.
- Spray mini muffin pan(s) with non stick spray (Bakers Joy or Pam).
- Remove dough from refridgerator and roll into 24 1-inch balls.
- Place dough balls into mini-muffin cups and press balls against the bottom and sides to form a mini pie crust. If using the mini-tart shaper, dip shaper in flour and tap off excess then press straight down on the dough ball.
- Beat egg, brown sugar, 1 tbsp butter, vanilla, and salt together.
- Sprinkle 1/2 cup chopped pecans into dough cups, filling each cup half full.
- Fill each tart almost full of brown sugar mixture.
- Place a pecan half on top of each tart (or sprinkle with chopped pecans).
- Bake at 325F for 25 minutes, or until set.
- Cool in pans.
- Serve and watch them disappear!

- Stir in flour.
- Chill for one hour.
- Shape into 24 balls.
- Place in ungreased 1 3/4 inch muffin tins.
- Press pastry evenly against bottom and up the sides.
- For filling: Beat egg, sugar, vanilla til smooth.
- Stir in nuts and cranberries.
- Spoon filling into cups.
- Bake 325 for 30-35 minutes until brown.
- Cool on wire racks.
- Remove by running a knife around the edges.
