CLASSIC APPLE CRUMB PIE

Steps:
- Make the crust: Whisk the flour, granulated sugar and salt in a large bowl. Rub the butter pieces into the flour using your fingers until pea-size pieces form. Drizzle in the vinegar and ice water; stir gently with a fork to combine. If the dough doesn't hold together when you squeeze it, add more ice water, 1 tablespoon at a time. Turn out the dough onto a piece of plastic wrap and form into a disk; wrap tightly. Refrigerate until firm, at least 1 hour or overnight.
- Roll out the dough on a lightly floured surface into a 13-inch round. Ease into a 9-inch pie plate. Trim the edges, leaving a 1-inch overhang, then tuck the overhanging dough under itself; crimp the edges with a fork. Refrigerate until firm, at least 1 hour or overnight.
- Meanwhile, make the crumb topping: Mix the flour, brown sugar, cinnamon and salt in a medium bowl. Rub the butter into the mixture with your fingers until no longer floury and crumbs form. Freeze until ready to use.
- Make the filling: Place a foil-lined baking sheet on the lowest oven rack; preheat to 400˚. Mix the apples, melted butter, both sugars, flour, lemon juice, cinnamon and salt in a large bowl. Spoon the filling into the chilled pie crust. Pat the crumb mixture on top.
- Bake the pie on the hot baking sheet until lightly browned, about 30 minutes. Reduce the oven temperature to 350˚ and bake until the apples are completely soft when pierced with a paring knife, 60 to 80 more minutes. (If the topping is getting too dark, cover loosely with foil.) Transfer the pie to a rack to cool completely.

- Preheat oven to 375 degrees F (190 degrees C).
- Place sliced apples in a large bowl; sprinkle with lemon juice, if desired. In a small bowl, mix together white sugar, 2 tablespoons flour, cinnamon, and nutmeg. Sprinkle mixture over apples and toss until apple slices are evenly coated. Stir in raisins and walnuts (optional). Transfer mixture into pastry shell.
- In a small bowl ,mix together 1/2 cup flour and brown sugar. Cut in butter or margarine until mixture is crumbly. Sprinkle mixture over apple filling. Cover top loosely with aluminum foil.
- Bake in preheated oven for 25 minutes. Remove foil and bake an additional 25 to 30 minutes, until top is golden brown and filling is bubbly. Cool on a wire rack.

- Line a 9-in. deep-dish pie plate or cast-iron skillet with crust; flute edges. In a large bowl, combine the sugar, cornstarch, cinnamon and allspice. Fold in the apples. - Make the pie dough: Combine flour, salt, and granulated sugar in a food processor, and pulse to blend. Add butter, pulsing until pea-size clumps form. With machine running, add water, 1 tablespoon at a time, until mixture just comes together. Shape dough into a disk. Wrap in plastic wrap, and refrigerate until firm, about 45 minutes.
- Roll out dough into a 15-inch round (1/4 inch thick) on a lightly floured surface. Fit into a 10-inch pie plate. Trim edge, leaving a 1/2-inch overhang, and fold under, pressing onto rim of pie plate. Use your fingers to create a scalloped edge if desired. Refrigerate until firm, about 1 hour.
- Make the crumb topping: Whisk together sugars, flour, cinnamon, and salt. Add butter, and combine with a fork or pastry cutter. Stir in walnuts, and press filling into large clumps with your hands; refrigerate until ready to use.
- Preheat oven to 450 degrees with 2 racks in lower third.
- Make the filling: Whisk together granulated sugar, flour, cinnamon, and salt in a large bowl. Stir in sour cream, eggs, and vanilla until thoroughly combined. Add apples, tossing to coat. Place apple mixture in crust.
- Place an empty rimmed baking sheet on lowest oven rack to catch any drips, then bake pie 10 minutes. Reduce oven temperature to 350 degrees, and bake until apples are golden brown in places, juices are bubbling, and crust is golden brown, about 45 minutes.
- Remove topping from refrigerator, and crumble over hot filling. Bake until topping is browned and set, apples are tender, and bottom crust is thoroughly baked, about 50 minutes. Let cool completely on a wire rack, 3 to 4 hours.

- Preheat oven to 375 degrees. Make crumb topping: In a medium bowl, combine 1 cup flour, butter, brown sugar, and 1/4 teaspoon salt. Work with fingers until large clumps form; freeze.

- Have a 9-in pie shell in a pie plate and on a baking sheet.
- Place oven rack in the lowest position in the oven.
- Heat oven to 450°F.
- Topping: Mix flour, sugars and cinnamon in a medium bowl. cut in butter (or rub with fingertips) until mixture forms moist, coarse crumbs that clump together.
- Filling: Peel, halve and core apples. Cut in 1/8-in.-thick slices.

- Bake 15 minutes. reduce oven temperature to 350 F and bake for 45 minutes longer or until skewwe meets some resistance when center of pie is pierced and topping is golden brown. Cool copletely on wire rack before seving.

- Mix flour and salt in processor. Add butter and shortening; using on/off turns, cut in until mixture resembles coarse meal. Drizzle 2 tablespoons ice water over. Process until moist clumps form, adding more ice water by teaspoonfuls if dry. Gather dough into ball; flatten into disk. Wrap in plastic. Chill 1 hour.
- Roll out dough between 2 sheets of plastic wrap to 14-inch round. Transfer dough to 10-inch-diameter glass pie dish. Fold overhang under. Crimp edges decoratively. Pierce bottom of crust all over with fork. Freeze crust 15 minutes. (Can be prepared 1 day ahead. Keep frozen.)

- Preheat oven to 350°F. Using fingertips, rub all ingredients in bowl until moist clumps form.

APPLE CRUMB PIE
Steps:
- For the pie dough: Pulse the flour with the sugar and salt in a food processor. Add the butter and shortening, and pulse just until the mixture resembles coarse meal. Add the ice water, and process until the dough just starts to form a ball. Transfer the dough to a floured work surface, and knead gently for 1 minute. Pat the dough into a disk, wrap in plastic, and refrigerate for at least 1 hour. (The crust can be prepared a day ahead. Soften slightly at room temperature before rolling out.)
- On a lightly floured work surface, roll out the dough to an 11-inch round, about 1/4 inch thick. Transfer dough to a 9-inch ceramic or glass deep-dish pie pan, and roll a rolling pin over the pan to trim the overhang. Using a fork, prick the bottom of the pie shell all over, and refrigerate until firm, at least 20 minutes.
- Preheat the oven to 350 degrees F.
- For the filling: Toss the apples, lemon juice, sugar, flour, cinnamon, allspice, nutmeg, and salt in a large bowl. Let the apple mixture sit out at room temperature for 10 minutes, then mound it in the pie shell.
- For the topping: Mix the flour, oats, brown sugar, cinnamon, allspice, and salt in a large bowl. Cut the butter into the mixture until it forms pea-sized lumps. Stir in the pecans.
- To assemble: Sprinkle the crumb topping on top of the mounded filling in the chilled pie crust, and place on a sheet tray. (The dish will be so full that you may need to press the topping on around the edges. Juice will definitely overflow the pie plate.) Bake for 1 hour and 10 minutes, until the apples are tender and juicy. Let cool for at least 10 minutes before serving warm. Top each slice with vanilla ice cream.
