1 can (8 ounces) unsweetened crushed pineapple
1 small firm banana, sliced
1/2 cup fresh or frozen raspberries
1 envelope instant maple and brown sugar oatmeal
1/4 cup miniature semisweet chocolate chips
4-1/2 teaspoons butter, melted
Vanilla ice cream, optional

Steps:

  • In a small bowl, combine the pineapple, banana and raspberries. Transfer to a lightly greased 2-cup baking dish. In a small bowl, combine oatmeal and chocolate chips. Sprinkle over fruit; drizzle with butter. Bake at 350° for 30-35 minutes or until golden brown. Serve with ice cream if desired.

2 cups crushed graham crackers
½ cup margarine, melted
½ cup margarine
2 cups confectioners' sugar
2 eggs
4 tablespoons cornstarch
1 tablespoon vanilla extract
3 bananas
¼ cup lemon juice
1 (20 ounce) can crushed pineapple in heavy syrup, drained
1 (8 ounce) container frozen whipped topping, thawed

Steps:

  • Combine graham cracker crumbs and melted margarine, and pat into bottom of 9x13-inch pan.
  • In medium, non-stick saucepan over medium heat, combine remaining margarine, confectioners' sugar, eggs, corn starch and vanilla. Bring to a boil, stirring frequently. Continue stirring, reduce heat and simmer 8 to 10 minutes. Let cool, then spread over crust.
  • Peel and slice bananas, dipping each piece in lemon juice to prevent browning, and layer over custard mixture. Layer pineapple on top of bananas. Cover all with whipped topping. Keep refrigerated until serving.

1 1/2 teaspoons double-acting baking powder
3 tablespoons granulated sugar
1 teaspoon ground ginger
3/4 cup chopped fresh pineapple, drained
3/4 cup chopped banana
1/2 cup milk
1 large egg, beaten lightly
vegetable oil for deep-frying
confectioners' sugar for dusting the fritters

Steps:

  • In a small bowl sift together the flour, the baking powder, the granulated sugar, the ginger, and a pinch of salt. In a bowl combine well the pineapple, the banana, the milk, and the egg, add the flour mixture, and stir the batter until it is combined. In a kettle heat 1 1/2 inches of the oil until it registers 375°F. on a deep-fat thermometer, drop the batter by tablespoonfuls into the oil in batches, and fry the fritters, turning them, for 1 to 1 1/2 minutes, or until they are golden. Transfer the fritters with slotted spoon to paper towels to drain and sift the confectioners' sugar over them.

Pinch of salt
2 eggs
2 tablespoons water
2 tablespoons milk
1/8 teaspoon grated lemon zest
Dash of nutmeg
Peanut oil for deep frying
2 pineapples
3 tablespoons confectioners' sugar with a pinch of cinnamon

Steps:

  • Note: batter needs to sit for a day in the refrigerator before cooking Place the flour, sugar, and salt in a medium-sized bowl. Separate the eggs. Make a well in the ingredients and place the egg yolks in the well. Mix, adding the water and, gradually, the milk. Beat the egg whites to stiff peaks and gently fold them into the mixture. Add the lemon zest and the nutmeg, stirring to mix them in. Cover the bowl with a damp clean dish towel and place it in the refrigerator for a day.
  • When ready to prepare the fritters, heat the oil to 375 degrees in a heavy Dutch oven or deep fryer. Peel the pineapple, core and cut into 1-inch pieces. With tongs, dip the pieces into the batter and fry them until they are golden brown on each side. Remove the fritters with a slotted spoon and let them drain on absorbent paper. Place them on a serving platter and sprinkle them with both the confectioners' sugar and cinnamon by placing them into a small sieve and shaking it over the fritters. Serve warm

1 (8 ounce) can crushed pineapple in juice, drained and juice reserved
1 cup self-rising flour
½ cup milk
1 egg
2 cups white sugar
2 tablespoons confectioners' sugar for dusting, or as needed

Steps:

  • Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
  • Whisk pineapple, flour, milk, and egg together to form a light and fluffy batter.
  • Bring reserved pineapple juice to a boil in a small saucepan. Add white sugar and stir to dissolve; lower heat. Simmer until thickened glaze forms, about 10 minutes. Remove from heat and cool to room temperature, about 15 minutes.
  • Drop spoonfuls of batter in the hot oil, 2 to 3 pieces at a time, and fry until golden brown, 3 to 4 minutes. Drain on paper towels.

1 cup warm water (105°F to 115°F)
1 large egg
2 tablespoons vegetable oil
1 teaspoon dry yeast
1 cup all purpose flour
1/2 cup sweetened shredded coconut
1 tablespoon sesame seeds
1/4 teaspoon ground nutmeg
4 large bananas
Vegetable oil (for frying)
Honey
Vanilla ice cream

Steps:

  • Whisk 1 cup warm water, egg, and 2 tablespoons oil in large bowl to blend. Add yeast, then flour, whisking until smooth. Cover and let stand at room temperature until batter has almost doubled in volume, about 2 hours. Stir in coconut, sesame seeds, and nutmeg. Cut bananas on deep diagonal into eighteen 1/2-inch-thick slices. (Reserve any remaining bananas for another use.) Add banana slices to batter; stir gently to coat. (Can be prepared up to 1 day ahead. Cover and chill.)
  • Pour vegetable oil into heavy medium saucepan to depth of 1 1/2 inches. Attach deep-fry thermometer and heat oil to 350°F. Insert fork into 1 banana slice and transfer to oil. Repeat with 5 banana slices. Fry until crisp and golden on all sides, about 3 minutes. Using slotted spoon, transfer fritters to paper-towel-lined plate to drain.
