FRIED CLAMS WITH TARTAR AND COCKTAIL SAUCES

Steps:
- Combine the corn flour, all-purpose flour, seafood seasoning, salt and pepper in a large bowl. Whisk together the milk and egg in a small bowl and season with salt and pepper.
- Add enough oil to a heavy-bottomed pot fitted with a deep-frying thermometer to reach 4 inches up the sides. Heat the oil to 365 degrees F and line a sheet tray with paper towels.
- Dip the clams in the milk, then into the seasoned flour. Add 8 to 10 clams to the oil at a time and fry in batches until they are crispy and golden brown, 45 seconds to 1 minute. Remove the clams to the lined sheet tray. Continue frying the remaining clams.
- Sprinkle the clams with salt and pepper and transfer to a platter. Serve with the Tartar and Cocktail sauces and lemon wedges.
- Stir together the mayonnaise, relish, dill, lemon juice, salt and pepper in a medium bowl and refrigerate at least 1 hour and up to 2 days.
- Stir together the ketchup, chile paste, horseradish, lemon juice, Worcestershire, salt and pepper in a medium bowl and refrigerate until serving, or up to 1 week.
CRISP-FRIED CLAMS WITH SPINACH TARTAR SAUCE IN PITA POCKETS

- In a small bowl combine well the spinach, the mayonnaise, the pickle, the capers, the mustard, the lemon juice, and salt and black pepper to taste and chill the tartar sauce, covered.
- In a large saucepan of boiling water blanch the clams for 2 minutes, drain them in a colander, and rinse them under cold water. Remove the clams from the shells, peeling off and discarding the dark membranes, rinse them briefly under cold water, and drain them well. In three separate shallow dishes have ready the flour, the eggs beaten with the salt and cayenne, and the cornmeal. Dredge the clams, 1 at a time, in the flour, shaking off the excess. Dip them in the egg mixture, letting the excess drip off, and dredge them in the cornmeal, transferring them as they are coated to a sheet of wax paper. In a kettle heat 1 inch of the oil to 375°F. on a deep-fat thermometer, in it fry the clams in 2 batches for 1 minute, or until they are crisp, and transfer them with a slotted spoon to paper towels to drain. Cut 1/4 off one end of each pita, open the pita to form a pocket, and divide the fried clams among the pita pockets. Spoon some of the tartar sauce into each pocket, spreading it over the clams.
FRIED SPICY IPSWICH CLAM ROLLS
Steps:
- Preheat the fryer.
- Season the clams with Creole seasoning. In a mixing bowl, add the clams, hot sauce and milk. Cover with plastic wrap and refrigerate for 1 hour. Remove and drain completely. In a shallow bowl, combine the cornmeal and flour. Season with Creole seasoning. Dredge the clams in the seasoned flour, coating each clam completely. Fry the clams, in batches until crispy and golden brown, 2 to 3 minutes. Remove the clams from the oil and drain on a paper-lined plate. Season with Creole Seasoning.
- To assemble, spread the tartar sauce on both sides of each roll. Arrange 1 dozen clams on 1 side of each roll. Top the clams with Maw-Maw's Slaw and serve.
- Combine all ingredients thoroughly.
- Place the egg, mustard, onions, garlic, lemon juice, parsley, capers and green onions in a food processor and process until smooth. Season with salt and cayenne. With the processor running, pour the oil through the feed tube in a steady stream. Cover and let sit for 1 hour in the refrigerator before using. Best if used within 24 hours.
- Place the white cabbage, red cabbage, greens, red onions, green onions, and parsley in a large salad bowl. In a small bowl, combine the mayonnaise, mustard, salt, black pepper, cayenne, and sugar. Mix well. Add the mixture to the greens and toss to mix thoroughly.
- Cover and refrigerate for at least 1 hour. Serve chilled. The slaw can be made 3 hours ahead.
SPINACH AND BABY CLAM SAUCE
This is a heavily modified recipe from "The New Italian Cooking" book by Margaret and G. Franco Romagnoli. Theirs does not have spinach, and I needed to add vegetables to the family's meals. I've changed it enough that when asked for the recipe I cannot copy it from the book.

- Thaw, drain and squeeze chopped spinach. If you don't get the spinach mostly dry, the sauce is wet, runny and rather icky. !Raw spinach does not work in this recipe!
- Melt butter in sauce pan.
- Add olive oil and garlic.
- Add spinach, cook until warmed through (approximately 5 minutes).
- Add clams and juice, simmer for 5 minutes.
- remove from heat, serve over 3/4 pound pasta noodles with bread crumbs and cheese as toppings.

BATTERED FRIED CLAMS
These fried clams are nothing like the ones you find frozen in the supermarket, these are the real McCoy. I like to serve them with my KFC Coleslaw Recipe #110948, chips, or onion rings and french fries and of course tartar sauce is an absolute must! AYUH thats the truth. Note:the cook time is 1-1/2minutes PER BATCH

- In a medium sized bowl mix milk, egg yolk, butter, and salt. Sift the flour into the milk mixture stir until smooth. In a small chilled bowl beat the egg white with an electric mixer until soft peaks form. (For best results: refrigerate the bowl, mixer blade and egg white prior to mixing) Fold the beaten egg white into the milk mixture.
- In a large saucepan or deep fat fryer heat oil to 375'. Poke each clam with fork. Dip clams into the batter. Fry a few at a time around 1-1/2 minutes or until golden brown, turning once. Remove with slotted spoon, drain on paper towels or on brown paper bags. Keep warm in a 300' oven while frying the remaining clams.
- Serve with tartar sauce.
CLAMS IN SPINACH AND GARLIC BROTH

- Place chicken stock in 4-quart saucepan. Add 3 cups spinach, and cook until wilted, about 2 minutes. Use slotted spoon to transfer spinach to blender, with 1/2 cup hot chicken stock. Puree.
- Place wine in 4-quart saucepan, add clams, cover and cook over medium heat until clams open, 3 to 5 minutes. Drain clams, and strain liquid into chicken stock. Set clams aside.
- Add parsley, watercress, basil, chives and remaining spinach to blender. Puree. Add garlic and shallots. Puree. Add butter. Puree, and pour mixture into chicken stock. Add lemon juice, Pernod and cream. Season to taste with pepper.
- Add clams to broth, reheat and serve.

- In a shallow bowl, combine 3/4 cup cornmeal and 1/4 cup flour with the water, forming a batter. In another bowl, combine the remaining cornmeal and flour., Dip clams in batter; shake off excess.
