½ medium onion, diced
1 clove garlic, minced
2 teaspoons chili powder
1 (5.7 ounce) package Knorr® Rice Sides™ - Creamy Chicken
1 (10 ounce) can low-sodium diced tomatoes and green chilies
1 (16 ounce) can low-sodium refried beans
1 tablespoon chopped fresh cilantro
½ cup shredded cheese

Steps:

  • Cook ground chicken and onion in a heavy pot over medium heat until no longer pink and onions begin to turn translucent, about 6 minutes. Drain excess fat. Stir in garlic and chili powder until chicken is coated and fragrant, 1 minute. Transfer chicken and onion mixture to a bowl.
  • Prepare the Knorr® Rice Sides™ - Creamy Chicken (using the same pot) as directed on package instructions. When the rice is cooked and tender, add the ground chicken, diced tomatoes and green chilies, and refried bean to the rice. Stir until heated through, about 4 minutes. Serve with chopped cilantro and onion and/or shredded cheese.

1 (15 ounce) can cannellini beans, rinsed and drained
1 (15 ounce) can black beans, rinsed and drained
1 (14 ounce) can corn, undrained

1 (1 ounce) package ranch dressing mix
1 tablespoon chili powder
1 teaspoon ground cumin
1 teaspoon onion powder

Steps:

  • Place chicken breasts in the bottom of a slow cooker. Pour cannellini beans, black beans, corn, and tomatoes over the chicken in order listed. Sprinkle ranch dressing mix, chili powder, cumin, and onion powder on top. Place cream cheese on top. Cook on Low until chicken is fork-tender, 6 to 8 hours.

2 chicken breasts
1 teaspoon salt
½ teaspoon pepper
1 egg, beaten
¾ cup flour
1 green pepper, sliced
1 red pepper, sliced
rice, to serve
3 cloves garlic cloves, crushed
1 red chilli, chopped
3 tablespoons soy sauce
2 tablespoons tomato puree
½ cup water

Steps:

  • Season the chicken with salt and pepper.
  • Cut the chicken into thin strips then coat in the egg wash and flour.
  • Shallow fry for a few minutes on each side, until golden brown.
  • Add the peppers and fry for another couple of minutes. Remove the chicken and peppers and set aside.
  • In the same pan, add the garlic, red chilli, soy sauce, tomato purée, and water. Stir and simmer the mixture reduces and is thick and syrupy.
  • Add back in the chicken and peppers and stir well in the sauce.
  • Serve with rice.

1 medium onion, chopped
1-1/2 teaspoons garlic powder
1 tablespoon canola oil
2 cans (15-1/2 ounces each) great northern beans, rinsed and drained
1 can (14-1/2 ounces) chicken broth
2 cans (4 ounces each) chopped green chiles
1 teaspoon salt
1 teaspoon ground cumin
1 teaspoon dried oregano
1/2 teaspoon pepper
1/4 teaspoon cayenne pepper
1 cup sour cream
1/2 cup heavy whipping cream
Tortilla chips, optional

1 onion, sliced
1 red capsicum, sliced
1 green capsicum, sliced
1 teaspoon minced garlic
2 teaspoons hot chili powder (to taste)

750 ml thickened cream
125 g cheddar chilli cheese, grated
1 teaspoon salt (to taste)
1 teaspoon black pepper (to taste)
300 g penne pasta

Steps:

  • cook the pasta according to directions on packet. drain and put aside.
  • in a large deep frypan, in a little oil, saute chicken till cooked through but not brown. drain and put aside.
  • using the same pan, saute the onion, capsicum, onion and garlic until capsicum is tender.
  • add the chicken back to the pan along with the chilli and cumin. stir to coat chicken.
  • add the cream and the cheese. stir until cheese is melted.
  • add in the pasta and stir till combined.
  • simmer until pasta is heated through.
  • serve.

3 -4 tablespoons chili sauce
2 tablespoons clear honey
2 tablespoons olive oil
4 boneless chicken breasts, skin on
2 cloves garlic, crushed
1 lime, cut into 4 wedges

Steps:

  • Make the glaze by mixing together the chilli sauce, honey and oil.
  • Use a sharp knife to make 3-4 slits across the skin side of the chicken breast.
  • Season with salt and pepper, then lift the skin on each breast and tuck under the crushed garlic.
  • Dip the underside of each breast in the glaze until evenly coated.
  • Reserve the rest of the glaze for later.
  • Put the chicken under a pre-heated grill, glazed side up, and cook for 8 minutes until golden and sticky.
  • Turn the breasts over, brush with the rest of the glaze and cook for another 6-8 minutes.
  • Serve immediately with wedges of lime.
