1 cup shredded peeled zucchini
1 teaspoon salt, divided
3-1/2 cups all-purpose flour, divided
1 package (1/4 ounce) quick-rise yeast
5 tablespoons grated Parmesan cheese, divided
1 teaspoon sugar
1 cup warm water (120° to 130°)
1/4 cup butter, softened

Steps:

  • Place zucchini in a small bowl; sprinkle with 1/2 teaspoon salt. Let stand for 5 minutes; drain. , Meanwhile, in another bowl, combine 3 cups flour, yeast, 2 tablespoons cheese, sugar and remaining salt. Add zucchini; toss to combine. Combine water and butter; add to dry ingredients. Stir in remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Divide dough in half; shape each portion into 12 balls. Place in a greased 13x9-in. baking pan. Sprinkle with remaining cheese. Repeat. Cover and let rise in a warm place until doubled, about 45 minutes. , Bake at 375° until golden brown, 20-25 minutes. Remove from pan to a wire rack.

4 cups plain flour
60 g butter
1/4 cup sugar
1/2 cup lukewarm milk
1 cup lukewarm water
30 g compressed yeast (see note)
1 egg yolk
1 teaspoon water, extra
12 tablespoons raspberry jam (approx)
1/3 cup water
1 cup sugar
125 g butter
1/2 teaspoon vanilla

Steps:

  • NOTE: 2 tsp of dry active yeast can be substituted for the compressed yeast. sift dry yeast with flour and sugar, rub in butter, add combined lukewarm milk and water, then proceed as for recipe).
  • cream yeast with 1 tsp of the sugar, add lukewarm milk, let stand 10 to 15 minutes until frothy.
  • sift flour and remainging sugar into bowl, rub in butter until mixture resembles fine breadcrumbs.
  • make well in centre of dry ingredients, add yeast mixture and lukewarm water, mix to a soft dough.
  • turn out on to floured surface.
  • knead 5 minutes.
  • put dough into lightly oiled bowl.
  • cover, stand in warm place 1 hour or until dough has doubled in bulk.
  • punch dough down in bowl.
  • turn out on to floured surface: knead 5 minutes. divide into twelve even portions.
  • knead each portion of dough into a round.
  • put rounds on well greased oven tray, allowing room for spreading.
  • set in warm place 10 minutes or until half doubled in size.
  • brush with combined beaten egg yolk and extra water.
  • bake in hot oven 10 minutes,reduce heat to moderate, bake further 15 minutes or until golden brown.
  • put buns on wire rack.
  • when cold, slit open, fill with raspberry jam and mock cream, dust each bun with a litle sifted icing sugar.
  • Mock Cream:.
  • combine water and sugar.sift over heat to dissolve sugar.bring to boil, remove from heat.
  • when completely cold, beat butter and vanilla until white and fluffy, gradually pour in cold syrup, beating constantly.

3 tablespoons unsalted butter
3 cloves garlic, minced
5 tablespoons heavy cream
¾ teaspoon salt
⅛ teaspoon freshly ground black pepper
2 tablespoons fresh chopped basil

Steps:

  • Grate the zucchini by hand with a box grater or in a food processor fitted with the shredding disk. Wrap the shredded zucchini in a clean kitchen towel and wring out as much excess water as possible. Repeat a few times, replacing the towel if necessary.
  • Melt the butter in a large skillet over medium-high heat. Add the shredded zucchini and garlic and cook, stirring frequently, until the zucchini is tender, about 6 minutes. Turn the heat down to low; add the heavy cream, salt, pepper and basil and simmer until the cream is absorbed. Taste and adjust seasoning if necessary. Serve warm.
  • Make Ahead Instructions: The whole recipe ahead of time. Just cover and refrigerate. You can reheat it in the microwave right before serving.

  • Heat 2 tablespoons olive oil in a large skillet and cook zucchini slices in batches until soft and lightly browned on both sides, 5 to 10 minutes. Add more olive oil as needed. Remove zucchini slices from skillet and drain on paper towels.

7 to 8 cups all-purpose flour
1/2 cup sugar
2 tablespoons active dry yeast
1-1/2 teaspoons salt
1/4 teaspoon baking powder
2 cups sour cream
1 cup water
6 tablespoons butter, cubed
2 large eggs, room temperature, lightly beaten

Steps:

  • In a large bowl, combine 3-1/2 cups flour, sugar, yeast, salt and baking powder. In a small saucepan, heat the sour cream, water and butter to 120°-130°; add to dry ingredients. Beat on medium speed for 2 minutes. Add eggs and 1/2 cup flour; beat 2 minutes longer. Stir in enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down. Turn onto a lightly floured surface; divide in half. Roll each portion into a 23x9-in. rectangle. 3 zucchini, sliced
1 cup all-purpose flour
½ cup white sugar
½ cup very soft butter
2 cups evaporated milk
2 eggs
1 ½ cups white sugar
¼ cup all-purpose flour
1 tablespoon butter
2 teaspoons vanilla extract
1 tablespoon white sugar
½ teaspoon ground cinnamon

Steps:

  • Bring a pot of water to a boil over medium heat, and cook the zucchini until tender, about 5 minutes. Drain the zucchini in a colander set in the sink, and set aside to cool.
  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Combine 1 cup of flour, 1/2 cup of sugar, and 1/2 cup of very soft butter in a bowl until crumbly and well combined. Press the mixture into the bottom of the prepared baking dish.
  • Measure out 3 cups of cooked zucchini, and place into a blender. Pour in the evaporated milk and eggs, and add 1 1/2 cups of sugar, 1/4 cup of flour, 1 tablespoon of butter, and the vanilla extract to the zucchini. Pulse the blender several times to combine the ingredients, and then blend until the filling mixture is pureed, about 1 minute. Pour the mixture over the crust. Combine 1 tablespoon of sugar with the cinnamon in a small bowl, and sprinkle over the filling.
  • Bake in the preheated oven until the middle of the dessert is set, about 45 minutes. Let cool, and chill in refrigerator before slicing.

Inspired by rotolo di zucchine - a ham, cheese and zucchini-based appetizer from Italy - our version uses thinly sliced prosciutto and homemade scallion cream cheese for a light and refreshing dish you can enjoy all summer long. Serve the rolls on their own as a starter or with a simply dressed salad of leafy greens for a complete meal.

Nonstick cooking spray
2 pounds zucchini (4 to 5 small zucchini), trimmed
Kosher salt and freshly ground black pepper
8 large eggs
1/3 cup plus 3 tablespoons Parmesan
6 ounces cream cheese, at room temperature
4 scallions, thinly sliced
4 ounces thinly sliced prosciutto (6 to 7 slices)

Steps:

  • Preheat the oven to 350 degrees F and line a standard-size rimmed baking sheet with parchment. Spray the bottom and sides lightly with cooking spray. Set aside.
  • Shred the zucchini on the large holes of a box grater, then transfer to a large bowl. Sprinkle with a good pinch of salt and several grinds of pepper and toss well. Let sit until softened and starting to release some of its natural juices, about 5 minutes. Transfer the shredded zucchini to a clean kitchen towel or damp cheesecloth, then squeeze out as much excess liquid as possible. Reserving the liquid for another use (see Cook's Note), wipe out the large bowl.
  • Whisk the eggs, 1/3 cup of the Parmesan, 1 1/2 teaspoons salt and several grinds of pepper in the same large bowl until combined. Stir in the zucchini until evenly dispersed throughout the egg mixture. Transfer to the prepared baking sheet, spreading the mixture into a thin, even layer. Bake until just set and opaque (there shouldn't be any browning), about 20 minutes.
  • Let it cool on the baking sheet for 5 minutes, then invert onto a clean kitchen towel (not terry cloth) and carefully remove the parchment. Starting at one of the longer ends, roll up the egg-zucchini shell and the towel together into a spiral. Transfer seam-side down to a wire rack and let cool to room temperature, about 30 minutes.
  • Meanwhile, stir the cream cheese, scallions, a good pinch of salt and remaining 3 tablespoons Parmesan in a small bowl until smooth and combined. Set aside at room temperature until ready to assemble.
  • Unroll the room temperature egg-zucchini shell, then use an offset spatula to spread on the cream cheese mixture into a thin, even layer. Next, lay the prosciutto slices down on top in an even layer (the cheese should be almost completely covered). Reroll tightly without the towel. Refrigerate until chilled through, at least 30 minutes and up to overnight.
  • When ready to serve, use a sharp chef's knife to slice crosswise into 1/2-inch-thick pieces.
