CHICKEN PICCATA WITH PENNE PASTA



Chicken Piccata with Penne Pasta image

This one-pot chicken piccata pasta is served with lemon capers and seasonal zucchini. It's a quick and easy Italian meal in less than 30 minutes.

1 pound penne pasta (uncooked)
1 ⅓ pound chicken tenders (cut into 1-inch pieces)
kosher salt (as needed for seasoning)
black pepper (as needed for seasoning)
2 tablespoons olive oil (divided)
1 tablespoon butter
4 cloves garlic (minced)
½ cup shallots (minced)
2 medium zucchini (cut into ¼slices)
4 ounces brown mushrooms (sliced, 2 cups)
2 tablespoons all-purpose flour
½ cup white wine
¼ cup lemon juice (plus zest of 1 lemon)
1 cup chicken broth (unsalted )
3 tablespoons capers (drained)
½ cup Italian parsley (chopped (reserve 1 tablespoon for garnish))

Steps:

  • Cook pasta according to package directions, drain and set aside. Meanwhile, make the chicken piccata.
  • In a medium-sized bowl, season chicken with salt and pepper.
  • Heat 1 tablespoon olive oil in a deep skillet over medium-high heat. Add chicken to the pan in a single layer.
  • Brown chicken on one side for about 3 minutes, then flip and brown the other side for 3 minutes or until cooked through. Transfer to a clean plate and set aside.
  • Reduce the heat to medium and add 1 tablespoon olive oil, 1 tablespoon butter, garlic, and shallots. Saute for 3 minutes, stirring constantly.
  • Add zucchini and mushroom, saute for 4 minutes until just tender.
  • Add flour, stir and cook for 2 minutes. Make a well in the center of the vegetables and add in the wine and whisk until the liquid reduces, about 1 minute.
  • Whisk in lemon juice, lemon zest, and broth. Stir in capers and parsley. When the liquid starts to bubble and thicken after about 3 minutes, add the chicken back into the pan for 1 to 2 minutes to reheat.
  • Stir in about ¾ of the cooked pasta. There will be extra leftovers. Taste and season with more salt and pepper as needed.
  • Serve pasta with additional lemon wedges if desired and sprinkle with more parsley.

An over-the-top delicious chicken piccata! Perfectly pan seared chicken breasts are topped with a rich and creamy, tangy piccata sauce and little bits of salty capers. Such a satisfying dish!

2 (10 - 11 oz each) chicken breasts, (butterflied and halved)
1/3 cup all-purpose flour
Salt and freshly ground black pepper
2 1/2 Tbsp olive oil
1 Tbsp minced garlic
1 1/4 cups + 1 Tbsp low-sodium chicken broth
1 1/2 tsp cornstarch
2 Tbsp fresh lemon juice
1 Tbsp butter
1/4 cup heavy cream
3 Tbsp chopped fresh parsley
2 Tbsp capers, (rinsed)

Steps:

  • After cutting chicken let it rest at room temperature 10 minutes. In a shallow dish whisk together flour, 1/4 tsp salt and 1/4 tsp pepper.
  • Heat olive oil in a 12-inch skillet over medium-high heat. Dredge both sides of chicken cutlets in flour mixture then add to skillet.
  • Sear chicken, without moving, until browned on bottom, about 4 - 5 minutes then flip chicken and cook opposite side until golden brown on bottom and chicken has cooked through (reducing burner temperature slightly as needed and tilting pan slightly to redistribute oil) about 4 - 5 minutes longer (chicken should register 165 degrees in center). Transfer chicken to a plate and keep warm.
  • Add garlic to remaining oil in pan (there should be about 1 tsp oil left if not just add a tsp), saute just until slightly golden.
  • Pour in 1 1/4 cups chicken broth and bring to a boil, while scraping up browned bits from bottom of pan. Allow broth to simmer until reduced by half, about 4 - 5 minutes.
  • Whisk together remaining 1 Tbsp chicken broth with cornstarch, then pour mixture into broth in skillet along with lemon juice. Allow to simmer until thickened slightly then remove from heat.
  • Stir in butter and pour in cream. Season with salt if needed and pepper.
  • Return chicken to skillet. Spoon sauce over chicken, sprinkle with capers and parsley. Serve warm.

1 small white onion, diced

Juice from 1 lemon (about 3 tablespoons of juice)
1/4 cup capers
1/4 cup fresh minced parsley
Salt and pepper, to taste
For the DAD ADD: Buttered Italian Breadcrumbs
2 tablespoons butter
2/3 cup Italian breadcrumbs
1/4 teaspoon salt

  • Cook the pasta: Bring a large pot of heavily salted water to a boil, and add the pasta. Cook until al dente, 8 to 10 minutes or according to package instructions. Scoop out and reserve about 1/2 cup of the pasta-cooking water, and then drain the pasta. Set aside.

4 slices bacon
2 chicken breasts, sliced

2 teaspoons italian seasoning
1 teaspoon paprika
2 cloves garlic, minced
2 cups spinach
4 small tomatoes, diced

1 cup shredded parmesan cheese, plus more for serving
½ teaspoon red pepper flakes, plus more for garnish
10 oz penne pasta, cooked until al dente
3 tablespoons Chopped fresh parsley, for garnish

Steps:

  • In a deep skillet, fry the bacon until crispy. Remove to a paper towel to drain, then chop.
  • In the same skillet, add the chicken and season with salt, pepper, Italian seasoning, and paprika. Cook until no longer pink inside.
  • Add the garlic and cook until softened.
  • Add spinach and tomatoes and cook until the spinach is wilted.
  • Add the cream, Parmesan, an red pepper flakes and bring to a boil.
  • Add the penne and bacon, and stir until fully coated in sauce.
  • Serve with parsley, Parmesan, and red pepper flakes, if desired.

⅓ cup dry white wine

Steps:

  • Butterfly each chicken breast. Lay a piece of parchment paper on top and pound to about ¼ inch (6 mm) thick. Season generously on both sides with salt and pepper.
  • Cut each breast in half lengthwise so you have 4 pieces of chicken.
  • Add the flour to a wide, shallow dish. Dredge each piece of chicken in flour, shaking off the excess.
  • Heat the olive oil in a large skillet over medium heat. Fry the chicken until golden brown, about 3-4 minutes per side. Remove the chicken from the pan and set aside.

¼ teaspoon paprika
1 pound skinless, boneless chicken breast halves, pounded thin and cut into 2-inch pieces

1 cup dry white wine
⅓ cup chicken broth
¼ cup fresh lemon juice

Steps:

  • Whisk together flour, black pepper, and paprika in a shallow dish. Dredge the chicken pieces in the flour mixture, coating evenly; set aside. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, 4 to 5 minutes. Drain well.
  • Remove the chicken pieces to a serving dish and drizzle with a few tablespoons of the sauce and capers. Place the cooked angel hair pasta into the skillet with the remaining piccata sauce and toss to coat.
