STIR-FRIED MUSHROOMS AND BROCCOLI
This is a very versatile vegetable dish that can be served over pasta or rice. The recipe calls for fresh mushrooms; however, it's equally good with dried shitake that have been reconstituted. This is from The New American Diet Cookbook.

Steps:
- In a medium saucepan, melt the margarine or butter and add onions, saute 2 minutes.
- Add the mushrooms and stir for 5 minutes, remove from heat and set aside.
- Heat the oil in wok and add broccoli and garlic, cook for 3 minutes, stirring frequently.
- Add the drained water chestnuts and cook an additional 2 minutes longer.
- Blend the cornstarch, sugar and ginger with soy sauce, stir in vegetable stock; add to wok and cook until thickened.
- Reduce the heat and simmer, covered for 5 minutes or until broccoli is just crisp-tender.
- Add the mushroom mixture to the broccoli, stir and serve over pasta, spaghetti squash or rice.
DEEP FRIED BEAN CURD STIR FRIED WITH MUSHROOMS AND BROCCOLI

- Cut the bean curd into 1- x 1-1/2-inch flat pieces. Deep-fry them in hot oil for 2 to 2-1/2 minutes, until the surfaces are somewhat firm and yellow. Drain thoroughly. Soak the mushrooms in boiling water for half an hour. Drain. Discard the stems and cut the caps into halves. Cut the onion into thin slices. Break the broccoli intoindividual florets and cut the stem into 1-inch wedges.Heat the vegetable oil in a large frying pan or wok. When hot, add the onion, ginger, broccoli stems, and mushrooms and stir-fry in the hot oil for 2 minutes, to season the oil. Add the broccoli and stock and continue to stir-fry for 1-1/2 minutes, and then cook, covered, for 1-1/2 minutes. Uncover the pan or wok, pour the sauce ingredients over the contents, and continue to turn and stir-fry all ingredients together for a further 1-1/2 minutes. Serve with rice and other dishes.

DEEP-FRIED BEAN CURD WITH PORK AND VEGETABLES

- Cut each cake of bean curd into 4 cubes, and deep-fry the pieces in oil, heated to 375 degrees, about 5 minutes, or until golden. (When adding bean curd to hot oil, do so gently, using the lid of the wok as a shield to protect yourself from any spattering oil.) Remove the bean curd, drain, cool, and cut into 1/8-inch julienne strips. Set aside. Cut the pork into similar strips, and mix with the next 5 ingredients. Cut the bamboo shoots, celery and ham into similar strips. Soak mushrooms 15 minutes in warm water, discard the stems and cut into similar julienne strips. Mince garlic. Mix cornstarch solution with the next 3 ingredients.
- Using high heat, heat a wok, add the oil, salt and garlic, and stir-fry 10 seconds.
- Add pork, and stir-fry 2 minutes.
- Add bean curd, bamboo shoots, celery and mushrooms, and stir-fry 10 seconds.
- Add stock, cover and boil 2 minutes.
- Add cornstarch solution, stir until thickened, remove from heat, and serve, garnished with Smithfield ham.

BEAN CURD WITH BROCCOLI

Steps:
- Put cornstarch into a cup and slowly add 1/4 cup of the vegetable stock (make sure it is room temperature or cooler) and mix well.
- Add wine, soy sauce and sesame oil.
- Mix well.
- Cut scallion into 1 1/2-inch lengths.
- Heat vegetable oil in a wok over medium heat. When hot, put in ginger and garlic. Stir fry for 10 seconds.
- Put in scallion and broccoli.
- Fry for 1 minute. Add 1/2 cup vegetable stock and the salt. Bring to a simmer.
- Cover and cook over a medium heat for a minute, until broccoli is tender-crisp.
- Remove broccoli with a slotted spoon.
- Turn heat to low and add tofu.
- Let it heat through.
- Add cornstarch mixture.Stir very gently.
- Put broccoli back in wok.
- Serve as soon as the sauce is thick and everything is heated through.

STIR-FRIED BEAN CURD WITH DRIED MUSHROOMS

- 1. Cut each bean curd cake in 6 to 8 pieces or in 1-inch cubes. Cut scallion stalk in 1-inch sections. Soak and slice mushrooms.2. Heat oil. Add salt then scallion, and stir-fry a few times until translucent. Then add bean curd stir-fry gently until heated through (2 to 3 minutes). 3. Add mushrooms, soy sauce and sugar, then gently stir in liquid. Bring to a boil and simmer, covered, 5 minutes over medium heat.NOTE: Since bean curd is fragile, vigorous stir-frying will demolish it. Therefore shake or tilt the pan from time to time to baste the bean curd with hot oil or else separately turn the pieces so they can heat through evenly. VARIATIONS: * For the soy sauce, substitute oyster sauce. * Use 4 or 5 whole scallions, cut in 1-inch lengths. * Before serving, sprinkle bean curd with a few drops of sesame oil or garnish with minced raw scallion
