Number Of Ingredients 10

40 1/2-inch-thick diagonal baguette slices
2 tablespoons olive oil
1 8-ounce package cream cheese, room temperature
1/2 cup mayonnaise
2 tablespoons Dijon mustard
1 pound cooked shrimp, peeled, deveined, coarsely chopped
1/2 cup minced green onions
1 1/2 tablespoons chopped fresh dill
1 teaspoon grated lemon peel
Chopped fresh parsley

Steps:

  • Preheat broiler. Lightly brush 1 side of each baguette slice with oil. Arrange on 2 baking sheets. Broil until lightly toasted, about 1 minute.
  • Using electric mixer, beat cream cheese, mayonnaise and mustard in large bowl to blend. Mix in shrimp, green onions, dill and lemon peel. Season with salt and pepper. (Can be made 1 day ahead. Store toasts in airtight container at room temperature. Cover shrimp mixture and chill.)
  • Spread 1 tablespoon shrimp mixture atop each toast. Arrange crostini on baking sheets; broil until shrimp mixture begins to brown, about 2 minutes. Top with parsley.

Creamy Zucchini Crostini image

This is a wonderful appetiser, originally from famous German chef Tim Mälzer. It is fresh and light with a lovely zucchini garlic onion taste. Without the bread, the zucchini cream can also be used as a dip for many other uses. I hope you enjoy. :)

Number Of Ingredients 7

1 tablespoon olive oil
2 medium zucchini, diced (about 300 g)
1 onion, chopped
1 garlic clove, minced
3 tablespoons goat cheese (cream cheese)
8 slices baguette, toasted
20 g parmesan cheese, shaved

Steps:

  • Heat the olive oil in a non-stick skillet.
  • Add the zucchini, onion and garlic. Sautee for about 5-7 minutes or until everything is tender and most liquid has evaporated. Remove from heat.
  • Stir in cream cheese. Mash with a potato masher until creamy, but not totally smooth.
  • Scoop the zucchini cream onto the baguette slices and top with shaved parmesan cheese.
  • Serve and enjoy.

  • Heat a large skillet over medium-high heat. Add the olive oil, 1 tablespoon of butter, the shrimp and Cajun seasoning. Cook for about 4-5 minutes, or until cooked through. Remove the shrimp from the skillet and set aside.
  • To the same skillet, add the remaining 1 tablespoon of butter, zucchini, and wine. Stir, and cook until wine evaporates, about 5-6 minutes.
  • Add the roasted peppers and garlic. Cook for about 3-4 minutes. Season with salt and pepper to taste.
  • Return the shrimp to the skillet. Add the heavy cream, Parmesan, and parsley. Stir everything well, and cook for another 3-4 minutes.
