1 kg / 2 lb chicken thighs (5 pieces, bone in, skin on), or drumsticks or wings (any combination) (Note 1)
1/4 cup (65 ml) balsamic vinegar
2 1/2 tbsp / 50 ml soy sauce (, all purpose or light (not dark soy sauce))
1/4 cup (85 g / 65 ml) honey
1/4 cup (45g) brown sugar (, loosely packed (Note 2))
2 garlic cloves, minced ((or 1 1/2 tsp garlic paste from jar))

Steps:

  • Preheat oven to 180C/350F.
  • Line a baking dish with foil and baking / parchment paper.
  • Mix together Sauce in a bowl.
  • Place chicken in baking dish, skin side down for thighs and wings. Make sure the pan is big enough so the chicken is squished up next to each other (sauce may not reduce enough), but not so large that there is more than 4"/10 cm between every piece of chicken (sauce may reduce too much).
  • Pour over Sauce. Bake 30 minutes. Turn chicken over, spoon over sauce.
  • Bake 20 minutes or until chicken is cooked through. The Sauce should have thickened.
  • Stand for 5 minutes, then spoon Sauce over chicken and serve.

4 boneless, skinless chicken breasts (6 oz each)
1/4 cup olive oil
2 tbsp soy sauce
1/2 cup balsamic vinegar
2 cloves garlic, minced
2 tsp dried oregano
1/4 tsp black pepper
1/4 tsp salt (or more to taste)

Steps:

  • If the chicken breast is too thick, you can pound it with a meat mallet until it is 1/2-inch thick.
  • Combine olive oil, balsamic vinegar, soy sauce, garlic, oregano and black pepper in a bowl.
  • Place chicken in a baking dish. Pour the marinade over it, making sure it is evenly coated. Let is sit for 10 minutes if you have the extra time.
  • Preheat oven to 400 F. Bake chicken at 400 F for 25 minutes, or until a thermometer inserted into the thickest part of the meat reads 165 F.

1/3 cup breadcrumbs (I used Italian)
1/2 teaspoon dry parsley flakes
1/2 teaspoon garlic powder
1/4 teaspoon garlic salt
2 teaspoons balsamic vinegar
2 egg whites (I used the egg beater style ones)
2 boneless chicken breasts
salt & pepper

Steps:

  • Put bread crumbs, parsley,garlic powder,and salt in medium bowl and mix.
  • Whisk together vinegar and egg whites in smaller bowl.
  • Dip chicken in vinegar mixture then dry mixture.
  • Place on sprayed cookie sheet.
  • Spray the top of the chicken breasts with cooking spray (I used butter flavored)
  • Sprinkle with a little salt and pepper.
  • Bake 400 for 30-40 minutes, till fork tender and juices run clear.

2 teaspoons salt
1 teaspoon freshly ground black pepper
3 tablespoons herbes de Provence
1 medium lemon, juiced and halves reserved
1 (5 to 6-pound) roasting chicken
4 sprigs rosemary
8 cloves garlic
1 thinly-sliced white onion
4 fennel bulbs

Steps:

  • Preheat the oven to 350 degrees F.
  • Combine the vinegar, oil, salt, pepper, herbes de Provence, and lemon juice in a bowl, whisking until emulsified.
  • Pour over the chicken, taking care to completely coat it. Insert the reserved squeezed lemons, plus the rosemary and garlic into the cavity. Layer the onions in a roasting pan and place the chicken on top. Slice the fennel in half lengthwise and surround the chicken with it, cut side down.
  • Put the chicken in the oven and immediately reduce the temperature to 250 degrees F and roast for 1 1/2 to 2 hours, basting occasionally.

2 sweet potatoes, peeled and cut into 2-inch pieces
1 tablespoon olive oil
salt and pepper to taste
2 skinless, boneless chicken breast halves
½ cup balsamic vinegar
salt and ground black pepper to taste
½ cup balsamic vinegar

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place the potatoes on a baking sheet; drizzle olive oil over potatoes and season with salt and pepper.
  • Place the chicken breasts in a baking dish. Pour 1/2 cup of balsamic vinegar over the breasts; season with salt and pepper. Cover with aluminum foil.
  • Place the potatoes in the preheated oven and bake for 10 minutes; place the dish with the chicken in the oven and cook both the potatoes an chicken another 20 minutes; flip both the potatoes and chicken; reduce the oven heat to 350 degrees F (175 degrees C). Bake another 20 minutes.
  • Pour 1/2 cup of balsamic vinegar into a small saucepan and place over medium heat. Cook until reduced to about 1/4 cup. Place the chicken breasts atop the potatoes; drizzle with the reduced balsamic vinegar to serve.

4 boneless skinless chicken breast halves (4 ounces each)
1 tablespoon canola oil
1 small onion, thinly sliced
1/4 cup water
2 tablespoons balsamic vinegar
1/2 teaspoon dried thyme
1/8 teaspoon dried rosemary, crushed

Steps:

  • In a large resealable plastic bag, combine the flour, pepper and salt. Add chicken, one piece at a time, and shake to coat., In a large nonstick skillet, cook chicken in oil over medium heat for 4-5 minutes on each side or until juices run clear. Remove and keep warm., In the same pan, cook onion until tender. Add water, stirring to loosen browned bits. Add the vinegar, thyme and rosemary; cook and stir for 3-4 minutes or until sauce is slightly thickened. Serve with chicken.
