My husband really doesn't care for plain rice. So I combine it with lots of flavorful ingredients like ground beef, vegetables and canned soups. Now I can't make this often enough for him! - Beth Deters, Baileyville, Kansas

2 pounds ground beef
1 large onion, chopped
1 cup chopped cabbage
1 cup chopped celery
1 cup frozen corn
1 cup frozen peas
1 cup water
2-1/4 cups cooked rice
1 can (10-3/4 ounces) condensed cream of celery soup, undiluted
1 can (10-3/4 ounces) condensed cheddar cheese soup, undiluted
1-1/3 cups milk
4 bacon strips, cooked and crumbled
Salt and pepper to taste

Steps:

  • In a skillet, cook beef and onion until the meat is no longer pink; drain. Add the cabbage, celery, corn, peas and water. Bring to a boil. Cover and simmer for 5-10 minutes or until vegetables are tender. In a bowl, combine beef mixture, rice, soups, milk, bacon, salt and pepper; mix well. Transfer to a greased 13-in. x 9-in. baking dish. Cover and bake at 350° for 30 minutes or until heated through.

1 1/2 cups long-grain rice
1/2 teaspoon salt
1 tablespoon vegetable oil
1 onion, finely chopped
1 tablespoon curry powder (or to taste)
1 cup coconut milk
90 g broccoli, cut into florets
125 g beans, cut into short lengths
1 carrot, cut into small cubes
250 g pumpkin, cut into small cubes

Steps:

  • Place rice in a large microwave-safe bowl with 3 cups boiling water and the salt. Cook on HIGH 12 - 14 minutes.
  • (Do not cover the rice or it will boil over.) Set aside. Place the oil and onion in a large dish and cook on HIGH for 2 minutes.
  • Stir in the curry powder and cook on HIGH 30 seconds.
  • Pour coconut milk into the dish so that it is well combined.
  • Add the vegetables, cover and cook on HIGH for 10 minutes; stir after 5 minutes.
  • Reheat the rice and fluff up with a fork.

2 tablespoons vegetable oil
8 large button mushrooms, cut into 1/4-inch slices (about 2 cups)
1 red bell pepper, cored, seeded and cut into 1/4-inch dice (about 1 1/4 cups)
1 small yellow onion, finely diced (about 1 cup)
2 cups long-grain rice
1 tablespoon kosher or fine sea salt
4 scallions, trimmed and thinly sliced (about 1/2 cup)

Steps:

  • Heat the oil in a Dutch oven or other heavy 3-quart pot over medium-high heat. Add the mushrooms, red pepper and onion and cook stirring, until the vegetables are softened, about 4 minutes.
  • Add the rice and the salt and stir to coat the rice with oil. When the rice starts to look "chalky," pour enough water into the pan to cover the rice by 1-inch. Raise the heat to high, bring the water to a boil, and boil until the level of the water meets the level of the rice.
  • Reduce the heat to very low, give the rice a very thorough stir, and cover the pot. Cook until the rice is tender but with a little bite, about 20 minutes. Do not uncover the pot or stir the rice while it cooks. Fluff with a fork before serving. Stir in the scallions and transfer to a serving bowl.

2 Tbsp. flour
1 Tbsp. butter
1-3/4 cups fat-free reduced-sodium chicken broth, divided
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, cubed
1 cup water
2 cups (1/2 of 16-oz. bag) frozen vegetable blend (broccoli, carrots and cauliflower)
2 cups MINUTE White Rice, uncooked
1 Tbsp. chopped fresh parsley

Steps:

  • Coat chicken in flour. Melt butter in large skillet on medium heat. Add chicken; cook 6 to 7 min. on each side or until cooked through (170°F). Remove chicken to plate; cover to keep warm.
  • Add 3/4 cup of the broth to skillet; stir with wooden spoon to scrape up browned bits from bottom of skillet. Add cream cheese; cook until melted, stirring constantly. Simmer 2 min. until sauce thickens slightly. Return chicken to skillet. Cook until heated through, turning chicken over to coat with sauce.
  • Meanwhile, bring remaining broth and water to boil in medium saucepan on high heat. Add vegetables; simmer, uncovered, 3 min. or until vegetables are crisp-tender. Stir in rice; return to boil. Cover; remove from heat. Let stand 5 min. or until liquid is absorbed. Spoon chicken and sauce over rice mixture; sprinkle with parsley.
