2 pounds fresh cranberries
1 cup sugar
1/4 cup Grand Marnier liqueur
1 orange, zested and juiced

Steps:

  • Place all the ingredients in the bowl of a food processor, pulse several times to breakdown the cranberries and incorporate the ingredients; it should still be a bit chunky. Allow the cranberry relish to sit at room temperature for at least 30 minutes, so the flavors can marry.

1 1/4 cups orange juice
1 cup granulated sugar
1/2 cup white vinegar
1 (12 ounce) bag cranberries
2 teaspoons orange zest, minced
1 1/4 teaspoons ground ginger
1/2 cup walnuts, chopped

Steps:

  • In large saucepan over medium heat, bring raisins, orange juice, sugar & vinegar to boil, stirring frequently.
  • Reduce heat & simmer, uncovered, 10 minutes.
  • Add cranberries, zest & ginger, & heat to boiling over high heat.
  • Reduce heat & simmer, uncovered, another 10 minutes.
  • Remove from heat & stir in walnuts.
  • Cool, cover & refrigerate. Serve cold.

2 cups plus 2 tablespoons sugar
1/2 cup water
1/2 cup orange juice
2 cups fresh or frozen cranberries
1/2 cup chopped dried apricots
1/2 cup golden raisins
1-1/2 teaspoons grated orange zest

Steps:

  • In a small saucepan, combine the sugar, water and orange juice; cook and stir over medium heat until sugar is dissolved. , Stir in the cranberries, apricots, raisins and orange peel; bring to a boil. Reduce heat; cover and simmer until the berries pop, about 15 minutes. Serve warm or chilled.

8 ounces kumquats
1 cup white sugar
1 cup pecans

Steps:

  • Wash cranberries and pick out any spoiled berries. Drain, and put in a food processor with kumquats, sugar and nuts. Blend until well chopped - be careful not to process it too much or it will be mush. Chill and serve.

Take this tangy cranberry relish to your next turkey dinner. This is also wonderful with grilled chicken or with a pate and crackers.

Number Of Ingredients 6

1/3 cup dark rum
1/4 cup finely chopped shallot
1 grated orange, rind of
3 cups cranberries
1 cup granulated sugar
1/2 teaspoon freshly ground pepper

Steps:

  • Prepare jars, lids and bands.
  • Combine rum, shallots and orange rind in a medium saucepan.
  • Bring to a boil over high heat, reduce heat and simmer for a few minutes until rum has reduced and mixture is a syrupy glaze.
  • Add cranberries and sugar. Stirring constantly, cook until cranberries
  • pop and sugar dissolves. Remove from heat and stir in pepper.
  • Ladle hot relish into prepared jars leaving a 1/2" headspace.
  • Check for air bubbles and adjust headspace if needed by adding more relish.
  • Process half pints for 10 minutes and pints for 15 minutes in a boiling
  • water bath. Adjust time according to your altitude.
