Delicious cranberry pineapple bread perfect for breakfast. The pineapple gives that amazing flavor to this bread.

2 cups all-purpose flour
½ teaspoon salt
2 teaspoons baking powder
½ teaspoon baking soda
¾ cup white sugar
¼ cup melted butter
1 egg (lightly beaten)
½ cup pineapple juice
1 teaspoon vanilla
½ cup crushed pineapple (canned)
1 ½ cup fresh or frozen cranberries
Oil or pam spray to grease the pan

Steps:

  • Grease 9x5 -inch loaf pan and set aside.
  • Preheat oven to 350 degrees F.
  • Combine the flour, salt, baking powder, baking soda, and white sugar. Make a well.
  • In a separate bowl, combine butter, egg, pineapple juice, vanilla, and crushed pineapple. Add this mixture to the dry ingredients. Blend well.
  • Fold in the cranberries. Pour the batter into the prepared loaf pan.
  • Bake at 350 degrees F for 45 minutes to 1 hour, or until an inserted tester comes out clean.
  • Let it cool for at least 15 minutes, then serve.

3 Eggland's Best Eggs
1 cup canola oil
2 cups granulated sugar
1 (12 oz) bag of cranberries
1 (8 oz) can crushed pineapple (drained)
3 cups flour
2 tsp baking soda
1/2 tsp baking powder
1/8 tsp salt
1/2 teaspoon nutmeg
1/2 teaspoon ginger
1/2 teaspoon cinnamon

Steps:

  • Preheat oven to 350 degrees; coat two 9-inch loaf pans with non-stick cooking spray. Pulse cranberries in food processor to chop; set aside. Sift together flour, baking soda, baking powder, salt, cinnamon, ginger and nutmeg together and set aside. With an electric mixer, beat eggs, oil, sugar and vanilla for 3 minutes at medium speed. Stir in chopped cranberries and crushed pineapple. Add dry ingredients to wet ingredients; stir together just enough to combine mixtures - do not over mix. Divide mixture evenly into both pans; Bake for 1 hour and 10 minutes, or until a knife inserted into the middle comes out clean. Notes and Suggestions: Try adding golden raisins to the batter for an extra sweet taste.

2 tablespoons vegetable oil
2 tablespoons honey
1 ⅛ cups water
2 ½ cups bread flour
½ cup whole wheat flour
½ teaspoon ground cinnamon
½ teaspoon ground mace
1 tablespoon dry milk powder
1 ¼ teaspoons salt
1 cup dried cranberries
2 dried pineapple rings, finely chopped
2 teaspoons active dry yeast

Steps:

  • Combine the bread flour, whole wheat flour, ground cinnamon, mace, powdered milk, salt, cranberries, and pineapple. Add this mixture as you would normally add dry ingredients to your bread machine.
  • Add all the ingredients to the pan of the bread machine in the order suggested by the manufacturer.
  • Set your bread machine to Basic Loaf, and check to see that the dough forms a ball without excess moisture. May have to add a little more bread flour, no more than a tablespoon, so that the dough forms a nice solid ball.

2 cups all-purpose flour
2 teaspoons baking powder

3/4 cup sour cream
1 cup fresh or frozen cranberries, halved

Steps:

  • Preheat oven to 350°. In a small bowl, mix brown sugar and butter; spread onto the bottom of a greased 13x9-in. baking pan. Top with pineapple slices. Place a whole cranberry in the center of each pineapple; sprinkle remaining cranberries around pineapple., For cake, in a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. In another bowl, whisk flour, baking powder, salt, cinnamon and allspice; add to creamed mixture alternately with sour cream, beating well after each addition. This was my Mothers special recipe for Cranberry bread. The best I've ever had and highly recommended! The flavors of cranberries, orange and pineapple compliment each other, and it's nice and moist. This bread continues to be a holiday tradition and family favorite.

2 cups sifted flour
3/4 cup sugar
1 1/2 teaspoons double-acting baking powder
1 teaspoon salt
1/2 teaspoon baking soda
1 orange, juice and grated rind
2 tablespoons vegetable oil
1/2 cup well-drained crushed pineapple in juice (save juice)
1 large egg, beaten
1 cup cranberries, cut in half
1/2 cup chopped walnuts

Steps:

  • Sift together the dry ingredients in a large bowl.
  • In a 3/4 measuring cup, add the juice from one orange, vegetable oil and reserved juice from the can of crushed pineapple to equal 3/4 Cup.
  • In a small bowl, add liquid with grated orange rind and beaten egg. Stir to combine well, then add to dry ingredients, stirring just enough to dampen dough mixture (do not over beat).
  • Fold in chopped nuts, cranberries and crushed pineapple.
  • Bake in a large greased loaf pan at 350 degrees for 50 to 60 minutes, or until a knife inserted in the middle comes out clean.
  • Makes 1 loaf.
  • SUGGESTION: To save time, you can coarsely chop the cranberries in a food processor, if you want. But be careful not to over pulse!
  • NOTE: You may want to double the recipe and make 2 loaves. It goes fast!

1 navel orange
12 ounces (3 cups) fresh or frozen cranberries
1/2 fresh pineapple, peeled and cut into 1/4-inch dice (about 3 cups)
2 tablespoons honey
1 tablespoon packed light-brown sugar
1/2 teaspoon coarse salt
Freshly ground pepper, to taste

Steps:

  • Grate 2 teaspoons zest from orange. Remove remaining peel and pith from orange, and discard. Holding orange over a bowl, cut between membranes, allowing segments and juice to fall into bowl. Squeeze juice from membranes into bowl, and discard membranes. Slice segments crosswise. Add zest.
  • Pulse half the cranberries in a food processor until finely chopped. Add remaining cranberries, and pulse just until the second addition is coarsely chopped. Add to orange segments and zest, along with pineapple, honey, sugar, salt, and pepper, and gently combine. Cover, and refrigerate overnight (or up to 3 days). Serve chilled or at room temperature.

Steps:

  • Butter a 9x5-inch loaf pan.
  • Combine cranberries, sugar, corn syrup, and salt in a heavy, large saucepan; bring to a boil. Heat to 245 degrees F (118 degrees C) or until a small amount of syrup dropped into cold water forms a soft ball that flattens when removed from the water and placed on a flat surface, 20 to 30 minutes.
  • Gradually stir cream and butter into cranberry mixture, keeping the boil steady. Cook until 245 degrees F (118 degrees C) is reached again, 5 to 10 minutes. Pour mixture into the prepared loaf pan. Cool caramel in pan on a wire rack, about 1 hour. Remove caramel from pan, cut, and wrap individually or serve from pan.
