This is a yummy recipe that any cheese or casserole lover will adore! It's super easy to make, as most casseroles are. It's also a fun recipe to play around with; you could add vegetables (broccoli might be nice) or bacon. Just have fun with it!

3 skinless, boneless chicken breast halves
salt and ground black pepper to taste
2 (8 ounce) packages crescent roll dough, unrolled and divided into triangles
1 (10.75 ounce) can condensed cream of mushroom soup
1 (10.75 ounce) can condensed cream of chicken soup
1 cup milk
1 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Season chicken breasts with salt and pepper. Heat a large skillet over medium heat; pan-fry chicken until no longer pink in the center, about 10 minutes per side. Shred chicken.
  • Spread chicken over crescent roll triangles. Roll triangles, starting with the wider end, around chicken. Arrange rolls on prepared baking dish with the seam sides down. Place rolls into prepared baking dish.
  • Mix cream of mushroom soup, cream of chicken soup, milk, and Cheddar cheese in a bowl; pour mixture over crescent rolls.
  • Bake in preheated oven until bubbly and rolls are golden brown, about 40 minutes.

This easy creamy chicken casserole is my mother's recipe and a family favorite. It's one of our comfort foods and regular easy recipes to make through a busy week. Can easily be prepared in advance, then popped in the oven for a nice hot meal. If making for the first time, add half of the sour cream and taste first. Add more if desired, tasting as you go, to reach desired flavor. Serve over cooked white rice.

1 sleeve buttery round crackers (such as Ritz®), crushed
2 tablespoons butter, melted
4 cups water
1 (32 fluid ounce) container chicken stock
salt and ground black pepper to taste
3 skinless, boneless chicken breast halves, cubed
1 (24 ounce) container sour cream, or to taste
1 (26 ounce) can condensed cream of chicken soup

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Mix the crackers and melted butter together in a bowl; set aside.
  • Bring water and chicken stock to a boil in a pot over high heat. Season with salt and black pepper. Add the chicken. Reduce heat to a simmer, and cook, stirring occasionally, until chicken is no longer pink in the center, 5 to 7 minutes. Drain the chicken; set aside. 1 celery rib, sliced
3 tablespoons butter, divided
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
2/3 cup mayonnaise
1/2 cup sour cream
2 tablespoons dried minced onion
3 cups cubed cooked chicken
1 can (8 ounces) sliced water chestnuts, drained
1 jar (4-1/2 ounces) sliced mushrooms, drained
2/3 cup shredded Swiss cheese
1 tube (8 ounces) refrigerated crescent rolls
1/2 cup sliced almonds

Steps:

  • In a large saucepan, saute celery in 1 tablespoon butter until tender. Stir in the soup, mayonnaise, sour cream, onion, chicken, water chestnuts and mushrooms. Cook and stir over medium heat just until mixture begins to boil. Transfer to an ungreased 13-in. x 9-in. baking dish. 2 -3 cups chicken, cut up and cooked (2-3 breasts)
1 1/2 cups frozen peas (cooked)
1 -1 1/2 cup ham, cut up (fully cooked)
2 (10 3/4 ounce) cans cream of chicken soup (low sodium)
1 cup cheddar cheese (grated) or 1 cup mozzarella cheese, can substitute whatever cheese you like (grated)
1 (11 1/2 ounce) can crescent rolls (any brand)

Steps:

  • Place cooked chicken, peas, and ham in the bottom of a 9x13in pan. Mix in the cream of chicken soup. Spread grated cheese over the top.
  • Pull apart individual triangles from the crescent rolls. Stretch the triangles out as thin as you can. (This will help to not have a half-cooked half-doughy roll) Place triangles on top of casserole. Bake in a 350 degree oven for 15-20 minutes or until the top is a nice golden brown. If you cook until just lightly browned you may have some doughiness underneath.

1 cup shredded cooked chicken
1/2 cup shredded cheddar cheese, divided

  • Separate crescent dough into eight triangles. Combine the chicken and 2 tablespoons cheese; place about 2 tablespoonfuls on the wide end of each triangle. 6 12x6-inch pieces heavy-duty aluminum foil
cooking spray
2 (8 ounce) cans refrigerated crescent rolls
1 large egg white, beaten
2 tablespoons unsalted butter, melted

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Position an oven rack in the bottom of the oven. Turn a 12-cup muffin tin upside down. Wrap the long side of each piece of foil around the bottom rim of one upside-down muffin cup and shape into a 6-inch tall cone to use as a mold. Repeat on alternating cups to make 6 molds; lightly spray foil cones and muffin tin with cooking spray.
  • Unroll crescent dough sheets on a lightly floured surface and gently press perforations together to form two 13x8-inch rectangles. Cut each rectangle into six 1 1/4x13-inch strips. Working with one foil cone at a time, wrap 2 dough strips up and around foil cone, beginning at and base, and slightly overlapping. Pinching to seal the second dough strip to the first, and pinching seams and tip to seal. Repeat with remaining dough strips and foil cones. Brush cones with beaten egg white.
  • Bake in the preheated oven on the bottom rack until golden brown, 12 to 14 minutes. Carefully remove from oven, remove cones (with foil still attached) from muffin tin, and place cones upside-down on a wire rack. Let cool for 5 minutes.
  • Brush with melted butter, and sprinkle with topping of choice, if desired. Let cool completely on wire rack, about 15 minutes. Remove foil from ice cream cones by pinching foil together, gently twisting and pulling. Fill as desired.

3/4 cup shredded cheddar cheese
1/4 cup milk
1 (8 ounce) package cream cheese (softened)
2 Tablespoons butter (melted)
1/2 teaspoon garlic powder
1/3 cup onion (finely chopped)
2 boneless skinless chicken breasts (cooked and cubed)
1/2 teaspoon salt
1/2 teaspoon pepper
1 (8 ounce) package Pillsbury crescent roll dough
2 cups shredded cheddar cheese

Steps:

  • Heat oven to 350°F.
  • Spray a 9 x 9 casserole dish with non stick cooking spray
  • In a saucepan mix cream of chicken soup, cheese, and milk.
  • Heat just until the cheese melts, and then set aside.
  • For the filling, mix in a bowl the soft cream cheese with butter until very smooth, then add in garlic powder.
  • Add in the onion, cooked chicken, and mix well until combined.
  • Season with salt and pepper.
  • Spoon out a little bit of the soup mixture into the bottom of the baking dish.
  • Unroll the crescent rolls.
  • Place 1 heaping Tablespoon chicken mixture (or a little more) on top of each crescent triangle and the big end, then roll up starting at the big end.
  • Then place the crescent rolls seam-side down in the baking dish.
  • Spoon the remaining sauce on top and sprinkle with 2 cups of grated cheese.
  • Bake for 30 minutes.
