Portobellos Stuffed With Roasted Vegetables image

Provided by Molly O'Neill

Categories     project, roasts, appetizer

Time 4h

Yield 4 servings

Number Of Ingredients 11

3 small tomatoes, halved
5 tablespoons olive oil
1 tablespoon fresh lemon juice
2 cloves garlic, minced
1 tablespoon fresh thyme, plus more for garnish
1 1/4 teaspoons salt
1/4 teaspoon freshly ground black pepper
4 small (4- to 5-inch) portobello mushrooms, stems removed
4 ounces chanterelle mushrooms
4 ounces shiitake mushrooms, stems removed
2 small red onions, each cut into 8 wedges

Steps:

  • Preheat the oven to 250 degrees. Place the tomatoes cut-side down on a baking sheet and roast for 3 hours. Remove from the oven and slice each half in half again and set aside.
  • Raise the oven temperature to 375 degrees. In a large bowl, whisk together the olive oil, lemon juice, garlic, thyme, salt and pepper to make a vinaigrette. Add portobellos and toss until thoroughly coated. Place portobellos, gill-side down, on a baking sheet. If the chanterelles are large, halve or quarter them; cut the shiitakes into thick slices. Add the chanterelles, shiitakes and onions to the bowl with the vinaigrette and toss until thoroughly coated. Transfer the mushrooms and onions to another baking sheet. Place both baking sheets in the oven and roast until very tender and nicely browned, about 35 to 40 minutes.
  • Place the portobellos gill-side up on a platter. Combine the tomatoes with the mushroom-onion mixture. Divide the mixture among the portobello caps, mounding it in the middle of each. Reheat briefly in the oven if necessary, garnish with thyme and serve immediately.

CREAMY MILLET WITH ROASTED PORTOBELLOS

Creamy Millet with Roasted Portobellos image

Provided by Sara Forte

Categories     Cheese     Dairy     Mushroom     Roast     Thanksgiving     Vegetarian     Fall

Yield Serves 4

Number Of Ingredients 13

1 cup millet
2 1/2 cups milk
Sea salt and freshly ground pepper
1/2 teaspoon freshly grated nutmeg
2 tablespoons fresh thyme leaves
1/2 to 3/4 cup grated Pecorino cheese, plus more for garnish
1/4 cup crumbled Gorgonzola
4 portobello mushrooms, stemmed
2 tablespoons extra-virgin olive oil
2 tablespoons white balsamic vinegar
2 teaspoons herbes de Provence
1 bunch lacinato (Tuscan) kale, stemmed and coarsely chopped
Pinch of red pepper flakes (optional)

Steps:

  • Preheat the oven to 400°F. Rinse and drain the millet. Put it in a heavy pot (enameled cast-iron, if you have one). Add the milk, 2 cups water, and a big pinch of salt. Stir. Bring to a boil over medium-high heat, then reduce to a gentle simmer, cover, and cook, stirring occasionally so the bottom doesn't burn, until tender, 20 to 25 minutes. Stir in the nutmeg and thyme and cook another 3 minutes. The consistency should be like that of a soft polenta with some millet nuggets in it. If it starts to thicken too much or the texture is too coarse, add another 1/2 cup water as it cooks. Stir in both cheeses, taste, and add salt and pepper, if desired. Turn off the heat and leave the lid ajar.
  • In a large bowl, stir together the oil, vinegar, herbes de Provence, and 1/2 teaspoon of salt. Brush both sides of the mushrooms with the dressing and gently toss the kale with the remaining dressing. Put the mushrooms on a rimmed baking sheet, stem side up. Bake until the mushrooms have shrunk down and softened, 10 to 12 minutes. Remove the baking sheet from the oven, spread the kale in the remaining space, sprinkle with the red pepper flakes, and roast until the kale is just softened and crisped a bit, another 5 minutes.
  • To serve, place a generous scoop of the cheesy millet on each plate. Top with a portobello, some roasted kale, some Pecorino, and serve.

CREAMY MILLET CEREAL

Creamy Millet Cereal image

This is a great way to add healthy grains to your diet and get a sweet tooth fix. This recipe is approved by my super picky 15 month old daughter.

Provided by BelleAnna

Categories     Breakfast

Time 30m

Yield 1 cup, 1 serving(s)

Number Of Ingredients 7

1/3 cup millet
2 tablespoons brown sugar
1/4 cup milk
1/2 cup milk
1 tablespoon maple syrup (optional)
1/4 cup heavy cream (optional)
1 tablespoon white sugar (optional)

Steps:

  • Lightly toast millet over medium heat until it smells nutty (about 2 minutes).
  • Add milk and water, bring to a boil, reduce heat to low, cover and simmer for around 25 minutes, until most or all liquid is absorbed.
  • Meanwhile place cream and white sugar into a small bowl and whisk until frothy or you can put in a jar and shake.
  • Add brown sugar and maple syrup when the cereal is cooked to your desired consistency and stir to combine, transfer to a bowl.
  • Pour frothy cream over the top and enjoy!
  • Tips: I also like to add a little butter, nutmeg, and cinnamon or you can use white sugar, skip the maple and add fresh berries (or any fresh fruit), strawberries and cream millet sounds just as yummy :D.

BAKED PORTOBELLOS WITH POTATOES AND SOUR CREAM

Baked Portobellos With Potatoes and Sour Cream image

Provided by Molly O'Neill

Categories     appetizer

Time 1h10m

Yield 4 servings

Number Of Ingredients 10

1 1/2 pounds (4 medium) Yukon gold potatoes, peeled and thinly sliced
2 tablespoons olive oil, plus more for brushing the mushrooms
1 3/4 teaspoons salt, plus more salt to taste
3 eggs
1/3 cup sour cream, plus more for garnish
1 teaspoon chopped thyme leaves
Freshly ground black pepper
2 cups Portobello Caviar, prepared without parsley (see above)
4 medium (5-inch) portobello mushroom caps
Chopped parsley for garnish

Steps:

  • Preheat oven to 425 degrees. Toss the potatoes with the oil and 1 teaspoon of salt and transfer them to a greased baking sheet large enough to hold them in a single layer. Bake, turning the potatoes once, until lightly browned, 20 to 25 minutes. Set aside.
  • Lower temperature to 400 degrees. Whisk together the eggs, 1/3 cup sour cream, thyme, 3/4 teaspoon salt and a few grinds of pepper. Stir in the portobello caviar. Brush the mushroom caps with olive oil, season them on both sides with salt and place them gill-side up on a greased baking sheet. Lay the potato slices over the mushrooms, letting some hang over the edges of the mushrooms like petals of a flower. Divide the caviar mixture evenly into 4 parts, mounding 1 part in the middle of each mushroom cap. Bake until the filling is set and the mushroom caps are very tender, about 30 minutes. Garnish each mushroom with a dollop of sour cream and parsley and serve.
