CRISPY TURNIP 'FRIES'
My daughters and I are on a low-carb diet and were looking for something to curb our 'French fry' cravings. I've heard that turnips can be made into some great 'fries.' I experimented with it and came up with this. You can add whatever spices you'd like.

Steps:
- Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with a piece of aluminum foil and lightly grease.
- Peel the turnips, and cut into French fry-sized sticks, about 1/3 by 4 inches. Place into a large bowl, and toss with the vegetable oil to coat. Place the Parmesan cheese, garlic salt, paprika, onion powder in a resealable plastic bag, and shake to mix. Place the oiled turnips into the bag, and shake until evenly coated with the spices. Spread out onto the prepared baking sheet.

- Rinse the vegetables.
- Dip it in Ice cold water for at least 30 minutes.
- Now drain the water completely.
- Pat the chips dry individually with a clean kitchen towel to remove any excess water.
- Pre-Heat the oven at 180 deg C / 360 Deg F.
- In the meantime in separate bowls add the cut potato, sweet potato, turnip, and carrot.
- Now add a teaspoon of oil in each and salt to taste.
- Coat them evenly.
- In each bowl, one can either add black pepper or peri spice powder or just leave as is.
- In a baking sheet, spread out the vegetables as evenly as possible.
- Bake the vegables for 25-30 minutes turning in between.
- Thick cut veggies will need more time.
- Once you feel the chips are baked and getting brown, turn the heat on to 200 Deg C / 400 Deg F and broil the chips for the last 5 minutes.
- Broil means you just keep the top rod on, it helps in getting the edges brown and crisp.
- Once done, remove and serve it hot with Tomato Ketchup.

- Clean potatoes well and cut into sticks. You can peel the potatoes if you want but honestly, the crispy skins are the best part! Aim for ¼ to ½ thick sticks or anywhere in between. The more uniform your french fries, the more evenly they'll bake.
- Place cut potatoes in a bowl filled with hot water. Doesn't need to be boiled or anything, just really hot tap water will work. Let sit for 15 to 30 minutes to remove some of the starch.
- Remove potatoes from water and drain well. Dry potatoes thoroughly. My favorite method is with a salad spinner and really absorbent towels. The more moisture you remove, the crispier your oven baked french fries will be. (The salad spinner also works great for quickly drying freshly rinsed herbs!)
