This colorful pasta dish is a quick weeknight meal.

8 ounces (1 1/4 cups) uncooked orzo pasta
1/4 cup Land O Lakes® Butter with Olive Oil & Sea Salt
1 1/2 teaspoon finely chopped fresh garlic
1 (6-ounce) package (6 cups) fresh spinach, stems removed
3/4 teaspoon salt
1/4 teaspoon pepper
1 1/4 cups shredded Parmesan cheese
1 cup cherry tomatoes, cut in half
1 teaspoon freshly grated lemon zest

Steps:

  • Cook pasta according to package directions; drain. Return to pan; keep warm.
  • Melt 2 tablespoons Butter with Olive Oil & Sea Salt in 10-inch skillet until sizzling. Add garlic; cook, stirring occasionally, 2 minutes. Add spinach, salt and pepper; continue cooking, stirring occasionally, 2-3 minutes or until spinach is wilted. Remove from heat.
  • Add remaining 2 tablespoons Butter with Olive Oil & Sea Salt and 1 cup Parmesan to cooked pasta in pan; stir until combined. Add cooked spinach, tomatoes and lemon zest; mix well. Spoon mixture into serving dish; top with remaining 1/4 cup Parmesan. Serve immediately.

A Creamy Spinach Orzo Pasta recipe is a great way to use up fridge and pantry items. Serve this orzo pasta as a side dish, or to compliment your favorite protein. It's a super quick and easy pasta recipe!

Number Of Ingredients 10

12 to 16 ounces orzo pasta
1 tablespoon salt
2 tablespoons olive oil
2 to 3 garlic cloves, thinly sliced
1/2 teaspoon crushed red pepper flakes
1 to 2 ladles pasta water, divided
1 cup heavy whipping cream
1 teaspoon black pepper
3/4 Parmesan cheese, freshly grated, divided
12 ounces fresh baby spinach

Steps:

  • Boil water for the pasta. Do not forget to salt the water.
  • Drop the pasta.
  • In a separate pan on medium heat, add the olive oil, garlic and crushed red pepper.
  • Allow to cook for a minute or two before adding a ladle of the pasta water. Cook for another minute.
  • Add the heavy whipping cream. Cook for another minute to start thickening.
  • Season with black pepper.
  • Whisk in about 1/3 cup of the cheese.
  • Add the spinach to wilt.
  • Add a touch more pasta water and another 1/3 cup of cheese. Cook another minute.
  • Add the pasta directly from the pot with a slotted spoon.
  • Season again with a touch more black pepper and crushed red pepper (optional)
  • Mix.
  • Check the sauce. Too thick? Add a touch more pasta water, and/or cream. Too thin, add small amount of cheese.
  • Garnish with the remaining cheese.
  • SERVE immediately and ENJOY!

1 whole garlic bulb
1 teaspoon plus 1 tablespoon olive oil, divided
1-3/4 cups uncooked whole wheat orzo pasta
2-1/2 cups chicken stock
3 ounces reduced-fat cream cheese, cubed
1 package (9 ounces) fresh spinach, trimmed and chopped
1/4 cup shredded Asiago cheese
1/4 cup fat-free milk
1 teaspoon salt-free garlic pepper seasoning blend
1/4 teaspoon salt
2 tablespoons minced fresh parsley

Steps:

  • Preheat oven to 425°. Remove papery outer skin from garlic bulb but do not peel or separate the cloves. Cut off top of garlic bulb, exposing individual cloves. Drizzle cut cloves with 1 teaspoon oil. Wrap in foil. Bake 30-35 minutes or until cloves are soft. Unwrap. When cool enough to handle, squeeze garlic from skins., In a Dutch oven, heat remaining oil over medium-high heat. Add pasta; cook and stir 2-3 minutes or until lightly browned. Add stock; bring to a boil. Reduce heat; simmer, covered, 10-12 minutes or until pasta is tender and liquid is absorbed., Stir in cream cheese until melted. Add spinach, Asiago cheese, milk, seasoning blend, salt and roasted garlic; cook and stir until spinach is wilted. Sprinkle with parsley.

1 Tbsp. oil
2 cloves garlic, minced
1-1/2 lb. boneless skinless chicken breasts, cut into thin strips
4 cups loosely packed baby spinach leaves, chopped
6 oz. (3/4 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
1 WYLER'S Instant Bouillon Chicken Flavored Cube
2 Tbsp. chopped drained oil-packed sun-dried tomatoes
2 Tbsp. chopped fresh oregano
1 pkg. (4 oz.) crumbled feta cheese

Steps:

  • Cook pasta as directed on package, omitting salt.
  • Meanwhile, heat oil in large skillet on medium-high heat. Add garlic; cook and stir 1 min. Add half the chicken; cook 2 min. or until lightly browned, stirring frequently. Remove from skillet. Repeat with remaining chicken; return all chicken to skillet. Add spinach; cook and stir 1 min. or until spinach starts to wilt.
  • Drain pasta, reserving 3/4 cup of the cooking water. Mix reserved water with cream cheese and bouillon in small bowl until blended. Add to chicken with sun-dried tomatoes; mix well. Cover; cook on low heat 5 min. or until chicken is done. Stir in pasta and oregano; cook, uncovered, 1 min. or until heated through, stirring frequently. Stir in feta cheese.
