Quick and Creamy Ham Fettuccini image

This elegant and easy Creamy Ham Fettuccine is Angie Smith's own version of an old Italian favorite and has earned top honors with friends and family. "It's my most requested dish," notes the Clarksville, Tennessee cook. "I really like the thicker texture of the sauce, which is great with any hearty pastas, such as whole wheat tortellini or penne-and I sometimes add peas for extra nutrition."

1 package (12 ounces) fettuccine
3 tablespoons finely chopped onion
3 tablespoons butter
2 tablespoons plus 1 teaspoon all-purpose flour
3 cups heavy whipping cream
2 cups fresh broccoli florets
2 cups cubed fully cooked ham
1 cup shredded Parmesan cheese, divided
1/2 to 3/4 teaspoon garlic salt
1/4 teaspoon pepper
1/4 teaspoon dried oregano
1/4 teaspoon ground nutmeg

Steps:

  • Cook fettuccine according to package directions. Meanwhile, in a large saucepan, saute onion in butter until tender. Stir in flour until blended. Gradually stir in cream. Bring to a boil over medium heat, stirring constantly. , Add broccoli. Reduce heat; simmer, uncovered, for 7-10 minutes or until broccoli is crisp-tender, stirring occasionally. Stir in the ham, 1/2 cup cheese, garlic salt, pepper, oregano and nutmeg. Drain fettuccine; serve with sauce. Sprinkle with remaining cheese.

1/4 cup ranch dressing

  • Cook and drain fettuccine as directed on package.

1 (8 ounce) package egg noodles
1 cup cubed fully cooked ham
1 (12 fluid ounce) can evaporated milk
1 (10.75 ounce) can condensed cream of chicken soup
1 small onion, minced
⅓ pound processed cheese food (such as Velveeta®), cubed
½ cup crushed potato chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally, until cooked through but firm to the bite, about 5 minutes. Drain.
  • Mix egg noodles, ham, evaporated milk, cream of chicken soup, onion, and processed cheese food in a 9x13-inch baking dish until evenly distributed.
  • Bake in preheated oven until bubbly and cheese food is melted, about 1 hour. About 5 minutes before end of baking, sprinkle chips atop casserole and return to oven; bake for 5 minutes more.

3 tablespoons olive oil
1 cup thinly sliced shallots (about 2 large)
4 ounces thick-cut ham (about 4 slices), cut into thin strips
1 cup frozen or fresh shelled peas
1 cup heavy cream
1 tablespoon plus 1 1/2 teaspoons finely grated lemon zest (from about 1 large lemon)
2 tablespoons finely chopped fresh flat-leaf parsley, plus more for serving
Freshly ground black pepper
Freshly grated Parmesan (for serving)

Steps:

  • Cook farfalle in a large pot of boiling salted water, stirring occasionally, until al dente; drain, reserving 2 Tbsp. pasta cooking liquid.
  • Meanwhile, heat oil in a medium skillet over medium-high. Add shallots and 1/2 tsp. salt; cook, stirring occasionally, until tender, about 5 minutes (do not brown). Add ham, peas, and cream.   • Cut ham into small chunks.
  • Melt butter in a medium frying pan.
  • Add shallots& ham and cook until golden.
  • Season with salt& pepper, to taste.

4 ounces uncooked fettuccine
1/4 cup butter
1 tablespoon all-purpose flour
1 cup milk
1 egg yolk, beaten
3/4 cup shredded Swiss cheese
1/2 cup chopped fully cooked ham
1/2 cup frozen green peas
1 tablespoon grated Parmesan cheese

Steps:

  • Cook fettuccine according to package directions. Meanwhile, in a heavy saucepan, melt butter; stir in flour until smooth. Gradually add milk. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Remove from the heat. , Stir a small amount of hot mixture into egg yolks; return all to the pan, stirring constantly. Add Swiss cheese; cook and stir over low heat for 1 minute or until cheese is melted. Add ham and peas; cook 2 minutes longer or until heated through. 1 cup fresh mushrooms, sliced
1 cup evaporated skim milk
2 teaspoons cornstarch
1/2 teaspoon dry mustard
1/8 teaspoon salt
1/8 teaspoon pepper
3/4 cup swiss cheese, shredded
1 cup 97% fat-free cooked ham

Steps:

  • Cook fettuccine according to package directions, omitting oil or salt. Drain.
  • Meanwhile, in a medium covered saucepan cook broccoli or cauliflower and mushrooms ina small amount of boiling water for 7 to 8 minutes or until vegetables are tender. Drain.
  • In the same saucepan stir together evaporated skim milk, cornstarch, dry mustard, salt and pepper.
  • Cook and stir over medium heat until thickened and bubbly.
