CREAMY BRAISED CHICORY/BELGIAN ENDIVE AND CELERY WITH PEAS

Creamy Braised Chicory/Belgian Endive and Celery With Peas image

This recipe would make a lovley side dish to your Christmas of Thanksgiving turkey. In fact the recipe source ('Good Food' magazine December 2005) suggests to serve this at Christmas. It serves 8 as a side dish together with another side dish. However, it can also be served as a main dish as I did. It will serve 3 then. We had this as a main course together with 'wild rice mix' (longgrain rice with wild rice pieces in it). Lovely!

Provided by tigerduck

Categories     Vegetable

Time 1h

Yield 3-8 serving(s)

Number Of Ingredients 8

4 heads chicory lettuce, cut in half lengthways (quarter bigger ones)
4 stalks celery, trimmed and cut into fingers
8 slices pancetta or 8 slices lean streaky bacon
200 ml chicken stock (7fl oz) or 200 ml vegetable stock (7fl oz)
142 ml double cream
140 g frozen peas (or petit pois, 5oz)
salt
pepper

Steps:

  • Heat oven to 200C / fan 180C / 295F / gas 6. Hold one chicory half and a length of celery together and wrap with a rasher of pancetta or bacon to make a bundle. Repeat with remaining veg and place in a shallow ovenproof dish. If you have any leftover celery, pop that in too. Pour in the stock and cream, season to taste and cover tightly with foil.
  • Bake for 40 minutes or until the vegetables are soft. Remove the foil and stir in the peas. Cook for 10 minutes more until the bacon is crisp and the peas just cooked.
  • Serve this as a main dish together with rice (serves 3) or as a side dish (serves up to eight).

BRAISED HEARTS OF CELERY VINAIGRETTE

Braised Hearts of Celery Vinaigrette image

Braised celery has a much milder flavor than raw celery, and needs a robust, lemony sauce. I was introduced to this dish in France and I've always loved it. It's a great starter or side dish, and it keeps for a few days in the refrigerator.

Provided by Martha Rose Shulman

Time 1h

Yield Serves 6

Number Of Ingredients 10

3 celery hearts, cut in half lengthwise, ends trimmed
2 tablespoons extra virgin olive oil
1/2 medium onion, sliced
Kosher salt
4 garlic cloves, sliced
1 cup chicken or vegetable stock
2 tablespoons lemon juice plus 1 large lemon, sliced
1/4 cup dry white wine
Freshly ground pepper
1 tablespoon finely chopped flat-leaf parsley

Steps:

  • Preheat the oven to 400ºF. Bring a large pot of generously salted water to a boil and drop in the celery. Boil until partially cooked, about 3 minutes. Drain, pat dry and lay side by side, cut side up, in a baking dish.
  • Heat 1 tablespoon of the olive oil in medium skillet over medium heat and add the onion and 1/2 teaspoon salt. Cook, stirring, until the onion softens, about 5 minutes, and add the garlic. Stir together for a minute, until fragrant, and add the stock, lemon juice, and the wine. Bring to a boil on top of the stove and pour over the celery. Season the celery with salt and pepper and lay the lemon slices on top. Cover tightly and place in the oven. Braise for 40 minutes, or until the celery is thoroughly tender but still holds its shape. Remove from the heat and allow the celery to cool in the liquid.
  • Using tongs, remove the celery from the pot and cut the halved bunches lengthwise in half again. Transfer to a platter or a wide serving dish. Pour the liquid into a saucepan and bring to a boil. Reduce by about half. Pour over the celery. Drizzle on the remaining tablespoon of olive oil, grind on some pepper, sprinkle on the parsley and serve, or chill and serve cold or at room temperature. Spoon liquid from the platter over each portion.

BRAISED AND GRATINéED CELERY

Braised and Gratinéed Celery image

Provided by Amanda Hesser

Categories     weekday, side dish

Time 30m

Yield serves 6

Number Of Ingredients 8

2 large bunches celery
3 tablespoons finely chopped yellow onion
3 tablespoons butter
1/4 cup chopped pancetta
Salt
Freshly ground black pepper, about 6 twists of the mill
1 cup canned beef broth mixed with 1 cup water
1 cup freshly grated Parmesan cheese

Steps:

  • Trim the tops of the celery and separate the stalks. Lightly peel the stalks to remove the strings. Cut the stalks into lengths of about 3 inches. Drop into 2 to 3 quarts of rapidly boiling water and, 2 minutes after the water returns to a boil, drain and set aside.
  • Preheat the oven to 400 degrees. Put the onion in a saucepan with the butter and sauté over medium heat until translucent but not browned. Add the pancetta, stir and sauté for about 1 minute. Add the celery, a light sprinkling of salt and pepper and sauté for 5 minutes, turning the celery from time to time.
  • Add the broth, cover the pan and cook at a gentle simmer until the celery is tender at the pricking of a fork.
  • Arrange the cooked celery in a baking dish with the inner sides of the stalks facing up. Spoon the sautéed onion and pancetta over the celery, then add the grated cheese. Place the dish on the uppermost rack of the oven and bake for 6 to 8 minutes, or until the cheese has formed a slight crust. Allow to settle for a few minutes, then serve.

CREAMY CELERY GRATIN

Creamy celery gratin image

Let celery take centre stage in this delicious side dish. The wine and stock make an intense sauce, while the nutty breadcrumbs provide a satisfying crunch

Provided by Good Food team

Time 55m

Number Of Ingredients 10

2 celery heads, trimmed
50g butter
1 onion , thinly sliced
2 bay leaves
100g breadcrumb
50g walnut , roughly chopped
75ml white wine
250ml vegetable or chicken stock
100ml double cream
25g grated parmesan (or vegetarian alternative)

Steps:

  • Cut any thick celery stalks in half, trim all of it into thumb-size lengths, then wash and leave wet. Melt half the butter in a large frying pan, then add the celery, onion and bay leaves. Season, cover, then cook over a medium heat for about 30 mins, stirring occasionally to stop the onions catching.
  • Meanwhile, prepare the breadcrumbs. Melt the remaining butter in a separate pan, then toss in the crumbs and walnuts, stirring often until lightly golden and toasted. Set aside.
  • Heat grill to medium. When the celery is tender, turn the heat right up, pour in the wine and stock, then reduce by two-thirds. Pour in the cream, then reduce for a final few mins until you have a syrupy sauce. Check seasoning, tip into an ovenproof dish, then scatter with the breadcrumbs and Parmesan. Grill for 2-3 mins, until the sauce bubbles. Let it sit for 5 mins before serving.
