1 lb sage sausage
1 (20 ounce) bag Simply Potatoes® Shredded Hash Browns
4 green onions, chopped (separated)
1 cup sharp cheddar cheese (grated)
4 eggs

Steps:

  • Cook sausage over medium-high heat until browned. Add three of the chopped onions to sausage and heat an additional minute. Remove from pan.
  • In a non-stick skillet, heat 3 cups of water.
  • Divide potatoes into 4 portions and add to skillet. Heat potatoes over medium-high heat until crispy and golden, about 5 to 6 minutes. Flip and repeat on other side.
  • To poach eggs:.
  • One by one, crack each egg onto saucer. Bring water to a boil, and reduce to a simmer.
  • Carefully slip each egg into the simmering water. With a spoon, gently nudge the egg whites closer to their yolks.
  • Immediately cover with a lid and turn off heat. Cook 3 to 5 minutes, depending on firmness desired.
  • Lift each egg from the water with a slotted spoon. Drain well.
  • Divide sausage into fourths and scoop onto plate. Top with potatoes and 1/4 cup shredded cheese. Top with poached eggs and sprinkle with remaining chopped green onion.

cooking spray
5 medium potatoes, peeled and cubed
1 ½ pounds breakfast sausage
6 ounces chorizo sausage
1 ½ large green bell peppers, chopped
1 large onion, chopped
2 (4 ounce) cans sliced mushrooms, drained
20 large eggs
½ cup milk
1 cup shredded Cheddar cheese

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease an 11x13-inch baking dish with cooking spray.
  • Place cubed potatoes in a large microwave-safe bowl and partially cover with a lid. Microwave on high for 4 minutes. Remove from the microwave and spread on the bottom of the prepared baking dish.
  • Heat a large skillet over medium-high heat. Cook and stir breakfast and chorizo sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Add bell peppers, onion, and mushrooms. Saute until bell peppers and onion are softened, about 5 minutes. Spread mixture over the potatoes.
  • Beat eggs in a bowl and add milk. Pour beaten eggs over everything in the baking dish and move around a bit with a spoon to evenly disperse. Sprinkle Cheddar cheese over top until well covered. Cover with aluminum foil.
  • Bake in the preheated oven for 30 minutes. Remove foil and bake until egg is set, about 1 more hour. If cheese starts to brown too much, cover again with foil for the rest of the baking time.

Nonstick cooking spray
16 ounces frozen hash browns, thawed
1 tablespoon unsalted butter, melted
1/3 cup finely grated Parmesan
1/2 teaspoon freshly ground black pepper
4 cooked sausage links, sliced 1/4-inch thick
1 bunch scallions, thinly sliced
1 cup shredded Cheddar
3 large eggs
1/2 cup half-and-half, whole milk or heavy cream
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
Hot sauce, to taste, optional

Steps:

  • For the crust: Preheat the oven to 425 degrees F. Spray a 10-inch cast-iron skillet with nonstick spray.
  • Spread the hash browns over a layer of paper towels to air-dry for 10 to 15 minutes (alternatively, you can press them vigorously between layers of paper towels 2 to 3 times).
  • In a medium bowl, stir the dried hash browns, melted butter, Parmesan and pepper together. Press the mixture into the base and evenly up the sides of the prepared skillet. Transfer to the oven and bake until the potatoes begin to become golden brown and crisp, about 15 minutes.
  • Meanwhile, for the filling: Toss the sausage, scallions and 3/4 cup of the Cheddar in a medium bowl to combine.
  • In another medium bowl, whisk together the eggs, half-and-half, salt, pepper and hot sauce, if using.
  • Carefully press the sausage mixture into the browned crust. Pour the egg mixture over the sausage and sprinkle with the remaining 1/4 cup Cheddar. Carefully transfer the skillet to the oven. Bake until the crust is deeply browned and very crisp and the filling appears set when you gently shake the skillet, 35 to 40 minutes. Cool at least 10 minutes before slicing and serving. Serve warm or at room temperature.

8 ounces sliced cremini mushrooms
24 ounces Simply Potatoes® Shredded Hash Browns
6 large eggs, beaten
21 1/2 ounces canned condensed Fiesta nacho cheese soup

Steps:

  • Cook chorizo over low medium heat in a frying pan until crumbled and color is no longer pink. Drain off excess oil into a cup, leaving 2 tablespoon behind. Add mushrooms and cook until softened.
  • Meanwhile turn oven to 425°F Wrap shredded potatoes in a kitchen towel and squeeze out as much moisture as possible. Grease a round 11 1/2 inch ovenproof casserole dish or deep pie dish with some chorizo drippings. Mix 1/2 cup chorizo drippings with potatoes. Press potatoes over bottom and sides of dish, forming a crust. Bake 20 minutes or until browned.
  • While potatoes are baking, beat eggs in a large bowl with condensed soup. Take crust out of oven and pour mushroom/chorizo mixture into crust. Pour egg/soup mixture into crust.
  • Bake at 350 F for 45-50 minutes or until set. Let sit 15 minutes before cutting into wedges and serving. Eat with green salad.

All of my favorite breakfast foods- eggs, hashbrowns, and sausage - cooked up in one easy skillet meal. This also makes a delicious dinner!

Provided by Six Sisters

Number Of Ingredients 11

1 (16 ounce) package turkey sausage (or your favorite kind of sausage)
1/2 yellow onion (diced)
1 (28 ounce) bag frozen potatoes O'Brien (with onions and peppers in it)
1/4 green pepper (diced)
1/4 red pepper (diced)
1/2 cup broccoli (finely chopped)
8 eggs (lightly beaten)
1/2 cup skim milk (or almond milk works great in this recipe)
1/4 teaspoon garlic powder
salt and pepper to taste
1 cup shredded cheddar cheese

Steps:

  • Heat a large skillet over high heat on the stove. Add the sausage and diced onion, cook for 4-5 minutes or until no longer pink. Drain, then add in potatoes, green pepper, red pepper, and broccoli to skillet.
  • In a medium bowl, mix together eggs, milk, garlic powder, and salt and pepper. Pour egg mixture over potato mixture in the skillet. Cover skillet with a lid, lower heat to medium-low and let cook for 10 minutes (don't stir it during this time).
  • Remove lid and continue to let it cook for 5-6 minutes, or until egg mixture is set. Remove skillet from heat and sprinkle with cheese. Let stand for a couple of minutes or until the cheese is melted.
  • Serve and enjoy!
