I threw this together for dinner one afternoon and the entire family was pleased with the results. It uses ingredients that you normally have in your kitchen to make a slow cooked shredded taco meat that pleases!

5 -6 chicken breasts
1 cup salsa (we used medium)
2 tablespoons tomato paste
1 (1 1/2 ounce) packet taco seasoning
flour tortilla (for serving)
sour cream (for serving)
corn (for serving)
guacamole (for serving)
shredded cheese (for serving)
shredded lettuce (for serving)
canned jalapeno slices (for serving)
refried beans (for serving)

Steps:

  • Place chicken in the crock pot.
  • Mix salsa, tomato paste and taco seasoning; pour over chicken.
  • Cover and cook on Low 6-8 hours or High 3-4 hours.
  • Shred in crock pot and mix with sauce. Add more tomato paste if it seems too watery.
  • Serve on flour tortillas with any suggested toppings or any topping of your choice!

A colorful delicious healthy meal that is so easy to make. This is a combination of several great recipes that I have tried. Freeze in 5 cup freezer containers for future easy meals for two. Warning: A large Crock Pot is needed.

32 ounces chicken broth
1 1/2 lbs boneless skinless chicken breasts
2 (15 ounce) cans pinto beans, rinsed and drained
2 (15 ounce) cans kidney beans, rinsed and drained
1 (15 ounce) can black beans, rinsed and drained
1 1/2 cups frozen corn
1 1/2 cups frozen okra
1 (10 ounce) can Rotel tomatoes & chilies
4 (14 1/2 ounce) cans no-salt-added diced tomatoes
1 red pepper, chopped
1 green pepper, chopped
6 large celery ribs, chopped
1 yellow onion, chopped
1 (1 1/2 ounce) envelope taco seasoning mix (no MSG, reduced salt)

Steps:

  • Stir the envelope of taco seasoning mix with broth in a large 6 quart crock-pot.
  • Remove fat from chicken breast and add to crock-pot.
  • Cook on high about two hours and shred chicken using two forks.
  • Add all other ingredients to crock-pot. Stir.
  • Cook on high for 2 hours or low for 4 hours.
  • Serve over whole grain brown rice (not parboiled).

This is our favorite taco meat. I have to double it now, because by the time I get home from work, it's already been eaten. Sometimes I use venison instead of beef.

1 lb lean ground beef
1 (3 3/4 ounce) packet taco seasoning
2/3 cup water
1 cup salsa

Steps:

  • Brown and drain ground beef in frying pan.
  • Add 2/3 cup of water and taco seasoning.
  • Mix and simmer for a few minutes.
  • Place meat mix in Crock Pot.
  • Add 1 cup of Salsa and mix thouroughly.
  • Cook on low at least 4 hours. Can be left on low all day.

2 -4 tablespoons butter, melted
1/2 cup honey
1/4 cup prepared mustard
3 garlic cloves, minced
1 teaspoon salt
1 -2 teaspoon curry powder

Steps:

  • Place chicken in slow cooker.
  • Combine all remaining ingredients and pour over chicken.

  • Remove the skin from the chicken thighs. You can keep the skin on the chicken thighs; however, the end result will be very oily meat. It's important to keep the bones in the thighs to keep the meat from drying out. Wash and dry the chicken thighs.
  • Place the chicken thighs in the base of a crock-pot. In a small bowl, whisk together the spices: chili powder, cumin, paprika, oregano, and salt. Using your hands, rub the spices over the chicken, covering both sides of the chicken. If you're using 6 chicken thighs, you may not have enough spice to cover both sides--that's okay.
  • Mince the garlic over the top of the chicken, and then pour the lime juice in the base of the crock-pot (or juice the limes directly into the crock-pot). I like to pour some of the juice over the chicken and some off to the side. Just enough to get the top of the chicken moist, but not enough to wash away the spices.
  • Turn on the crock-pot: 4 hours on high (the chicken is usually done in 3 hours, but I find that 4 hours is easier to shred--so you're welcome to check on the chicken at the 3 hour mark) OR 6-7 hours on low. The cooking time may vary with each crock-pot, and the time required will also depend on the size of the thighs and how many you use. The times recommended are based on 4 chicken thighs and my crock-pot.
