1 pound orecchiette or other short pasta
1/2 cup olive oil
2 garlic cloves, crushed
12 ounces Swiss chard or mustard greens, stemmed
12 ounces baby spinach leaves
1 (15-ounce) can garbanzo beans, rinsed and drained
2 cups small cherry or grape tomatoes
8 ounces ricotta salata cheese, crumbled
2 teaspoons lemon zest
Kosher salt and freshly ground black pepper

Steps:

  • Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes. Drain and reserve about 1 cup of the pasta water.
  • In a large skillet over medium-high heat, heat the oil. Add the garlic and cook until fragrant and lightly browned, about 2 minutes. Using a slotted spoon, remove the garlic and discard. Add the Swiss chard and cook until wilted. In batches, add the spinach and cook until wilted. Add the beans and tomatoes and cook for 5 minutes. Turn off the heat. Add the pasta, 1/2 of the cheese, and lemon zest. Toss well and thin out the sauce with a little pasta water, if needed.
  • Transfer to a large serving bowl and season with salt and pepper. Sprinkle with the remaining cheese and serve.

1 medium shallot, minced
2 small garlic cloves, forced through a garlic press
2 tablespoons extra-virgin olive oil
1 1/2 pounds tomatoes, chopped
1/4 teaspoon hot red-pepper flakes
1/3 cup coarsely chopped basil
1 pound dried orecchiette
3/4 cup ricotta (preferably fresh)
Garnish:
Small basil leaves

Steps:

  • Stir together all ingredients except pasta and ricotta in a large bowl with 3/4 teaspoon salt and 1/2 teaspoon pepper. Let stand, stirring occasionally, 20 minutes.
  • Meanwhile, cook orecchiette in a pasta pot of boiling salted water (3 tablespoons salt for 6 qt water) until al dente.
  • Drain pasta and toss with tomato salsa. Season with salt and pepper and dollop with ricotta.

15 to 20 cherry tomatoes, quartered
3/4 cup fresh ricotta cheese
Bunch fresh cilantro, finely chopped
4 tablespoons extra-virgin olive oil, plus extra for drizzling

Steps:

  • In a pot of boiling water, cook the pasta for about 8 minutes (remove before the 'al dente' stage). While pasta is cooking, heat the olive oil in a frying pan and cook the cherry tomatoes for about a minute. Add salt to taste.
  • Drain the pasta, reserving some of the pasta water.
  • Add the cooked pasta and ricotta cheese to the pan. Ladle in some pasta water - the excess pasta water will break down the ricotta cheese, creating a creamy sauce.
  • Cook pasta in the pan with all the other ingredients for another minute. Top with cilantro, drizzle with extra virgin olive oil and serve immediately.

I got this recipe from a "fresh from the farmer's market" cookbook. The book arranges all of the recipes by the seasons. This is a fantastic winter recipe straight from Italy! If you love pasta try this dish! It's super quick and easy to prepare too!

2 bunches of green chard leaves, about 14 ounces each
1/3 cup plus 1 tablespoon extra virgin olive oil
6 garlic cloves, thinly sliced
1/4 teaspoon hot red pepper flakes
salt and fresh black pepper
1 lb of dried orecchiette
2 ounces ricotta salata

Steps:

  • Separate the chard leaves from ribs with a knife. Wash the leaves and transfer to a pot, with just water clinging to them. Cover and cook over moderate heat until wilted, about 5 minutes. Drain, pressing out excess water, but don't squeeze them dry. Chop coarsely.
  • Heat 1/3 cup of olive oil in a 12-inch skillet over moderate heat. Add garlic and hot pepper flakes and saute until garlic is lightly covered, about 2 minutes. Add greens, season highly with salt and pepper and toss to coat with seasonings. Keep warm.
  • Bring a large pot of salted water to boil over high heat. Add pasta and cook until al dente. Drain, reserving 1/2 cup of the cooking water. Return pasta to pot and add remaining tablespoon of oil. Toss until coated, then add greens and toss again. Grate ricotta salata over the pasta and toss again, adding some reserved water if needed to keep pasta moist.
  • Transfer to warm plates.

1 1/2 pounds plum tomatoes, chopped
1/2 cup coarsely chopped basil
2 tablespoons extra-virgin olive oil
3 garlic cloves, minced
1 medium shallot, minced
1/4 teaspoon hot red-pepper flakes
4 dashes balsamic vinegar
For 1 cup ricotta:
1 quart whole milk
1/2 cup heavy cream
1/2 teaspoon salt
1 1/2 tablespoons fresh lemon juice
For Pasta:
1 pound dried orecchiette (or small shells)
Shredded mix of parmesan and asiago
Special equipment for ricotta: large sieve, fine-mesh cheesecloth

Steps:

  • Salsa: Toss together tomatoes and basil in large bowl. Sauté garlic and shallots in olive oil with red pepper using a small saucepan. Pour hot oil mixture over tomatoes and basil in bowl. Add four or so dashes of balsamic vinegar. Mix and season with salt to taste. Ricotta: Line a large sieve with a layer of heavy-duty (fine-mesh) cheesecloth and place it over a large bowl. Slowly bring milk, cream, and salt to a rolling boil in a 6-quart heavy pot over moderate heat, stirring occasionally to prevent scorching. Add lemon juice, then reduce heat to low and simmer, stirring constantly, until the mixture curdles, about 2 minutes. Pour the mixture into the lined sieve and let it drain up to 1 hour. Less draining time will leave the cheese with more moisture and a creamier texture. Pasta Finish: Cook orecchiette in a pasta pot of boiling salted water (3 tablespoons salt for 6 qt water) until al dente. Drain pasta and toss with salsa. Season with shredded parmesan and asiago. Top with a dollop of ricotta.

1 pound cherry tomatoes
1 cup chopped zucchini
1 medium bell pepper, chopped
½ medium red onion, chopped
2 tablespoons chopped sun-dried tomatoes
1 tablespoon chopped fresh oregano
3 cloves garlic, crushed and chopped
4 tablespoons extra-virgin olive oil, divided, or as needed
1 pinch red pepper flakes, or to taste
sea salt and cracked black pepper to taste
1 (15 ounce) container whole-milk ricotta cheese
1 (16 ounce) package dried orecchiette
4 sprigs fresh thyme, leaves stripped
2 tablespoons chopped fresh basil
2 tablespoons chopped fresh parsley
½ medium lemon, juiced

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine cherry tomatoes, zucchini, bell pepper, onion, sun-dried tomatoes, oregano, and garlic in a large, 3-quart baking dish. Drizzle generously with 2 tablespoons olive oil and season with pepper flakes, sea salt, and black pepper. Stir to coat everything. Make a well in the center of the dish and drop in the ricotta cheese. Drizzle the ricotta with remaining olive oil and give it a generous pinch more of pepper flakes, salt, and black pepper.
  • Bake in the preheated oven for 40 minutes. Switch the oven to broil at 500 degrees F (260 degrees C) and continue to cook until desired blistering and browning occurs, 2 to 4 minutes more.
  • Meanwhile, bring a large pot of lightly salted water to a boil. Cook orecchiette in the boiling water, stirring occasionally until tender yet firm to the bite, 10 to 12 minutes. Drain, reserving 1/2 cup pasta water.
  • Remove the baked ricotta dish from the oven and place onto a wire cooling rack.
  • Add thyme leaves, then stir the ricotta to break it up. Stir in fresh basil, parsley, and lemon juice. Add the reserved pasta water to loosen things up if needed. Taste and adjust salt if desired. Add the orecchiette and stir until everything is coated. Serve.

2 large red bell peppers, stemmed, cored, deribbed and diced
12 cups stemmed and torn spinach leaves, coarsely chopped
1 teaspoon chopped fresh rosemary
1/2 cup rich fowl glaze (see recipe)
1 1-pound can chickpeas, drained and rinsed
1 teaspoon salt, plus more to taste
Freshly ground pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Add the orecchiette and cook until al dente, about 10 minutes. Drain. Meanwhile, heat the olive oil in a large nonstick skillet. Add the bell peppers and saute until softened, about 5 minutes. Stir in the spinach and cook just until wilted.
  • Stir in the rosemary and the fowl glaze. Stir in the chickpeas. Cook for about 2 minutes. Stir in 1 teaspoon of the salt and pepper to taste. Place the orecchiette in a large bowl. Add the spinach-and-chickpea mixture and toss to combine well. Season to taste with additional salt and pepper. Divide the orecchiette among 4 pasta bowls and serve immediately.

Steps:

  • Bring 4 quarts water to a boil in a large pot for cooking the pasta.
  • Bring several cups water to a boil in a small pot for cooking the peas.
  • Add the peas to the small pot of boiling water and cook until tender, about 4 minutes for fresh and about 1 minute for frozen; drain and set aside.
  • Heat the oil in a small skillet.
  • Add in the onion and saute until lightly browned, about 7 minutes.
  • Stir in the peas and cook for 30 seconds.
  • Scrape the onion and peas into a bowl large enough to hold the orecchiette or small shells when cooked.
  • Stir in the ricotta and Parmigiano-Reggiano and salt and pepper to taste.
  • When the water comes to a boil, add salt to taste and the orecchiette; cook until al dente and then drain, reserving 1/2 cup of the cooking water.
  • Toss the pasta with the cheese sauce, adding as much cooking water as needed to thin the sauce.
  • Divide among individual bowls and serve immediately.
